- Whisk hummus, olive oil, parsley, cilantro, water, vinegar, and garlic together in a small bowl. Season dressing with salt and pepper. Add a few more drops of water if dressing is too thick.

GREEK SALAD DRESSING AND HUMMUS ALA THE RED FEZ
This is an original salad dressing from The Red Fez Restaurant. Very refreshing. Pour over salad ingredients listed and serve with Pita bread and Hummus.

- For the dressing: Mix all ingredients together and chill.
- Pour over a salad of iceberg lettuce, tomato, cucumbers and red onion.
- Sprinkle 1 teaspoon of black pepper over salad before adding dressing.
- Toss to mix well.
- Top with crumbled Feta Cheese.
- For the Hummus: Puree all ingredients in blender or food processor.
- Add additional chick pea juice if necessary to make a smooth consistency.
- Spread pita pocket with hummus and fill with salad.

FALAFEL SALAD WITH HUMMUS DRESSING

- Pulse half each of the parsley and onion, the cumin, 1/2 teaspoon salt and a few grinds of pepper in a mini food processor to make a paste. Put the chickpeas in a large bowl and roughly mash with a potato masher, leaving some whole. Add the parsley mixture, egg and 1/2 cup panko; stir to combine. Refrigerate 10 minutes.
- Meanwhile, combine the tomatoes, the remaining parsley and onion and 1/2 teaspoon salt in a medium bowl; set aside. Whisk the hummus and yogurt in another bowl to make a dressing.
- Put the remaining 1 cup panko on a baking sheet. Scoop tablespoonfuls of the chickpea mixture and roll in the panko to coat and form a ball. Heat 1 inch vegetable oil in a large high-sided skillet over medium-high heat. Fry the falafel, turning often, until golden, about 6 minutes. Remove to a paper towel-lined plate to drain.
- Toss the lettuce with half of the hummus dressing in a large bowl. Top with the tomato mixture and falafel. Serve with the remaining hummus dressing.

POTATO SALAD WITH HUMMUS YOGURT DRESSING
Steps:
- Make or buy hummus: combine chickpeas with 1 Tbsp. of the liquid, garlic, lemon juice and tahini and puree to a paste. Scrape down sides of bowl and add 2 Tbsp. olive oil and paprika and puree until smooth, adding extra chickpea liquid as needed to get nice smooth consistency. Season to taste. Simmer potatoes until tender, about 20 minutes; drain, then peel and cut into 1-inch pieces. Let cool. Blend all other ingredients well and fold into potatoes; season with salt/pepper and serve. Dressing ingredients must be mixed well prior to adding to potatoes or you will break up the potatoes too much! Enjoy!

- In a large pot, cover the potatoes with water and bring to a boil. Simmer over moderate heat until the potatoes are tender when pierced with a knife, about 20 minutes. Drain and let cool. Peel the potatoes and cut into 1-inch pieces.
- In a large bowl, mix the hummus with the yogurt, celery, cornichons, parsley and onion. Fold in the potatoes, season with salt and pepper and serve.
