CHOCOLATE CHUNK SNACK CAKE WITH CHOCOLATE MALT FROSTING

Chocolate Chunk Snack Cake with Chocolate Malt Frosting image

I've enhanced the classic snack cake to make it homey enough for an after-school treat but also special enough for festive occasions. I started with a simple yellow cake made with buttermilk for tang and tenderness. I added chopped bittersweet chocolate (I prefer a cocoa percentage around 65 percent or 70 percent) and iced the cake with frosting that features cocoa powder, melted chocolate and malted milk powder for loads of luscious flavor.

Yield 16 servings

Number Of Ingredients 15

8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for the pan
1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup buttermilk, at room temperature
1 1/2 cups (6 ounces) chopped bittersweet chocolate
3/4 cup malted milk powder
2 tablespoons Dutch-process cocoa powder
1/4 cup boiling water
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup (2 ounces) chopped bittersweet chocolate, melted
Pinch of kosher salt

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter and line an 8-inch square baking pan with parchment paper, leaving a 2-inch overhang on two sides.
  • In a large bowl, whisk together the flour, baking powder and salt. In another large bowl, using an electric mixer on medium speed, beat the butter and sugar until fluffy, about 2 minutes. Beat in the eggs, one at a time, and then beat in the vanilla. In three additions, beat in the flour mixture, alternating with additions of the buttermilk, starting and ending with flour. Fold in the chocolate. Transfer the batter to the prepared pan and smooth the top. Bake until a toothpick inserted into the center comes out with moist crumbs attached, 30 to 35 minutes. Transfer the pan to a rack to cool completely, and then remove the cake from the pan using the parchment overhangs to lift it out.
  • For the frosting: In a large bowl, whisk together the malt powder, cocoa powder and boiling water until smooth. Let cool.
  • Add the butter and beat with an electric mixer on medium speed until smooth and fluffy. Add the chocolate and salt and beat until smooth and thick. Spread the frosting onto the cooled cake.

IMPRESSIVE CHOCOLATE "SNACK ATTACK" CAKE

Impressive Chocolate

This is the best snack cake recipe that I have found. So light and fluffy! It's a very tall and impressive snack cake, too. The center must be close to 3" high and the flavor is absolutely wonderful. Made in a 9x9 square pan, it's just the perfect size for snacking, dessert for just a few or when a 9x13 isn't necessary. You can frost, if you wish. But, we love it with just a dusting of powdered sugar or a dollop of freshly made whipped cream, your choice. I guarantee, you won't be disappointed. I found the original recipe over 10 years ago in Fine Cooking Magazine.

Number Of Ingredients 10

- 10 tb.very soft butter
- 1 2/3 c. sugar
- 2 large eggs
- 1 tsp. pure vanilla extract
- 1/2 tsp. salt
- 1 1/2 c. plus 1 tb. flour
- 2 1/2 oz. (1/2 c. plus 1/3 c.) unsweetened cocoa powder (i recommend hershey's)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 c. freshly brewed, strong coffee, cooled to warm

Steps:

  • Preheat oven to 350 degrees. Prepare coffee and set aside to cool to warm. Place salt, flour, cocoa, baking powder and baking soda in large bowl and whisk vigorously until it is a uniform color and any clumps are broken up. Set aside.
  • In mixing bowl, cream butter and sugar with hand or stand mixer for about one minute. Mix in vanilla. Add eggs, one at a time, mixing until just incorporated, about another minute.
  • Before turning on mixer, add dry ingredients to mixing bowl all at once. Add warm coffee (not hot) all at once. Turn on mixer and mix until just thoroughly blended and pretty much lump free, scraping sides and bottom, if necessary.
  • Pour batter into greased 9x9 square pan. Bake for approximately 35-40 minutes, or until a toothpick comes out nearly clean. Don't over bake. (Watch carefully as all ovens are different.) Cool completely, then serve with ice cream, fresh whipped cream, a hot fudge drizzle or just simply with a sprinkling of powdered sugar. As you can see by the size of my hand, these HUGE chunks of moist cake pack beautifully the next day for bag lunches or coffee breaks. Simply wrap individual, fist-sized chunks tightly in Saran Wrap, and toss into a basket on the counter. Convenient as a mid-afternoon pick-me-up with a hot cup of coffee or for friends and family to grab and go for bag lunches. Great for picnics, too!

HOMEMADE CHOCOLATE SNACK CAKE

Homemade Chocolate Snack Cake image

THIS is a moist delicious snack cake, so good that icing is not necessary. Sometimes my husband puts a scoop of vanilla ice cream on top with a drizzle of chocolate syrup. Either way, it always satisfies our sweet tooth. -Debi Peschka, Broken Arrow, Oklahoma
