SWEET SAFFRON RICE



Sweet Saffron Rice image

The look and smell of saffron rice is delicious and tempting. It makes a perfect dessert for lunch or any kind of get together. You can serve this dish cold or warm.Serves 4 to 6.

1 cup basmati rice (or long grain rice)
2 Tbsp clarified butter (ghee)
1 ¾ cup water
2 Tbsp milk
½ cup sugar
1 piece of cinnamon stick (dalchini)
¼ tsp saffron threads (kaser)
4 whole cloves (laung)
½ tsp cardamom seeds (coarsely crushed, ilachi)
Pinch of salt
3 Tbsp pistachios and almonds (sliced or crushed, pista, badam)
1 Tbsp raisins (kishmish)

Steps:

  • Dry roast the almonds, pistachios and raisins in a pan on medium heat until the raisins puff and the nuts slightly change color. Set aside.
  • Put the rice, water, cinnamom stick, and salt in a sauce pan over medium high heat.
  • When the rice comes to boil, reduce the heat to low and cover.
  • Let the rice cook for about 15 minutes, or until the water has evaporated.
  • While rice is cooking, in a separate saucepan combine milk, butter, sugar, saffron, cloves and cardamom and bring to boil on medium heat, stir until the sugar has dissolved. Remove from the heat and set aside.
  • Add the nuts mixture and sugar syrup over the rice. Fold gently into the rice with a spoon gently to avoid mashing the rice.
  • Put the cover back over the rice and turn the heat on to very low. Let the rice simmer for 3 to 4 minutes. Turn the heat off and leave it covered for another few minutes before serving.

RICE PILAF WITH ALMONDS AND RAISINS

Pilafs may be served at everyday meals but are grand enough for entertaining as well. If you like, you could add a generous pinch of saffron threads to the rice just before you cover it and let it simmer. You could also use chicken stock instead of the 22 cup water.

2 cups basmati rice
3 tablespoons olive or canola oil or ghee
One 2-inch cinnamon stick
1/2 medium onion, sliced into fine half Rings
2 tablespoons slivered blanched almonds
2 tablespoons golden raisins
1 teaspoon salt

Steps:

  • Put the rice in a bowl. Wash in several changes of water. Drain. Let the rice soak in water that covers it generously for 30 minutes. Drain through a sieve and leave in the sieve suspended over a bowl to drip. Pour the oil into a heavy, medium pan (that has a tight-fitting lid) and set over medium-high heat. When hot, put in the cinnamon. Let it sizzle for 10 seconds. Put in the onions. Stir and fry the onions until they start to brown. Add the almonds. Stir until they are golden. Add the raisins. Stir until they are plump, just a few seconds. Add the drained rice and salt. Stir very gently to mix. Add 2 2/3 cups water and bring to a boil. Cover tightly, turn heat to very, very low, and simmer gently for 25 minutes.

Indian saffron is richer, darker in its red-orange color then the Spanish or Italian, and gives a better flavor to rice. The saffron should always be steeped in hot water ahead of time and used as part of the liquid in the recipe. The following is a recipe prepared in the Indian manner.

⅛ teaspoon powdered saffron
2 cups boiling water, divided
2 tablespoons butter
1 cup uncooked long-grain white rice, not rinsed
1 teaspoon salt

Steps:

  • Steep the saffron in 1/2 cup boiling water.
  • In a skillet that can be tightly covered, melt the butter over medium-high heat. Stir in the rice and salt. Cook, stirring constantly, until the rice begins to absorb the butter and becomes opaque, but do not brown the rice.
  • Quickly pour in the remaining 1 1/2 cups boiling water along with the saffron water. Cover immediately, reduce heat to low, and cook 20 minutes, or until all of the liquid is absorbed. For best results, do not remove the lid while the rice is cooking.

2 quarts whole milk
3/4 cup jasmine rice
1 cup sugar
6 green cardamom pods, lightly crushed
1/4 teaspoon crumbled saffron threads
2 tablespoons ghee
1/2 cup shelled natural pistachios
1/2 cup golden raisins

Steps:

  • Simmer milk with rice, sugar, cardamom, and saffron in 7- to 8-quart heavy pot, stirring often, until reduced by half, 45 to 50 minutes. Discard cardamom.
  • Heat ghee in a heavy skillet over moderate heat until melted, then cook pistachios and raisins, stirring, until nuts are lightly browned, about 2 minutes. Stir half of pistachio mixture into payasam and sprinkle remainder on top.
