INDIAN STREET CORN SALAD

One of the most beloved street foods in India is also one of the simplest: corn on the cob, slow roasted over hot coals, over which you squeeze juicy lime wedges and sprinkle salt, cayenne pepper and whatever else the wallah has up his sleeve. It bears a striking resemblance to Mexican elote, which adds some salty, creamy cotija to the mix. Here's a salad inspired by this beloved street food! Feel free to add some cotija if you like. I keep this dairy-free for my dairy-free husband.

Number Of Ingredients 11

3 large ears corn, husks and silk removed
Olive oil
1/4 cup freshly squeezed lime juice
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
Big pinch ground cardamom
Big pinch chaat masala
Salt and freshly ground black pepper
1 cup halved cherry or sugarplum tomatoes
1 or 2 sprigs fresh mint, leaves thinly sliced
Small handful fresh cilantro, leaves and soft stems rustically ripped into bite-size pieces

Steps:

  • Place a large cast-iron skillet over medium-high heat and heat until just beginning to smoke. Rub the corn with olive oil, then carefully lay into the pan. Cook until charred in patches all the way around and golden brown, 20 to 25 minutes, turning every 5 minutes. Remove and let cool.
  • For the dressing: Meanwhile, whisk together the lime juice, cumin, cayenne, cardamom, chaat masala and salt and black pepper to taste. Slice the kernels off the cobs and tumble into a big bowl. Add the tomatoes, mint and cilantro. Toss with the dressing, and taste for seasoning. Serve!

1/4 cup mayonnaise
1/4 cup Greek yogurt
2 teaspoons chopped pickled jalapenos
Grated zest and juice of 1 lime, plus more zest, for serving
4 ears fresh, shucked corn
Vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat a grill or grill pan over medium-high heat until hot, about 15 minutes.
  • Mix the mayonnaise, yogurt, jalapenos and lime zest and juice in a small bowl.
  • Rub the corn with the oil, sprinkle with salt and pepper and grill until grill marks appear on all sides, about 12 minutes. Serve warm, drizzled with the yogurt sauce and sprinkled with lime zest.

1 package (8-1/2 ounces) cornbread/muffin mix
4 bacon strips
1/3 cup each chopped celery, green pepper and onion
1/2 cup plus 2 tablespoons butter,divided
1/4 cup milk
1 can (14-3/4 ounces) cream-style corn
1 can (14-3/4 ounces) whole kernel corn, drained
2 tablespoons chopped jalapeno pepper
1 jar (2 ounces) diced pimientos
1 tablespoon sugar
1/2 teaspoon salt

Steps:

  • Prepare cornbread according to the package directions. Cool and crumble enough to measure 2 cups; set aside., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Crumble bacon and set aside. , To the drippings, add the celery, green pepper and onion. Saute for 2-3 minutes or until tender. Remove from the heat; set aside., In a saucepan, melt 1/2 cup butter. Stir in the milk, corn, jalapeno, pimientos, sugar, salt, vegetable mixture and bacon. Add 1 cup cornbread crumbs. Cook for 8-10 minutes or until heated through., Transfer to a greased 8-in. square baking dish. Melt the remaining butter; toss with the remaining crumbs. Sprinkle on top of batter. Bake at 350° for 18-20 minutes or until bubbles around the edges and is golden brown.

The sweetness of summer corn marries nicely with a burst of Indian spices and tangy thick yogurt. Serve this vegetarian soup hot or chilled.

