One of my husband's favorite drink combos is Baileys® and coffee, so I decided to make the dynamic duo into a cake. It's delicious when served with some lightly sweetened whipped cream.

¼ cup strongly brewed coffee, cooled to room temperature
2 tablespoons instant espresso powder
2 ¾ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon salt
1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 cup firmly packed brown sugar
3 large eggs, at room temperature
1 tablespoon vanilla extract
1 cup Irish cream liqueur (such as Baileys®)
¾ cup mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt® pan.
  • Mix together coffee and espresso powder in a small bowl or measuring cup until dissolved. Set aside.
  • Mix together flour, baking powder, and salt in a medium bowl until combined.
  • Cream together butter, cream cheese, white sugar, and brown sugar in a large bowl until smooth and fluffy. Beat in eggs, 1 at a time, mixing well after each addition. Add coffee-espresso mixture and vanilla and mix until combined. Add 1/2 of the flour mixture and stir until just combined. Pour in Irish cream and mix until combined. Add remaining flour mixture and mix until just combined. Fold in mini chocolate chips.
  • Pour batter evenly into the prepared pan. Tap pan gently on the counter a few times to disperse any air bubbles.
  • Place pan into the preheated oven and bake until the top of the cake springs back lightly when touched, 55 to 60 minutes. Allow cake to cool for 15 minutes in the pan before removing to a wire rack to cool completely.

3 c sugar
3/4 c evaporated milk
1/3 c Baileys Irish cream
1 Tbsp instant coffee crystals
7 oz jar marshmallow cream
1 pkg vanilla morsels or butterscotch chips, 11 oz
1 tsp vanilla extract

Steps:

  • 1. In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
  • 2. In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
  • 3. Slowly add the Baileys coffee mixture; stir well.
  • 4. Boil for 5 mins.
  • 5. Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.
  • 6. Pour into a foil lined 8x8" pan. Chill to set.

1 pouch (1 lb 1.5 oz) Betty Crocker™ Sugar Cookie Mix
1/2 cup chopped pecans
1/2 cup cold butter
1 egg
1 can (14 oz) sweetened condensed milk (not evaporated)
2 tablespoons Irish cream liqueur
1 teaspoon instant coffee granules or crystals
1 cup whipping cream
3 tablespoons packed brown sugar
1 tablespoon Irish cream liqueur
1 teaspoon vanilla
1/8 teaspoon ground cinnamon
25 cinnamon sticks (2 inch)

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 8-inch square pan with cooking spray. In large bowl, place cookie mix and pecans. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. With fork, stir in egg. Press half of cookie mixture in bottom of pan. Bake 15 to 18 minutes or until golden brown. Reserve remaining cookie mixture.
  • Meanwhile, in small bowl, stir milk, 2 tablespoons liqueur and the coffee granules until well blended. Pour evenly over warm crust. Sprinkle reserved cookie mixture over top. Bake 25 to 30 minutes longer or until golden brown. Cool 30 minutes at room temperature. Refrigerate 1 hour to cool completely. Let stand 10 minutes before cutting into bars (5 rows by 5 rows). Store bars covered at room temperature.
  • Just before serving, in small bowl, beat whipping cream, brown sugar, 1 tablespoon liqueur and the vanilla with electric mixer on high speed until soft peaks form. Top each bar with dollop of whipped cream; sprinkle with ground cinnamon. Insert cinnamon stick into each dollop of whipped cream.

4 teaspoons baking powder
1/2 cup soft brown sugar
4 teaspoons instant coffee powder
1 tablespoon boiling water
60 g butter, melted
1/4 cup bailey's irish cream

icing sugar, to dust tops

Steps:

  • Preheat oven to 200 C.
  • Lightly grease 12 muffin tins.
  • Sift together flour and baking powder into a bowl, stir in sugar and make a well in the centre.
  • In a cup, dissolve instant coffee in the boiling water.
  • In another bowl lightly whisk together the melted butter, Baileys, milk and eggs, and stir in instant coffee.
  • Fold Baileys mixture into dry ingredients and stir quickly to combine.
  • Spoon mixture into prepared muffin tins, sprinkle with chopped walnuts and bake for 12 - 15 minutes or until muffins spring back when lightly pressed.
  • Dust with icing sugar and serve.

