1 pound dry spaghetti
4 cups water
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
1 pound large shrimp, peeled and deveined
¾ cup mayonnaise
¾ cup Thai sweet red chili sauce
¼ cup lime juice
1 teaspoon chile-garlic sauce (such as Sriracha®)
2 green onions, chopped

Steps:

  • Break spaghetti noodles in half and place in a multi-functional pressure cooker (such as Instant Pot®). Add water, garlic, olive oil, and salt. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Combine shrimp, mayonnaise, chili sauce, lime juice, and Sriracha® in a bowl; mix until well coated. Pour into the pot and select Saute function. Add chopped green onions and cook until shrimp are pink and green onions are tender, about 7 minutes.

1 pound dried spaghetti
3 cloves garlic minced
1 teaspoon cocoanut oil
4 1/4 cups water
1 pound raw jumbo shrimp peeled and deveined
3/4 cup light mayo
3/4 cup sweet Thai chili sauce
1 Tbsp siriracha sauce
1/2 cup chopped scallions

Steps:

  • Break the pasta in half and place in the pot. Add the garlic, oil, and 1 teaspoon salt and water. cover and lock the lid in place. Set the pot to pressure on high for 4 minutes. Once the time is up, turn it off and set to quick release the steam until the valve button drops. Meanwhile, in a bowl mix the mayo chili sauces, lime juice together. Unlock the lid and stir the sauce into the pasta. Set the pot to sauté and add the scallions and shrimp, mix to combine. Cook for 3-4 minutes, tossing until are pink in color. Check for salt and add pepper if desired. Serve warm
