I remember having something very similar to this as an appetizer at a party. When I asked for the recipe I was told that it was a family recipe from Hungaria and she just dumps it all in. I then decided to research it and this is what I have come up with. It is combination of several different recipes that I came across until I came up with the taste I remembered.

8 ounces cream cheese
1 cup cottage cheese
3 tablespoons capers
1 teaspoon caraway seed
1/2 teaspoon dry mustard
2 teaspoons paprika

Steps:

  • Cream together all ingredients.
  • Place into a bowl or pretty mold covered with plastic wrap. Cover top of cheese with plastic wrap.
  • Refrigerate for at least 2 hours overnight is best.
  • Unmold on to a serving plate and surround with rye bread squares, fresh veggies, or crackers.

Liptauer is a soft, unripened cheese made from sheep's milk that comes from Lipto in what is now Liptov in northern Slovakia. The word Liptauer has become synonymous with the spread it is made with. Romanian brindza, or a combination of dry curd or farmers, cottage, ricotta or cream cheese and sour cream can be used in place of Liptauer. If you can't find dry curd cheese, you might want to make your own farmers cheese from scratch. Liptauer cheese spread is typically eaten as an appetizer or snack with dark rye bread, radishes, hard-cooked eggs, green onions, green pepper and beer. Hungarians, Czechs, Austrians and some Scandinavians all claim it as their own. Makes about 1 cup Liptauer Cheese Spread - Korozott Juhturo

1/2 pound Liptauer or brindza or dry curd or farmers cheese at room temperature
4 ounces (1 stick) soft unsalted butter
1 teaspoon sweet Hungarian paprika
1/2 teaspoon prepared mustard
1/2 teaspoon pounded caraway seeds
1 small grated onion
1/2 teaspoon anchovy paste

Steps:

  • Sieve cheese into a medium bowl. Beat in butter. Add remaining ingredients, combining thoroughly. Adjust seasonings. Refrigerate at least 2 hours for flavors to marry. Remove from refrigerator 15 minutes before serving.
  • Variations: Capers and chives may be added and sieved cottage cheese or cream cheese can be used in place of Liptauer, brindza or farmers cheese. If you want to turn this into a veggie dip, add 1/3 cup sour cream.

Cheese spread that is great for parties as a cracker spread or as a veggie dip! Cook time is actually time to refrigerate!!!

Number Of Ingredients 7

1 cup large-curd cottage cheese or 1 cup Liptauer cheese
1 cup butter or 1 cup cream cheese, at room temperature
2 tablespoons anchovy paste
2 tablespoons prepared mustard
4 tablespoons grated onions
1 tablespoon Hungarian paprika
2 teaspoons caraway seeds

Steps:

  • Combine large-curd cottage cheese OR lipto cheese and butter OR cream cheese in food processor.
  • Add anchovy paste, mustard, onion, caraway seeds and paprika.
  • Process, turning machine off twice during processing to scrape down sides, for 1 minute until smooth.
  • Transfer sread to a small bowl, cover, and refrigerate for at least 24 hours to allow flavor to develop.
  • Serve as a spread for crackers or as a dip for raw veggies such as carrots, celery and zucchini sticks!
  • ENJOY!

I just moved my mother to a retirement home and this was in her "notebook" of recipes. It uses Hungarian paprika, caraway seeds, cream cheese and capers. I didn't remember this but my parents entertained a lot and this must have been one of her dips.

  • Serve with pumpernickel bread.
