¾ cup margarine, divided
1 medium head cabbage, cored and sliced thin
1 onion, sliced
1 (16 ounce) package uncooked spaghetti
1 cup small curd cottage cheese
1 tablespoon white sugar
salt and pepper to taste

Steps:

  • In a large skillet over medium-low heat, melt 3 tablespoons margarine. Add cabbage and onions. Cover and cook, stirring occasionally, until tender and browned.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Stir cooked pasta into cabbage and add remaining margarine. Stir in cottage cheese and sugar; cook until heated through.
  • Season with salt and pepper to taste.

1 large onion (chopped)
8 ounces butter (2 sticks)
Salt, to taste

1 pound medium Hungarian egg noodles (homemade or store-bought, cooked)

Steps:

  • Gather the ingredients.
  • In a large skillet or Dutch oven , sauté cabbage and onion in butter until golden brown and tender. Season with salt and pepper.
  • Mix with cooked egg noodles. Adjust seasonings and rewarm if necessary to serve piping hot.

1 (3 lb) savoy cabbage, cored, outer leaves removed, shredded (about 8 cups)
2 tablespoons olive oil (probably more than this if you don't use a non-stick pan)
1 tablespoon granulated sugar
1 yellow onions (American) or 1 brown onion, chopped (Australian)
6 garlic cloves, chopped
2 leeks, thoroughly washed, outer leaves removed, chopped
fresh ground black pepper, to taste
1 (12 ounce) package egg noodles
1 tablespoon poppy seed

Steps:

  • Heat the oil in a large non-stick pan; add the sugar and heat gently until the sugar browns.
  • Add the onions, garlic and leeks; cook until they start to wilt.
  • Stir in the cabbage; sauté, stirring frequently, until the cabbage has softened, about 20 minutes.
  • Season to taste with pepper, and transfer the cabbage mixture and pan juices to a large bowl and keep warm.
  • Cook the noodles according to the packet instructions, then drain. (Alternatively, using pre-cooked vacuum-packed noodles works well, and saves time).
  • Quickly toss the noodles with the cabbage mixture and the poppy seeds.
  • Serve immediately.
  • Notes: Traditionally, this noodle and cabbage dish is served with sour cream. It's certainly delicious with the sour cream. Opt for a lower fat dish another night!

½ cup butter
1 large onion, chopped
1 head cabbage, cored and chopped

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender but still slightly firm, about 5 minutes. Drain well.
  • Melt butter in a large skillet or wok over medium heat; cook and stir onion until browned, about 8 minutes.
  • Cook and stir cabbage into onions until cabbage has wilted, another 5 to 8 minutes.
  • Gently stir cooked noodles into cabbage mixture; season with salt and black pepper to taste.

1/4 lb Hungarian paprika (rind removed) or 1/4 lb garlic bacon, cut into small dice (rind removed)
salt
1 lb dried noodles (medium egg noodles, tagliatelle, or fettuccine)
1/2 lb cottage cheese
fresh ground black pepper

Steps:

  • In a skillet, fry the bacon over moderate heat till crisp, drain on paper towels, and keep the drippings hot.
  • Bring a large kettle of salted water to a rolling boil, add the noodles, return to the boil, and cook till tender, 10 to 12 minutes. Drain the noodles well, then add the bacon drippings, cottage cheese, and pepper and toss over very low heat to warm the cheese. Add the bacon, toss again, and serve immediately.

1 tablespoon salt
4 cups finely shredded cabbage
1 cup finely sliced onion (optional)
4 tablespoons butter
2 teaspoons sugar
1/4 teaspoon pepper
3 cups cooked egg noodles, broad, drained

Steps:

  • Mix the salt and cabbage together and let stand 30 minutes. Squeeze out as much liquid as possible.
  • Heat the butter in a deep skillet. Add the onions, cabbage, sugar and pepper. Cook over low heat, stirring frequently, until cabbage is browned, about 45 minutes. Add the noodles and toss to blend thoroughly.

1 small cabbage
12 ounces wide egg noodles
24 ounces cottage cheese
8 ounces sour cream
1 egg
1 small mild onion
1/2 cup butter or 1/2 cup margarine
salt and pepper

Steps:

  • Boil noodles, according to package instructions, until al dente. Set aside in large mixing bowl.
  • Dice onion. Saute in 1/3 stick of butter until they start to get a little color, then set aside.
  • Remove stem and chop cabbage into bite-sized pieces (about 3/4 inch). Saute in 2/3 stick of butter until tender and have a little color. Add to noodles.
  • Blend cottage cheese, sour cream, and egg. Add sautéed onions and mix well. Season with salt and pepper to taste.
  • Add cheese mixture to noodles and cabbage and mix well. Pour into a glass 9 x 13 baking dish lightly coated with non-stick spray.
  • Bake covered at 350°F for 30 minutes or until heated through. Uncover and bake an additional 10-15 minutes to crisp edges and top layer. Serve hot.
  • DO NOT sauté the onions and cabbage together. The onions will burn before the cabbage is done. This also helps to better distribute the butter throughout the dish.

5 slices bacon, diced
2 teaspoons sugar
1 teaspoon salt
6 cups chopped cabbage (1-inch squares)
3 cups cooked noodles (4 ounces uncooked)
1 cup sour cream
Paprika

Steps:

  • Saute bacon until crisp in large frying pan. Remove bacon; set aside. Stir sugar and salt into bacon drippings. Add cabbage, stirring until cabbage is coated with bacon drippings. Cover and cook 7 to 10 minutes. Add cooked noodles and bacon, stirring to blend. Adjust seasoning to taste. , Spoon into 2-quart baking casserole; cover tightly and bake at 325° for 45 minutes. Spread sour cream over top of casserole; sprinkle with paprika and return to oven for 5 minutes more.
