1 pound lean ground beef
1 medium onion, chopped (1/2 cup)
1 package (1 ounce) Old El Paso™ taco seasoning mix
1 can (4.5 ounces) Old El Paso™ chopped green chiles, drained
1 cup milk
2 eggs
1/2 cup Original Bisquick™ mix
3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
Old El Paso™ salsa (any variety)
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies.
  • Stir milk, eggs and Bisquick mix until blended. Pour into pie plate.
  • Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes. Serve with salsa and sour cream.

Don't let the name fool you, it's not impossible!! A recipe that I got from one of my Aunt's. Very easy and delicious.

1 lb lean ground beef or turkey
1/2 c finely chopped onion
1 pkg taco seasoning
1 can(s) chopped green chilies, drained
2 c milk
1-1/3 c bisquick
4 medium eggs
2 tomatoes - diced
1 c shredded cheese of your choice (approx 4 oz)
1 can(s) sliced black olives
1/2 c sour cream
1 c shredded lettuce
1 can(s) small can of corn, drained

Steps:

  • 1. Brown ground beef; drain and add chopped onion and taco seasoning (with water as package directs) but remember you want this pretty dry not real wet.
  • 2. Take above meat mixture and spread on the bottom of a deep dish pie pan, sprinkle green chilies & small can of drained corn.
  • 3. Beat Bisquick, milk, eggs until smooth. Pour over the meat mixture and bake at 400 degrees for 35 mins
  • 4. Once this is done remove from oven and sprinkle cheese on the top and place back in oven until cheese melts and is golden brown. Once cheese melts insert a knife to make sure it comes out clean so you know your bisquick topping is done.
  • 5. Cool for 5 min and service with diced tomatoes; sour cream and lettuce. You can always put some corn chips on the side.

The ultimate in comfort food, this Impossible Taco Pie is layered with ground beef, Rotel, cheddar cheese and a Bisquick topping. It's an easy family dinner recipe.

1 1/2 pounds lean ground beef
1 envelope taco seasoning (1 ounce)
10 ounces Rotel diced tomatoes & green chiles (drained)
1 cup shredded cheddar cheese
1/2 cup Bisquick mix
1 cup milk
3 large eggs

Steps:

  • Preheat the oven to 400º Fahrenheit. Spray a 9" round deep dish pie plate (or cake pan) with cooking spray.
  • Using a skillet over medium heat, brown the ground beef until the beef is no longer pink. Drain off any fat.
  • Add in the taco seasoning and drained Rotel. Mix well and heat through.
  • Spread the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top.
  • In a small bowl, whisk together the Bisquick mix, milk and eggs.
  • Pour evenly over the beef and cheese.
  • Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean.
  • Serve immediately.

1 pound ground chicken
1 medium onion, diced
1 can black beans, rinsed
1/2 cup salsa
1 package of taco seasoning (gluten free)
3/4 cup bisquick
3 eggs
1 1/4 cups milk
2 ounces low fat cheddar, grated
garnish with:
olives, chopped
scallions, chopped
additional grated cheddar
diced tomatoes
parsley or cilantro
greek yogurt or sour cream
additional salsa

Steps:

  • 1. Preheat the oven to 400 degrees F (or 205 degrees C) and grease a 10-inch deep dish pie plate. In a medium skillet over a medium high heat, crumble and brown the ground chicken with the onions. Add the salsa, beans and taco seasoning then stir to combine. Allow it to cook for a minute or two until the bottom of the pan looks dry. You don't want to introduce extra liquid into the pie or it may not set properly. Spread the meat mixture into the bottom of the pie plate. Whisk the milk, eggs and Bisquick together until smooth. Pour the batter over the meat mixture. Bake it for 30 minutes then remove it from the oven, sprinkle on the 2 ounces grated cheese and bake for an additional 10 minutes. Allow the pie to cool for 5 to 10 minutes before slicing. 2 (1 1/4 ounce) envelopes taco seasoning, dry
3/4 cup Bisquick
1 1/4 cups milk
3 eggs
1 cup cheddar cheese, shredded
1/4 head lettuce, shredded
1 tomatoes, diced
1/4 cup ripe olives, sliced

Steps:

  • Preheat oven to 400.
  • Grease pie plate, 10x1 1/2", or square baking dish, 8x8".
  • Cook and stir the ground beef and onion in 10" skillet until beef is brown; drain.
  • Stir in seasoning mix; spoon into pie plate. Beat baking mix, milk and eggs about 1 min with wire whisk or hand beater or until almost smooth.
  • Pour into pie plate. Bake about 25 min or until knife inserted in center comes out clean.
  • Sprinkle with cheese. Bake about 2 min longer or until cheese is melted.
  • Cool 5 minute.
  • Garnish with lettuce, tomato and olives.
