This is a basic Indian dish that is very tasty! Adjust the spices to your preferences! To make it even better, you could add a bit of stewed tomatoes.

1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon minced garlic
1 teaspoon ginger paste
2 medium potatoes, peeled and cubed
½ teaspoon ground turmeric
½ teaspoon paprika
1 teaspoon ground cumin
½ teaspoon garam masala
salt to taste
1 pound cauliflower
1 teaspoon chopped fresh cilantro

Steps:

  • Heat the oil in a medium skillet over medium heat. Stir in the cumin seeds, garlic, and ginger paste. Cook about 1 minute until garlic is lightly browned. Add the potatoes. Season with turmeric, paprika, cumin, garam masala, and salt. Cover and continue cooking 5 to 7 minutes stirring occasionally.
  • Mix the cauliflower and cilantro into the saucepan. Reduce heat to low and cover. Stirring occasionally, continue cooking 10 minutes, or until potatoes and cauliflower are tender.

Healthy preparation of a favorite Indian dish. It is a beautiful yellow-orange color when finished. Make sure you add the lemon juice just before serving; it really makes the dish.

1 tablespoon all-purpose flour
1 tablespoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground chile pepper
1 teaspoon mustard powder
1 teaspoon ground turmeric
1 pinch salt
½ cup water
¾ cup skim milk
2 tablespoons fat-free plain yogurt
1 tablespoon olive oil
1 teaspoon cumin seeds
1 head cauliflower, broken into florets
2 lemons, juiced

Steps:

  • Mix flour, coriander, cumin, chile pepper, mustard powder, turmeric, and salt together in a bowl. Mix in water until a paste forms. Stir in skim milk and yogurt.
  • Heat oil in a nonstick pot over medium heat. Add cumin seeds; heat until fragrant, 1 to 2 minutes. Add spice paste; heat for 1 minute. Add cauliflower to the pot and toss with spice paste until completely coated. Cover and cook cauliflower over medium-low heat, stirring several times to coat and prevent burning, until tender, 10 to 12 minutes.
  • Stir lemon juice into the cauliflower just before serving.

INDIAN-STYLE CURRY WITH POTATOES, CAULIFLOWER, PEAS AND CHICKPEAS image

2 tablespoons curry powder (sweet or mild)
1 ½ teaspoons garam masala (see note above)
¼ cup vegetable oil
2 medium onions , chopped fine (about 2 cups)
12 ounces Red Bliss potatoes , scrubbed and cut into 1/2-inch pieces (about 2 cups)
3 medium cloves garlic , minced or pressed through a garlic press (about 1 tablespoon)
1 tablespoon finely grated fresh ginger
1 - 1 ½ serrano chiles , ribs, seeds, and flesh minced
1 tablespoon tomato paste
½ medium head cauliflower , trimmed, cored, and cut into 1-inch florets (about 4 cups)
1 (14.5-ounce) can diced tomatoes , pulsed in food processor until nearly smooth with 1/4-inch pieces visible
1 ¼ cups water
1(15 ounce) can chickpeas , drained and rinsed
Salt
8 ounces frozen peas (about 1 1/2 cups)
¼ cup heavy cream or coconut milk

Steps:

  • Toast curry powder and garam masala in small skillet over medium-high heat, stirring constantly, until spices darken slightly and become fragrant, about 1 minute. Remove spices from skillet and set aside. Heat 3 tablespoons oil in large Dutch oven over medium-high heat until shimmering. Add onions and potatoes and cook, stirring occasionally, until onions are caramelized and potatoes are golden brown on edges, about 10 minutes. (Reduce heat to medium if onions darken too quickly.) Reduce heat to medium. Clear center of pan and add remaining tablespoon oil, garlic, ginger, chile, and tomato paste; cook, stirring constantly, until fragrant, about 30 seconds. Add toasted spices and cook, stirring constantly, about 1 minute longer. Add cauliflower and cook, stirring constantly, until spices coat florets, about 2 minutes longer. Add tomatoes, water, chickpeas, and 1 teaspoon salt; increase heat to medium-high and bring mixture to boil, scraping bottom of pan with wooden spoon to loosen browned bits. Cover and reduce heat to medium. Simmer briskly, stirring occasionally, until vegetables are tender, 10 to 15 minutes. Stir in peas and cream or coconut milk; continue to cook until heated through, about 2 minutes longer. Adjust seasoning with salt and serve immediately, passing condiments separately.

SOUTHERN INDIAN STYLE CAULIFLOWER AND POTATO CURRY



Southern Indian Style Cauliflower and Potato Curry image

This is my own invention, and is a fairly quick recipe to make up. Make sure that your curry leaves are fairly fresh so that you can taste the curry leaf flavor.