1 c graham cracker crumbs
1/4 c butter (1/2 stick), melted
FILLING:
1/4 c instant coffee
2 Tbsp hot water
3 c whipping cream
1/2 c powdered sugar
1 Tbsp powdered sugar
6 Tbsp irish whiskey
6 Tbsp kahlua
shaved chocolate, garnish, optional

Steps:

  • 1. For crust. Preheat oven to 375F.
  • 2. Combine crumbs and butter in small bowl.
  • 3. Press into 9-inch pie plate.
  • 4. Bake until set, about 8 minutes.
  • 5. Cool completely.
  • 6. For filling; Dissolve coffee in water.
  • 7. Combine all ingredients except garnish and beat on medium speed until mixture holds peaks.
  • 8. Pour all but 1/2 cup into crust, spreading evenly.
  • 9. Spoon remaining filling into pastry bag fitted with rosette tip and pipe frill around rim.
  • 10. Garnish with shaved chocolate.
  • 11. Chill thoroughly, 4 hours or overnight.
  • 12. Serve chilled.

3 stick butter, room temperature
1 c sour cream (i prefer daisy brand)
4 c all purpose flour ( i used white lily)
3 c sugar
1 1/2 Tbsp instant coffee granules ( i used decaf)
1 Tbsp amaretto extract
2 tsp vanilla bean paste ( or vanilla extract good quality)
6 large eggs, room temperature
1/2 c irish cream liqueur
1/4 c water
IRISH CREAM GLAZE
1 1/2 Tbsp instant coffee ( i used more to get a more caramel color)
4 Tbsp boiling water (or heat water & coffee together in microwave)
3 Tbsp irish cream liqueur
1 1/2 c sifted powdered sugar ( or bit more if thicker consistency is desired)

Steps:

  • 1. This recipe was baked in 2 (9 cup) capacity Bundt Pans, they are called Stained Glass Pan. I ordered them from WILLIAM & SONOMA, BUT I AM SURE YOU CAN FIND THEM IN OTHER STORES AND PLACES AS WELL. Preheat oven to 300 degrees F. Otherwise use a 12 -15 cup capacity Bundt pan if not using two pans.
  • 2. This is what the inside of the cake pan looks like, and I used BAKERS JOY, TO SPRAY THE PAN WITH INSTEAD OF BUTTER & FLOUR, AS SUGGESTED IN THE ORIGINAL RECIPE. I WANTED TO REACH ALL OF THE NOOKS AND CRANNIES IN THE PAN. Note Bakers Joy has flour in the baking spray.
  • 3. Add coffee & water to a small bowl and microwave till very hot or boiling. Set aside to cool. When cooled add the vanilla bean paste or extract, & amaretto, stir to blend. Then add the Irish Cream liqueur, and stir to blend. set aside till needed.
  • 4. Add butter to mixer and beat for about 3 minutes till creamy. The original recipe was from this book.
  • 5. Now add sour cream and beat an additional 3 minutes till blended.
  • 6. Add sugar about a third at a time, beating well after each addition. Beat until mixture is creamy and smooth and there are no visible sugar granules in mixture. About 8 to 10 minutes.
  • 7. Break all 6 eggs into a medium size bowl, check to make sure there are no egg shells. Now add eggs one at a time to creamed mixture, beating well after each addition.
  • 8. Now add flour to creamed mixture about a third at a time, and alternate with the liquid mixture, until all of each has been added.
  • 9. Prepare cake pan with butter and dust with flour, if not using bakers joy. Pour batter into cake pan or pans and bake in preheated 300 degree F. oven, and bake for approximately 1 hour & 40 minutes if using one pan or less time if baking in 2 smaller pans. With 2 pans check after 1 hour 20 minutes, by inserting toothpick into center of cake to see if it comes out clean. If it is clean the cake should be done. If not return to oven and check every 5 minutes or so.
  • 10. Remove from oven allow to sit in pan 10 minutes then invert onto rack or cake platter to cool completely. Drizzle glaze over cake while still warm if desired. I allowed mine to cool completely so the glaze would stick to the cake.
  • 11. To prepare the glaze, add coffee granules & water to a small bowl and heat till hot in microwave, then add the liqueur and sifted powdered sugar, and whisk till blended. DRIZZLE OVER CAKE AS DESIRED.
  • 12. SLICE AND SERVE WITH YOUR FAVORITE COFFEE OR TEA.

