1 ¼ cups all-purpose flour
2 tablespoons granulated sugar
¼ tablespoon vanilla powder
½ cup milk
1 egg
2 tablespoons butter, melted
1 teaspoon rum flavoring
4 ripe bananas, sliced
2 cups oil for frying

Steps:

  • In a large bowl, combine flour, sugar and vanilla powder. Make a well in the center, and pour in milk, egg, melted butter and rum flavoring. Mix until smooth. Fold in banana slices until evenly coated.
  • Heat oil in a wok or deep-fryer to 375 degrees F (190 degrees C).
  • Drop banana mixture by tablespoon into hot oil. Fry until golden brown and crispy, 10 to 15 minutes. Remove bananas from oil, and drain on paper towels. Serve hot.

3 firm bananas, halved lengthwise
½ cup white sugar
1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

1 can (13.66 ounces) coconut milk
1 cup packed brown sugar
1 cup water
1/4 cup molasses
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon apple pie spice
1/4 cup butter, cubed
3 large ripe plantains, cut into 3/4 inch slices

Steps:

  • Spoon 6 tablespoons cream from top of coconut milk and set aside. Pour remaining coconut milk into a large saucepan. Stir in brown sugar, water, molasses, vanilla, salt and pie spice. Bring to a boil. Reduce heat; simmer, uncovered, until reduced by half, 25-30 minutes. Meanwhile, in a large cast-iron or other skillet, melt butter over medium-low heat. Add plantains. Cook, stirring gently, until glazed and slightly softened, 3-5 minutes. Divide plantains among 6 bowls; drizzle with syrup. Top with reserved coconut milk cream.

A great side dish to an Indonesian meal, or a extended "rijsttafel" which consists of many dishes. Even if you do not coat the banana's with coconut it is still very nice. You can also use half butter, half oil for frying

3 large bananas
3 ounces desiccated coconut
peanut oil, for shallow frying

Steps:

  • Put the desiccated coconut in a large mixing bowl and set aside.
  • Peel the bananas, slice thickly on an angle, then place in the bowl with the coconut and toss to coat well on all sides.
  • Heat the oil in a large frying pan, add the coated banana and stir fry over low/medium heat until the coconut is lightly browned and the banana slices are heated through.
  • Serve hot as an accompaniment.
  • Note: you can also quarter the banana's instead of slicing them.
