Steps:
- Sprinkle garlic clove with 1/4 teaspoon salt and mash with the back of a knife to form a paste. Add to food processor along with chickpeas and their reserved liquid, lemon juice, cumin, nutmeg and yogurt. Stream in olive oil, adding enough to reach a smooth consistency. Season with salt and pepper.
- Transfer to a bowl and serve with crudites, such as carrots, radish, and endive, and pita chips. Hummus will keep in an airtight container for up to 1 week.

- Add the garbanzo beans, 2 tablespoons of water, the olive oil, lemon juice, garlic, cumin, and ¼ teaspoon of salt to a food processor. Process until smooth and creamy. If needed, add additional water to thin out the hummus and ¼ teaspoon of salt to your taste preference.
- Store covered in the refrigerator.

Tahini is not always available to make Hummus. In searching for a tasty alternative, I came up with a very simple and delicious recipe using peanut butter instead of tahini. This is my take on peanut butter hummus. This recipe is so simple and it takes a matter of minutes to make. Great for last minute gatherings or a very quick snack.

- Drain beans over a bowl and reserve the juice.
- I like to take the hulls off the beans. This makes a smoother hummus, but you dont have to. Simply squeeze them by pinching them and the hulls will easily come off. If you skip this step, the hummus will not be as smooth, but the flavor will remain excellent.
- Add all ingredients except roasted red peppers to the food processor. Blend, and add the saved juices from the can in small amounts until you get the consistency you like.
- Top with finely chopped roasted red peppers if desired. I absolutely love this recipe with the roasted red peppers. Sprinkle with paprika and serve. Will keep in the fridge for a good week.
- Serve with your favorite crackers, pita,vegetables, you name it!