4 tablespoons butter
1 medium onion, diced
2 garlic cloves, minced
1 tablespoon grated ginger
1/2 teaspoon turmeric
1/2 teaspoon cumin seeds
1/2 teaspoon black mustard seeds
Large pinch cayenne
3 cups corn kernels, from 4 ears
Salt and pepper
Whole milk plain yogurt, for garnish
1 tablespoon chopped chives, for garnish
A few cilantro sprigs, for garnish
Lime wedges, for garnish, optional

Steps:

  • Put butter in a heavy-bottomed soup pot over medium heat. Add onion and cook until softened, about 10 minutes. Add garlic, ginger, turmeric, cumin, mustard seeds and cayenne and sizzle for a minute or so.
  • Add corn kernels and season generously with salt and pepper. Cook, stirring, for 2 minutes. Add 4 cups water and bring to a simmer. Simmer gently for 10 minutes. Purée soup in a blender. Check seasoning and adjust salt.
  • To serve, ladle into small bowls. Garnish each with 2 tablespoons thick yogurt. Sprinkle with chives and cilantro sprigs. Add a squeeze of lime.

2/3 cup chickpea flour
1 teaspoon chili powder
1/2 teaspoon baking soda
1 medium onion, finely chopped
2 green chilies
2 cilantro leaves
2/3 cup water
1 1/4 cups vegetable oil
salt
1 1/4 cups plain yogurt
3 tablespoons chickpea flour
2/3 cup water
1 teaspoon fresh gingerroot, chopped
2 garlic cloves, crushed
1 1/2 teaspoons chili powder
1/2 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
2/3 cup vegetable oil
1 teaspoon white cumin seed
6 red chilies, dried

Steps:

  • For dumplings, sift the chickpea (gram) flour into a large bowl. Add chili powder, 1/2 tsp salt, baking soda, onion, green chiles, and cilantro. Mix. Add water and form a thick paste. Heat the oil in a skillet. Put teaspoonfuls of the paste in the oil and cook over medium heat, turning once, until crisp golden brown. Set aside.
  • For yogurt sauce, put yogurt in a bowl and whisk with the gram flour and water. Add all spices and 11/2 tsp salt. Mix well.
  • Press mixture through a large strainer into a pan. Bring to a boil on low heat, stirring constantly. If it becomes too thick, add water.
  • Pour the sauce into a depp serving dish and arrange all the dumplings on top. Set aside but keep warm.
  • For dressing, heat the oil in a skillet. Add the cumin seeds and chiles and fry until darker in color and giving off an aroma. Pour the dressing over the dumplings and serve hot.

It says that the recipe is highly rated by everyone who tries it. It also adds that the "hotness" of the dish can be adjusted by the type of chili pepper you use.

2 large onions, sliced in rings
4 carrots, sliced in rounds
2 tablespoons butter
2 garlic cloves, crushed
1 tablespoon curry powder
3 tablespoons soy sauce
1 tablespoon honey
1/2 cup orange juice
1/2 cup water
1 fresh green chili pepper, seeded and chopped
1/4 cup raisins (optional)
1 cup plain yogurt
6 chicken thighs
cooked rice

Steps:

  • Preheat oven to 350 degrees. Saute the onions and carrots in butter for 2 minutes. Add the garlic and curry powder and cook for 5 minutes more. Add the soy sauce, honey, orange juice, water, chili and optional raisins and simmer 10 minutes. Remove from heat and stir the yogurt into the sauce.
  • Place the chicken thighs in an ungreased 2 1/2 - 3 quart casserole dish. Pour the sauce over the chicken, cover and bake for 45 minutes. Remove the cover and bake for 15 minutes more or until tender. Serve over rice.

1 onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 (2 inch) piece fresh ginger, peeled and coarsely chopped
½ teaspoon ground turmeric
6 fresh curry leaves, or more to taste
½ teaspoon cumin seeds
½ teaspoon chili powder
½ teaspoon white sugar
1 cup plain yogurt

Steps:

  • Break or cut each corn cob in half. Heat vegetable oil in a large skillet over medium heat and pan-fry corn until golden brown on all sides, about 10 minutes, turning often. Remove corn.
  • Pulse onion, garlic, and ginger to a smooth paste in a food processor; mix in curry leaves, cumin seeds, chili powder, and sugar. Cook paste in the hot oil over medium-low heat until the oil begins to separate, stirring often, about 10 minutes.
