Sweet potatoes can be candied really quickly in a pressure cooker.

3 sweet potatoes, cut into 3/4 inch slices then cubed
2 tablespoons cornstarch
¼ cup maple syrup
¼ cup white sugar
¼ cup brown sugar
2 tablespoons margarine
1 cup water

Steps:

  • Toss sweet potatoes with cornstarch in a resealable plastic bag until evenly coated.
  • Place coated sweet potatoes in a multi-functional pressure cooker (such as Instant Pot®). Cover with maple syrup, white sugar, brown sugar, and margarine. Pour in water and stir. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

3 pounds sweet potatoes, peeled and chopped into 2-inch pieces
½ cup full-fat coconut milk
½ cup vegetable broth
4 cloves garlic, peeled
2 tablespoons salted butter
1 teaspoon sea salt
1 teaspoon ground black pepper

Steps:

  • Combine sweet potatoes, coconut milk, vegetable broth, garlic, salt, and pepper in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Carefully remove pot insert and place on a trivet.
  • Mash sweet potatoes with butter in the pot insert using a potato masher and season with salt and pepper to taste.
