8 ounces Baby Spinach, triple washed
1/2 cup fresh basil leaf, chopped
2 tablespoons shallots, chopped
1 teaspoon garlic (garlic cloves pressed)
2 cups chicken stock, 14-1/2 oz can (College Brand)
1 cup milk
1/2 cup instant mashed potatoes (buds, flakes)
3 tablespoons sour cream
3 tablespoons lemon juice (substitute lime juice)
1 pinch cayenne pepper, to taste
1 pinch salt, to taste
2 hard-boiled eggs, sliced
1 small cucumber, sliced thinly
1 small yellow squash, sliced thinly
1 teaspoon Hungarian paprika
1/2 cup asiago cheese, grated (substitute Gouda cheese)

Steps:

  • Put the spinach in a big pot and along with the basil leaves, shallots, garlic and a 1 cup of the stock and cook, stir until wilted.
  • Use a hand blender and blend the ingredients, then add the balance of the stock and milk and blend again, cook stir for about 3 minutes.
  • Now add the instant potato flakes, sour cream, lemon juice, cayenne pepper and salt to taste. stirring for about three minutes or more (make sure the sour cream is blended well).
  • Place soup in individual bowls, add 1 coin shaped slice (or more) of hard boiled egg, cucumber, squash.
  • Then sprinkle a little of the paprika on top and finally add some graded cheese.
  • Serve and enjoy this tasty soup on a cold winter or hot summer day!

1 tablespoon dried minced onion
1 teaspoon chicken bouillon granules
1/2 teaspoon garlic salt
1 cup thinly sliced fresh or chopped frozen spinach
1 cup heavy whipping cream
1/4 teaspoon ground nutmeg

Steps:

  • In a saucepan, combine the potatoes, water, onion and bouillon; bring to a boil. Cook until potatoes are tender, about 10 minutes. Stir in the remaining ingredients. Cook until spinach is wilted and mixture is heated through.

1 lb russet potato, peeled and cut into cubes
5 cups water or 5 cups broth
1 1/2 teaspoons salt (to taste)
2 cups leeks, well cleaned and chopped
1 tablespoon minced garlic
2 lbs fresh spinach, washed, and chopped
1/2 cup minced fresh dill
1/4 cup fresh basil leaf
1/4 cup fresh mint leaves
1 1/2 cups buttermilk
white pepper
3 tablespoons minced fresh dill (to garnish)

Steps:

  • Bring the potatoes, broth or water, and salt to a boil in a soup pot; turn down and simmer slowly for about 20 minutes.
  • Add the leeks, garlic and spinach during the last 5 minutes.
  • Use a food processor or hand blender to puree the soup and all the veggies until smooth. You will probably have to do this in batches in the processor.
  • Transfer the soup to a container, cover tightly and chill for about 4-5 hours or overnight.
  • Stir in the buttermilk just before serving and add white pepper to taste.
  • Sprinkle on the fresh dill for garnish.

1 lb fresh spinach or 1 lb swiss chard, cooked, well drained and chopped
2 tablespoons butter
1 fresh garlic clove, finely chopped
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon ground pepper
3/4 cup cream or 3/4 cup milk

Steps:

  • Melt butter in a small saucepan over low heat.
  • Add garlic clove.
  • Saute garlic in butter a minute or so.
  • Do not let garlic burn or it will be bitter.
  • Blend in flour to make a roux.
  • Add salt and pepper and heat until mixture bubbles, stirring constantly.
  • Remove from heat.
  • Gradually add cream or milk.
  • Return to heat and stir until mixture is smooth and thickened.

6 cups cubed peeled potatoes
2 medium leeks (white portion only), chopped
2 tablespoons canola oil
1/2 cup all-purpose flour
1 teaspoon sodium-free chicken bouillon granules
3 cups reduced-sodium chicken broth
1 can (12 ounces) reduced-fat evaporated milk
1 package (9 ounces) fresh spinach, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-12 minutes or until tender. Drain. Mash 2 cups potatoes; set aside., In a Dutch oven, saute leeks in oil until tender. Whisk the flour, bouillon granules and broth until smooth. Gradually stir into pan. Add milk. This was our Friday staple that we had... usually before a serving of hungarian pancakes.

3 large potatoes, peeled and cut into chunks
2 Tbsp freshly chopped parsley
1 medium onion, finely diced
2 or 3 carrots sliced
1/2 parsnip (left whole if you do not like it or sliced if you do)
1/4 cauliflower, cut into small floretes
1/4 capsicum (bell pepper... piece left whole)
1 Tbsp oil
salt to taste
1 Tbsp paprika
4 eggs
sour cream
you can add other veggies too if you want like sweet potato or swede or turnip or broccoli but always use the above veggies as a base soup

Steps:

  • 1. Lightly fry the onion and parsley in the oil in a big pot. When onion is see through add the diced veggies and stir.
  • 2. When the onion starts to have a bit of colour add the paprika and toast it for a sec or two till it is fragrant. Add salt.
  • 3. Add enough water to it to just cover the veggies. Bring to the boil and then simmer slowly till veggies are cooked.
  • 4. When veggies are cooked crack all 4 eggs in to the soup, whole, one at a time. (like you would poach the egg) and gently simmer with lid on without stirring for a few mins for the egg to cook.
  • 5. Serve with crusty bread and a dollop of sour cream if you want! It is nice to actually over cook the potato just slightly as it gives the soup a sandy potato bottom... yum!!

3 tablespoons unsalted butter
6 ounces smoked Hungarian sausage, sliced into rounds
1 yellow onion, diced
1 teaspoon salt, or more to taste
3 tablespoons all-purpose flour
2 cloves garlic, minced
2 teaspoons Hungarian paprika
5 cups chicken broth, or more to taste
2 cups chopped green cabbage
1 ½ pounds russet potatoes, peeled and cubed
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 bay leaf
2 tablespoons distilled white vinegar
½ cup sour cream, or to taste
2 tablespoons sliced green onion, or to taste

Steps:

  • Melt butter in a soup pot over medium heat. Add sausage and cook and stir until lightly browned, about 3 minutes. Use a slotted spoon to remove sausage to a bowl, leaving behind any butter in the pot.
  • Toss onion into the pot with 1 teaspoon salt. Cook and stir until onion just starts to turn translucent and picks up a brown color from the meat juices in the pan, 4 to 5 minutes. Add flour; cook and stir for 2 to 3 minutes. Add garlic and paprika; cook and stir until fragrant, about 1 minute, being careful not to burn the paprika.
  • Stir in 5 cups chicken broth. Increase heat to high and bring to a simmer, stirring occasionally so flour does not stick to the bottom of the pot. Stir in cabbage and cook until it just loses its stiffness, about 2 minutes. Stir in potatoes and bring back to a simmer. Add black pepper, cayenne pepper, and bay leaf, plus a splash of chicken broth if desired. Bring back to a simmer.
  • Stir soup and reduce heat to medium-low. Simmer, stirring occasionally, until potatoes are very soft and tender, about 30 minutes. Add sausage and vinegar and simmer for 10 minutes. Taste and adjust for salt.
  • Remove from heat and ladle into bowls. Garnish with sour cream, green onions, and cayenne pepper.
