WARM SOUTHWEST SALSA WITH TORTILLA CHIPS



Warm Southwest Salsa with Tortilla Chips image

Turn up the heat at your Mexican-themed party with a hot dip that's loaded with tomatoes, corn, black beans and flavor. Make it in 30 minutes!

2 cans (10 oz each) petite diced tomatoes with lime juice and cilantro, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup frozen corn
1/2 cup finely chopped green bell pepper
2 medium tomatillos, husks removed, rinsed and finely chopped (about 1/2 cup)
1 jalapeño chile, seeded, finely chopped
1 clove garlic, finely chopped
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 cup shredded Mexican cheese blend (2 oz)
12 oz yellow tortilla chips
2 tablespoons chopped fresh cilantro, if desired

Steps:

  • Lightly spray 1 1/2-quart round microwavable casserole with cooking spray. In large bowl, mix all ingredients except cheese, tortilla chips and cilantro. Spoon into casserole. Sprinkle cheese evenly over top.
  • Microwave uncovered on High 5 to 7 minutes or until warm. Sprinkle with cilantro. Place casserole on large round platter; surround with tortilla chips. Serve immediately. (Salsa will be saucy; serve with slotted spoon.)

1 1/2 teaspoons cider vinegar

1 can (15 oz) black beans, drained, rinsed
1/2 cup chopped plum (Roma) tomato (1 small)
1 medium jalapeño chile, seeded, finely chopped (about 1 tablespoon)
2 tablespoons chopped fresh cilantro
2 tablespoons chopped red onion
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon lime juice
roasted veggie zesty Cheddar tortilla chips, if desired

Steps:

  • Cook corn as directed on bag; cool 10 minutes.
  • Meanwhile, in large bowl, mix remaining ingredients except tortilla chips. Stir in corn; mix well. Cover; refrigerate 1 hour to blend flavors.

1 tablespoon olive or vegetable oil
1/4 teaspoon garlic salt
1/4 to 1/2 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
1 medium avocado, pitted, peeled and coarsely chopped
1 bag (5 oz) garden ranch roasted veggie tortilla chips

Steps:

  • In medium bowl, mix corn, tomato, green onions and cilantro. In small bowl, mix lime juice, oil, garlic salt and pepper sauce with whisk until blended; pour over corn mixture. Stir to coat. Gently stir in avocado.

1 teaspoon finely grated lime peel
3 tablespoons lime juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
2 cloves garlic, finely chopped
Liquid from canned tomatoes used in salsa (about 1/2 cup)
3 swordfish steaks (10 to 12 oz each), cut in half
1 can (15 oz) Southwestern black beans, drained, rinsed
1 can (11 oz) whole kernel corn, drained
1 can (10 oz) original or mild diced tomatoes with green chiles, drained, liquid reserved
4 medium green onions, chopped (1/4 cup)
1 tablespoon olive oil
2 teaspoons dry sherry or red wine vinegar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In shallow glass or plastic dish, mix all swordfish ingredients except the swordfish. Add swordfish; turn to coat with marinade. Cover; refrigerate at least 30 minutes but no longer than 2 hours to marinate.
  • Meanwhile, in medium bowl, mix all salsa ingredients. Let stand at room temperature.
  • Spray grill rack with cooking spray. Heat gas or charcoal grill. Remove fish from marinade; reserve marinade. Place fish on grill. Cover grill; cook over medium heat 15 to 20 minutes, brushing 2 or 3 times with marinade and turning once, until fish flakes easily with fork. Discard any remaining marinade. Serve fish with room-temperature salsa.
