Greek yogurt imparts a silky texture to this hummus without tahini.

Yield Makes 2 1/2 cups

Number Of Ingredients 9

1 small clove garlic
Coarse salt and freshly ground pepper
2 15-ounce cans chickpeas, rinsed and drained, 1/3 cup liquid reserved
2 tablespoons lemon juice (from two lemons)
1/4 teaspoon ground cumin
Pinch of freshly grated nutmeg
1/4 cup Greek yogurt
3 to 4 tablespoons extra-virgin olive oil
Crudites and pita chips, for serving

Steps:

  • Sprinkle garlic clove with 1/4 teaspoon salt and mash with the back of a knife to form a paste. Add to food processor along with chickpeas and their reserved liquid, lemon juice, cumin, nutmeg and yogurt. Stream in olive oil, adding enough to reach a smooth consistency. Season with salt and pepper.
  • Transfer to a bowl and serve with crudites, such as carrots, radish, and endive, and pita chips. Hummus will keep in an airtight container for up to 1 week.

1/4 cup olive oil
1 garlic clove, peeled
1/8 teaspoon red pepper flakes, crushed

Steps:

  • Put all ingredients into a food processor and blend until smooth.
  • Chill in a covered container.
  • Garnish with parsley.
  • Optional ingredient: add a small clove of garlic when you process this in the food processor.

1 jalapeno pepper, trimmed and seeded
1 tablespoon sesame oil
4 cloves garlic
1 teaspoon ground cumin
¼ teaspoon ground paprika
¼ teaspoon cayenne pepper

Steps:

  • Combine black beans, cilantro, lime juice, jalapeno pepper, sesame oil, garlic, cumin, paprika, and cayenne pepper in a food processor or blender; blend until smooth.

Simple Hummus without Tahini image

Number Of Ingredients 7

1 can (15 oz) can garbanzo beans, drained and rinsed
2 tablespoons water. Can add 2T more if a thinner consistency is desired.
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
2 cloves garlic, minced (more if the cloves are small)
3/4 teaspoon ground cumin
1/2 teaspoon salt

Steps:

  • Add the garbanzo beans, 2 tablespoons of water, the olive oil, lemon juice, garlic, cumin, and ¼ teaspoon of salt to a food processor. Process until smooth and creamy. If needed, add additional water to thin out the hummus and ¼ teaspoon of salt to your taste preference.
  • Store covered in the refrigerator.

Tahini is not always available to make Hummus. In searching for a tasty alternative, I came up with a very simple and delicious recipe using peanut butter instead of tahini. This is my take on peanut butter hummus. This recipe is so simple and it takes a matter of minutes to make. Great for last minute gatherings or a very quick snack.

1 can(s) 15 ounce chick peas/garbanzos
2 teaspoon(s) fresh lemon juice
3 clove(s) roasted garlic,minced
2 tablespoon(s) peanut butter
1/2 teaspoon(s) olive oil
1/2 teaspoon(s) sesame oil
- roasted red peppers (optional topping)

Steps:

  • Drain beans over a bowl and reserve the juice.
  • I like to take the hulls off the beans. This makes a smoother hummus, but you dont have to. Simply squeeze them by pinching them and the hulls will easily come off. If you skip this step, the hummus will not be as smooth, but the flavor will remain excellent.
  • Add all ingredients except roasted red peppers to the food processor. Blend, and add the saved juices from the can in small amounts until you get the consistency you like.
  • Top with finely chopped roasted red peppers if desired. I absolutely love this recipe with the roasted red peppers. Sprinkle with paprika and serve. Will keep in the fridge for a good week.
  • Serve with your favorite crackers, pita,vegetables, you name it!