3 potatoes, peeled and diced
1/2 cauliflower, broken into florets
3 tble. oil
1 1/2 teaspoons black mustard seeds
1 1/2 teaspoons Urad Dal, split white
3/4 teaspoon cumin seed
5 small dried red chilies, broken into pieces
1/4 teaspoon turmeric
1/4 teaspoon hing
12 curry leaves
1 teaspoon salt
1/2 cup water
1/3 cup frozen peas
1 table. minced cilantro

Steps:

  • In a large nonstick frying pan put the oil, mustard seeds, urad dal, cumin seeds and red chili pieces (add more or less depending on how spicy you want the curry). Heat over high heat until the mustard seeds have popped a bit and the urad dal is light brown.
  • Reduce heat to medium and quickly stir in the turmeric, hing and curry leaves.
  • Add the potatoes, cauliflower, salt and water. Stir to blend. (Make sure that the potatoes and cauliflower pieces aren't too small or they will overcook.).
  • Cover and cook for 8 minutes. Remove cover and check to see if the vegetables are almost done. A lot of people like to add tomato to this curry and if so, you can add diced tomato here, but you won't be able to brown the potatoes and cauliflower if you do that, so it is up to your own taste whether or not to add this option.
  • Turn heat to high for about 4 minutes. Evaporate any remaining liquid and lightly brown the potatoes and cauliflower, flipping them over occasionally with a spachula. By making sure that a few of the vegetables lightly brown, you will end up with a much more flavorful curry.
  • Turn off heat and stir in the peas (optional). Check for salt. Garnish with cilantro.
  • Optional: Add 1 teaspoons sambar powder to the curry the last couple of minutes. Variations: A.) Replace the cauliflower with fresh green beans and eliminate the peas; B.) Replace the cauliflower with 1/2 head of a large cabbage that you have finely diced (peas are good with this but optional). I sometimes reduce the dried red chili to one and add 1 teaspoons coarsely ground black pepper--more of a style from the state of Kerala; C.) Make it a mixed vegetable curry adding to the potatoes 1 finely minced carrot, 2 cups fresh green beans, and using the peas; D.) Another mixed vegetable curry would reduce the potatoes to two, add the carrot, green beans, about six largish cauliflower florets, and the peas. I don't like to add peas too early to any recipe, as they become over cooked. Turn off the heat and stir in frozen peas at the end, and the heat will defrost the peas in just a few minutes.

North Indian-Style Mixed Cauliflower, Carrots, and Green Beans image

2 tablespoons Basic Ginger-Garlic Paste or store-bought
3 tablespoons peanut oil
1 teaspoon cumin seeds
1/4 teaspoon , coarsely ground ajwain, seed
2 small onions, cut into 3/4-inch pieces
1 piece fresh ginger (1-inch), peeled and cut into thin matchsticks
1 to 3 fresh green chili pepper, such as serrano, minced with seeds
1 tablespoon ground coriander
1/2 teaspoon cayenne pepper, or to taste
1/4 teaspoon ground turmeric
3 to 4 cups mixed vegetables such as cauliflower, potatoes, carrots, green bean, green bell peppers and peas, cut into 3/4 to 1-inch pieces
1 teaspoon salt, or to taste
4 small tomatoes, cut into 6 wedges each
1 to 2 tablespoon distilled white vinegar
1/2 cup finely chopped fresh cilantro, including soft stems
1/2 teaspoon Garam Masala

Steps:

  • 1. Prepare the ginger-garlic paste. Then, heat the oil in a large nonstick wok or saucepan over medium-high heat and add the cumin and ajwain seeds they should sizzle upon contact with the hot oil. Quickly add the onions and ginger, and cook about 1 minute. Add the ginger-garlic paste and cook another minute. 2. Mix in the coriander, cayenne pepper, and turmeric, then add the vegetables and salt and cook, stirring, until golden, about 5 minutes.3. Add the tomato wedges, stir 1 minute, then cover the pan, reduce the heat to medium, and cook until the vegetables are crisp-tender, about 5 minutes. I was served this dish at a friend's house and just HAD to find the cookbook. This is from the "Live Longer Cookbook" by Readers' Digest. I find this makes quite a bit of cauliflower but it is very tasty. We think this dish is even tastier if prepared ahead or served the next day. The cookbook suggests serving with roast chicken and couscous or rice.

1 large yellow onion, quartered and sliced
1/2 cup vegetable stock or 1/2 cup low sodium chicken broth
2 tablespoons chutney or 2 tablespoons apricot preserves
2 teaspoons Dijon mustard
3/4 teaspoon dried basil, crumbled
3/4 teaspoon ground ginger
3/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon curry powder
1 head cauliflower, cored and cut into florets (1 1/4 lbs.)
1 cup frozen green pea
1 tablespoon cornstarch, dissolved in
2 tablespoons water
2 tablespoons white wine vinegar or 2 tablespoons cider vinegar
6 drops hot red pepper sauce

Steps:

  • In a 10-inch nonstick skillet, combine the onion, stock, chutney, mustard, basil, ginger, cumin, salt, cinnamon, and curry powder.
  • Bring to a simmer and cook, covered for 6 minutes.
  • Add the cauliflower and cook, covered, for 5 minutes over moderately low heat.
  • Add the peas, cover and cook 4-5 minutes more or until the cauliflower is crisp-tender.
  • Stir in the cornstarch mixture, vinegar, and red pepper sauce.
  • Cook for 1 minute or until the sauce has thickened.
  • Serve hot or at room temperature.
  • For Vegetarian use the vegetable stock.
