2 pounds ground beef
1 cup dry bread crumbs
½ cup diced onion
½ apple - peeled, cored, and diced
2 teaspoons garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons prepared yellow mustard
2 tablespoons brown sugar

Steps:

  • Combine beef, bread crumbs, onion, apple, garlic powder, salt, and pepper in a large bowl until evenly blended.
  • Shape the beef mixture into a loaf and place on a large piece of aluminum foil. Fold the foil up and around the edges of the meatloaf, creating a makeshift loaf pan.
  • Pour 1/2 cup water into a multi-functional pressure cooker (such as Instant Pot®) and place the steam rack inside with the handles up. Place the meatloaf on top of the rack. Close and lock the lid; seal the vent. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Release cooker pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer meatloaf, still on the rack, to a baking sheet. Broil meatloaf in the oven until browned, about 5 minutes.
  • Combine ketchup, mustard, and brown sugar in a small bowl. Brush over meatloaf and broil again until caramelized, 1 to 2 minutes.

¼ cup 1% milk
2 ounces shredded sharp Cheddar cheese
1 small egg
½ (1 ounce) package dry onion soup mix (such as Lipton®)

Steps:

  • Combine ground beef, bread crumbs, milk, Cheddar cheese, egg, and dry onion soup mix in a bowl; mix until well combined. Transfer mixture to a cutting board and shape into a loaf.
  • Place a trivet into a multi-functional pressure cooker (such as Instant Pot®). Pour 1/2 cup water into the pot and set loaf on top of the trivet. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

1 1/2 pounds ground beef
2 eggs
1 onion (chopped)
1/4 cup ketchup
salt and pepper, to taste
1 cup oatmeal
1 (10.75 ounce) can tomato soup (divided)
2 Tablespoons Worcestershire sauce (divided)
2 Tablespoons brown sugar

Steps:

  • In a large bowl mix ground beef, eggs, onion, ketchup, salt, pepper, oatmeal, half of the tomato soup, and 1 Tbs Worcestershire sauce. Once it's mixed well, fill the wells of your silicone mold.
  • Cover the meatloaves with foil or a silicone food cover. Pour 1 cup of water into the bottom of your Instant Pot. Then place a trivet in the bottom of your Instant Pot. If layering more than one set of molds, turn the second set so that the wells are not resting over each other.
  • Lock the lid in place and turn the knob to sealing.
  • Press the Manual or Pressure Cook button and set for 35 minutes. When done, release the pressure using the quick release method.
  • Turn the oven onto broil.
  • Remove the meatloaves and arrange them on a cooking sheet. Mix together the other half of the tomato soup, 1 Tbsp Worcestershire sauce, and brown sugar. Pour the over the meatloaves.
  • You can broil the meatloaves for 3-5 minutes or just serve just like that!
  • Serve with your favorite side dishes. I like to serve it with mashed potatoes and corn.

Steps:

What's great about this Instant Pot recipe is it's actually two in one! The meatloaf and potatoes are cooked to perfection at the same time. We have a smaller 5 quart Instant Pot so we opted to half the recipe and use two mini loaf pans side by side; they fit perfectly. The sage in the meatloaf shines with a great savory flavor....

THE POTATOES
1-1/2 lb Golden Little potatoes
1 c chicken broth
1 Tbsp garlic, minced
1/2 stick butter, cut into pieces
1/2 c Parmesan cheese
garnish with dried or fresh chives
THE MEATLOAF
2 lb lean ground beef
2 eggs, beaten
3/4 c milk
1 box (6-oz) stuffing mix
1 medium onion, chopped
1 bell pepper, chopped
4 clove garlic, finely chopped
1 tsp salt
1/2 tsp rubbed sage
pepper, to taste
THE MEATLOAF GLAZE
1 c ketchup
1/2 c brown sugar, firmly packed
2 tsp Worcestershire sauce

Steps:

  • 1. MEATLOAF GLAZE In a bowl mix together the ketchup, packed brown sugar, and Worcestershire sauce. Mix until the sugar is dissolved. Set aside 1/2 cup to use to glaze meatloaf.
  • 2. FOR THE MEATLOAF In a large bowl, combine the ground beef, eggs, milk, stuffing mix, onion, bell pepper, garlic, salt, sage, pepper, and all but 1/2 cup of the meatloaf glaze. Be sure this is well mixed, I suggest using your clean hands to mix. Divide this into 2 equal portions.
  • 3. Cut two aluminum trays in half across the middle. Overlap the halves and adjust them to a size that will fit the Instant Pot. Put the meat loaves into the two improvised aluminum trays.
  • 4. FOR THE POTATOES Put the potatoes, chicken broth, and garlic in the bottom of the Instant Pot.
  • 5. Place a trivet insert on top of the potatoes. Place one of the meatloaves on top of the trivet. Place a second trivet on top of the first meatloaf and add the second Meatloaf on the second trivet.
  • 6. Put the lid on the Instant Pot, be sure the vent valve is closed, and the lid is properly secured. Push the MANUAL setting and set for 20 minutes on high pressure.
  • 7. When the 20 minutes of pressure cooking is complete, move the valve to VENTING for a quick release of pressure. When the pressure has dissipated, carefully remove the lid of the Instant Pot.
  • 8. Using oven mitts, carefully remove the meatloaves to a baking sheet. Use the reserved meatloaf glaze to coat the top of the meatloaves.
  • 9. Set your oven to "High Broil" and put the meatloaves under the broiler for a few minutes. When the glaze is hot and bubbly, remove the loaves from the oven and allow them to cool and use a large spatula to move to a serving plate.
  • 10. Carefully remove the potatoes to a serving dish. Add the melted butter, Parmesan cheese, and garnish with the chives.

Make Instant Pot Rotisserie Chicken Soup from a roasted chicken carcass and leftover meat. This homemade soup recipe is easy and delicious!

1 rotisserie chicken carcass (meat and skin removed)
6 cups water (use 8 for 8 quart)
2 garlic cloves (optional)
2 tablespoons butter
1 cup carrots (chopped, about 2 whole)
2 celery stalks (chopped)
1 small onion (chopped)
chicken stock
¼ cup dried orzo pasta (optional)
1 teaspoon garlic powder
4 cups cooked chicken (cubed)
sea salt and pepper (to taste)

Steps:

  • Place the trivet into the Instant Pot, and add chicken carcass, garlic cloves and celery leaves, if using. Pour in water
  • Place lid on pot, set vent to sealing, and Pressure Cook for 60 minutes on high. Do a quick release, and when pin drops, carefully remove lid and lift trivet and carcass out of pot. Discard carcass. Place a mesh strainer over a large bowl, and carefully pour chicken stock into bowl.
  • Hit Sauté on the Instant Pot, and sauté chopped carrots, celery and onions until slightly soft. Hit Cancel
  • Pour chicken stock into Instant Pot, and add orzo pasta, if using. Add garlic powder. Place lid on pot, set vent to sealing, and Pressure Cook for 4 minutes
  • When pot beeps, do a quick release. When pin drops, carefully remove lid, and stir in cooked chicken. Add sea salt and pepper to taste, if desired
