This creamy mac 'n' cheese cooks right in the pressure cooker, in vegetable or chicken broth, requiring no straining or draining.

Number Of Ingredients 8

1 pound elbow macaroni
4 cups low-sodium chicken broth or vegetable broth
3 tablespoons unsalted butter
12 ounces shredded sharp Cheddar cheese (3 cups tightly packed)
1/2 cup shredded Parmesan cheese (about 2 ounces)
1/2 cup sour cream
11/2 teaspoons prepared yellow mustard
1/8 teaspoon cayenne pepper

Steps:

  • Combine the macaroni, broth, and butter in the Instant Pot. Secure the lid and set the Pressure Release to Sealing. Select the Manual setting and set the cooking time for 6 minutes at high pressure.
  • Perform a quick release by moving the Pressure Release to Venting. Open the pot and stir in the cheeses, sour cream, mustard, and cayenne pepper. Let sit for 5 minutes to thicken, then stir again and serve.

Nif's Instant Pot Macaroni and Cheese image

This is absolutely fantastic, if I do say so. It's the first recipe I made in my 6 qt. Instant Pot, by combining some recipes I found with ingredients I had on hand. If you want to use a different shape pasta (not spaghetti, linguini, etc), cut the cooking time listed on the package in half. Enjoy!

1 lb rotini pasta (500g package)
4 cups chicken broth (900 ml/1 tetra brick)
3 tablespoons butter
1 1/2 cups evaporated milk (1 can, I use partly skimmed)
2 cups cheddar cheese
salt & pepper, to taste

Steps:

  • Put pasta, broth, butter, and salt in pot.
  • Set Instant Pot to "pressure cooker" or "manual" on high for 5 minutes. After pot gets up to temperature, it will cook.
  • When time is up, release steam. If it spits out broth, release steam a little slower.
  • Set pot to "saute" and add evaporated milk.
  • Gradually stir in cheese. Add pepper to taste.

¾ cup milk
2 cups shredded Cheddar cheese
1 cup shredded Gouda cheese
½ cup crumbled cooked bacon

Steps:

  • Combine water, macaroni, salt, garlic powder, onion powder, and pepper in a multi-functional pressure cooker (such as Instant Pot®); stir until well combined. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

1 lb Pasta - I use large elbow macaroni noodles
4 cups water
4 tbsp butter
2 tsp kosher or sea salt
1/2 tsp black pepper
1 cup heavy cream
8 oz sharp cheddar cheese (shredded)
8 oz Mexican or Colby Jack Blend Cheese (shredded)

Steps:

  • Pour pasta, water, salt, pepper and butter into 6 qt Instant Pot and stir.
  • Place lid on instant pot and turn to locked position. Make sure pressure valve is closed. Set to Manual Pressure Cook at high pressure for 4 minutes. When 4 minutes is up, open valve and release pressure immediately. *See Note
  • Hit or leave the warm button on. Pour in both cheeses and cream and stir until well combined and cheeses are melted. Serve

  • Place the water, salt, butter and noodles in the Instant Pot.
  • Close the lid and make sure the valve is on closed.

  • When the pot beeps, quick release the steam.
