Ina Garten's Baked Sweet Potato Fries are super simple. Sweet potatoes, olive oil, brown sugar, salt, and pepper are all you need to make these yummy fries.

4 sweet potatoes (peeled)
4 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon kosher salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 450°.
  • Cut sweet potatoes in half lengthwise and then cut each half into 3 wedges.
  • Place on sheet pan and drizzle with olive oil, toss to coat. Make sure sweet potatoes are in a single layer on the sheet pan.
  • In a small bowl mix the brown sugar, salt, and pepper; sprinkle on the sweet potatoes.
  • Bake for 15 minutes and then turn, bake for an additional 5-10 minutes until browned.

These potatoes are not quite as crispy like fries but they're better for you because they're baked. The serving size says 4, but I eat all of them at one sitting! Adapted from Ina Garten's book,"Back to Basics"(Barefoot Contessa). Ina likes to cut them into fairly large wedges, but I like them smaller(like french fries) because I love the crispiness and get more of it with smaller wedges! Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes.

2 medium sweet potatoes, peeled
2 -3 tablespoons olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 425*F.
  • Cut sweet potatoes in wedges or like french fries.
  • Place wedges on large baking pan or cookie sheet. Pour over olive oil, and toss to mix.
  • Now sprinkle over brown sugar, salt, and black pepper. Toss to coat wedges.
  • Spread out in a single layer. Place pan in oven and bake for 15 minutes, then take out and turn wedges over.
  • Place back in oven and bake another 15-20 minutes, or until golden brown and crispy on the outside.
  • Sprinke with extra kosher salt to taste. The cooking time will depend on how big the wedges are. Enjoy!
  • Note: These are also good with a little ground cumin sprinkled with the other seasonings. Have fun and experiment!

3 tablespoons soybean oil (often labeled "vegetable oil")

  • Position rack in upper third of oven and preheat oven to 425 degrees F. Spray baking sheet with non-stick spray.

2 medium sweet potatoes, peeled
2 tablespoons good olive oil
1 tablespoon La Boite Spice Mix (see separate recipe)
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling
1/2 teaspoon freshly ground black pepper

1 1/2 teaspoons turmeric
2 teaspoons basil
1 teaspoon Aleppo chili
2 teaspoons mustard seed
2 teaspoons black pepper
2 teaspoons coriander seeds
3 teaspoons cumin seeds
1 teaspoon caraway seeds

Steps:

  • Preheat the oven to 450 degrees.
  • Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the spice mix, brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.
  • Into a bowl add the turmeric, basil, chili, and mustard seed. Grind together in pestle and mortar or a clean coffee grinder the black pepper and coriander seed and add to the other spices.
  • Grind together the cumin and caraway seed as above and add to the spices and mix everything together.

4 large baking potatoes, unpeeled
4 tablespoons good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 teaspoon minced fresh garlic
1 teaspoon minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Place the potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary. With clean hands, toss all the ingredients together, making sure the potatoes are covered with oil. Spread the potatoes in a single layer with 1 cut-side down.
  • Bake the potatoes for 30 to 35 minutes, turning to the other cut side after 20 minutes. Bake until they are lightly browned, crisp outside, and tender inside. Sprinkle with salt and serve.

2 teaspoons fresh thyme leaves
Grated zest of 1 large lemon
1 tablespoon coarse fleur de sel or sea salt
4 large (8- to 10-ounce) Idaho baking potatoes
Good olive oil
Whipped Feta (see recipe)
Chopped fresh chives
6 ounces Greek feta, crumbled
2 ounces cream cheese, at room temperature
1/3 cup good olive oil
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with aluminum foil.
  • Place the rosemary, thyme, lemon zest, and fleur de sel in the bowl of a mini food processor and pulse 10 to 12 times, until finely chopped but not puréed. Spread the mixture in a shallow bowl or plate.
  • Scrub the potatoes, dry them well, and pierce them all over with the tines of a fork. Place the potatoes on the prepared sheet pan and rub them all over with olive oil. Roll each potato in the salt and herb mixture and put them back on the sheet pan. Bake for 60 to 75 minutes, until tender. Slit the top of each potato, squeeze the ends together to open the potato, and top with a generous scoop of whipped feta. Sprinkle with chives and serve hot with extra whipped feta on the side.
  • Place the feta and cream cheese in the bowl of a food processor fitted with the steel blade and pulse until the cheeses are mixed. Add the olive oil, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth. Refrigerate until ready to serve.