1 (3 1/2 ounce) package cook and serve chocolate pudding mix (3.4 oz)

2 cups powdered sugar
2 tablespoons irish cream

1 tablespoon milk
3 tablespoons coffee (instant coffee VIA by starbucks works well)

Steps:

  • Preheat oven to 325 degrees.
  • CUPCAKES.
  • Mix together cake and pudding mix,(sifting ingredients together if you have a sifter).
  • Mix together wet cupcake ingredients
  • Combine wet and dry ingredients.
  • Using paper lined cupcake pan, fill liners 2/3 full.
  • Bake for 20-25 minutes.
  • When cupcakes are done remove to cooling rack and allow to cool completely before next steps.
  • FILLING.
  • Beat butter until fluffy.
  • Add sugar, irish cream, vanilla, and milk.
  • Beat until uniform.
  • Cut "x" markes into the top of the cooled cupcakes with a knife (about 1 inch deep).
  • Place filling in patry bag with metal tip (round or star tips work best).
  • Fill inside of cupcake until filling level with top of cupcake.
  • FROSTING.
  • Beat butter until fluffy.
  • Slowly add remainig frosting ingredients.
  • I like to take the VIA and add it directly to tbsp of water, and make super strong coffee directly in tbsp then add it to mixture. I usually mix well after each addition of coffee and taste test to make sure the coffee flavor isn't too strong or too weak.
  • Once mixed frost cupcakes.
  • Optional: Dust with coco powder and top with chocolate covered espresso bean.

1 3/4 cups whipping cream
1/4 cup bailey's irish cream
1 cup skim milk
3 tablespoons instant coffee
1/2 cup milk chocolate pieces (you may chop a chocolate bar into chunks of desired size or use chocolate chips)

Steps:

  • Whisk eggs for 2 minutes until light.
  • Using a hand mixer, add the sugar a little at a time blending on a low-setting until combined in between each addition.
  • Blend in the cream, irish cream, milk, and instant coffee until combined.
  • Place the mixture in an ice cream machine and freeze until your cream begins to stiffen(follow your machine's directions, this may take anywhere from 20-50 minutes).
  • Add the chocolate pieces and freeze until the ice cream is stiff and ready. Do not remove too early or the ice cream will become icy when it finishes freezing in the freezer. But the ice cream should be pliable.
  • Tightly pack in a tubberware container and freeze.
  • Makes about 8 half cup servings.

  • In a microwave safe cup, cook Irish Cream on HIGH 30 to 45 seconds until hot enough to dissolve the instant coffee.
  • In a large pan or Dutch oven, on medium heat, melt the butter, add sugar, evaporated milk, Irish Cream and coffee mixture, marshmallow creme, then mix well.
  • Bring to a full boil, stirring constantly, for 5 minutes.
  • Remove from heat and stir in vanilla chips until completely melted and mixed thoroughly.
  • Stir in the vanilla, then the hazelnuts until mixed well.
  • Pour into a greased 8-inch square pan and spread evenly.

1 cup granulated sugar
1 cup brown sugar
1 teaspoon sea salt
1 cup unsalted butter, melted

6 large eggs, divided
1/2 cup mini chocolate chips
8 ounces cream cheese
4 cups powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 9 X 13 inch baking dish with parchment paper. In a large bowl, mix the flour, cocoa powder, granulated sugar, brown sugar, and salt together.Whisk in the melted butter, Baileys Irish Cream, and 3 eggs. Once smooth, stir in the mini chocolate chips. Spread the batter evenly in the prepared baking dish.Place the cream cheese in the food processor (or the bowl of a stand mixer.) Puree/Beat to soften. Scrape the bowl, then add 3 eggs, powdered sugar, and instant coffee granules. Puree (or beat on low) again until completely smooth. 1/2 cup chopped pecans
1/2 cup cold butter
1 egg
1 (14 ounce) can sweetened condensed milk, not evaporated
2 tablespoons Irish cream liqueur
1 teaspoon instant coffee granules or crystals
1 cup whipping cream
3 tablespoons packed brown sugar
1 tablespoon Irish cream liqueur
1 teaspoon vanilla
1/8 teaspoon ground cinnamon
25 cinnamon sticks (2 inch)

  • Heat oven to 350°F. Spray bottom and sides of 8-inch square pan with cooking spray. In large bowl, place cookie mix and pecans.
