Steps:

  • Place chorizo sausage in a skillet over medium-high heat; cook and stir until sausage is browned and cooked through, about 5 minutes.
  • Stir eggs into the sausage; cook and stir until eggs are set and scrambled with the chorizo, 3 to 5 minutes.
  • Warm corn tortillas on an electric skillet until they are heated through, about 2 minutes.
  • Place egg and chorizo into corn tortillas.

2 russet potatoes, peeled and diced
1/2 pound bulk or chopped chorizo
1 onion, chopped
10 eggs
Salt an freshly ground pepper to taste
1/2 bunch cilantro leaves, chopped
2 green onions, sliced for garnish
Grated Panela cheese for garnish

Steps:

  • Cook the potatoes in boiling salted water 10 minutes. Drain and reserve.
  • Fry the chorizo in a large nonstick skillet until browned. Drain off any excess oil. Add the onion and cook 2 to 3 minutes. Add the potatoes and cook until well-browned, about 10 minutes.
  • Beat the eggs until frothy and add to the chorizo. Stir with a fork to scramble until soft, not browned. Stir in the cilantro just before the eggs set. Garnish with scallions and cheese and serve.

The name pretty much says it all: This is a simple breakfast dish of eggs scrambled with chorizo. As with most simple dishes, the quality of ingredients really matters, so try to find good -- in this case, fatty and spicy -- chorizo to carry the dish. The amount of fat it renders while frying will determine how much extra oil you'll need to add. Mexican chorizo is sold either loose or in links; if yours is the latter, remove it from the casing to fry.

2 plum tomatoes, diced
1/2 jalapeno, diced (seeded if desired)
1/2 small red onion, diced
1/2 cup fresh cilantro leaves, roughly chopped (reserve some for garnish)
Juice of 1/2 lime
Kosher salt and freshly ground black pepper
2 to 3 tablespoons vegetable oil
1 pound fresh Mexican chorizo, casings removed
1 small white onion, finely chopped
8 large eggs
1 tablespoon unsalted butter
Eight 6-inch flour tortillas, warmed, for serving
2 avocados, peeled, pitted and sliced

Steps:

  • For the pico de gallo: Combine the tomatoes, jalapeno, onion, cilantro and lime juice in a small bowl. Season with salt and pepper. Set aside.
  • For the eggs: Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, breaking up the meat into big chunks, until well-browned, about 4 minutes. If the mixture seems dry, add another tablespoon of oil. Add the onion and cook, stirring, until tender (reduce the heat if the onion browns too quickly), about 3 minutes. Turn the heat to medium-low.
  • Beat the eggs in a bowl until frothy. Stir the butter into the skillet. When it has just melted, pour the eggs over the chorizo and stir constantly with a wooden spoon or rubber spatula until they are just set. Garnish with the reserved cilantro and serve with the tortillas, avocado and pico de gallo.

6 eggs, at room temperature
6 roasted piquillo peppers
1/2 cup olive oil
4 large potatoes
salt and pepper
1 small onion, sliced
5 ounces cooking chorizo sausage
1/4 cup chopped parsley

Steps:

  • Peel the potatoes and slice thinly.
  • Heat the oil and fry the potatoes, adding the onions and parsley.
  • When tender, remove to serving platter. Cut into thin strips, fry the piquillo, and place them on top of the potatoes.
  • Add more olive oil to the pan if necessary. When oil is hot but not smoking, crack the eggs singly into a dish and slide them into the pan.
  • Splash oil over the egg as it cooks. Season with salt and pepper and remove it to drain. Repeat for each egg, and place the cooked eggs around the potatoes on the platter.
  • Slice the chorizo in thin slices and fry very briefly. Add to the platter and serve immediately.
  • This dish should serve several people, depending on their appetites. Even Spanish gourmets find that their families prefer this simple dish to their most delicate creations!

1 tablespoon olive oil
8 medium red potatoes, cubed
1 medium onion, chopped
1/2 lb bulk chorizo sausage, fresh not cured
4 eggs
1/4 cup pico de gallo or 1/4 cup salsa
1/4 cup Mexican crema or 1/4 cup sour cream
1/4 cup crumbled queso fresco
avocado, chopped (optional)
cilantro, coarse chopped (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Heat oil in a large skillet over medium high heat. Place potatoes, onion and chorizo in a skillet. Cook until chorizo is brown and crumbly and potatoes are not quite cooked through; drain.
  • Divide mixture evenly between four ovenproof bowls (5" cast iron skillets work great). Break an egg, being careful not to break yolk, into each bowl on top of mixture. Place bowls on a baking sheet. Bake uncovered, for 18-20 minutes or until eggs reach desired doneness.

½ pound peeled Yukon potatoes, diced
6 cups plus 6 tablespoons extra-virgin olive oil, divided

¼ cup small diced Spanish cured chorizo
2 large eggs

Steps:

  • 1. In a large bowl, add the potatoes. Fill the bowl with cold water and let the potatoes soak for 10 minutes. While the potatoes are soaking, fill a large stockpot with water and bring to a boil over high heat. Drain the potatoes, add them to the pot and bring back to a boil. Cook until the potatoes are tender but not falling apart, about 4 minutes. Use a slotted spoon to transfer the potatoes to a sheet pan lined with paper towels and place in the refrigerator until cold, about 20 minutes. 2. In a large stockpot set over medium-high heat, bring 6 cups olive oil to 250º. Carefully add the reserved potatoes and fry until just before they begin to color, about 8 minutes. Use a slotted spoon to transfer the potatoes to a sheet pan lined with paper towels and let sit in the refrigerator until cold, about 20 minutes. Bring the olive oil to 375º and fry the potatoes again until golden-brown, about 2 minutes. Use a slotted spoon to transfer the potatoes to a plate and season with kosher salt. 3. In a medium skillet set over medium heat, heat 2 tablespoons olive oil and add the chorizo. Cook until the chorizo begins to brown, about 5 to 7 minutes. Transfer the chorizo to a serving bowl, add the potatoes and stir to combine. 4. In a nonstick skillet set over high heat, add the remaining 4 tablespoons olive oil and the eggs. Fry until the eggs' edges are brown and crispy but the yolks are still runny, about 2 minutes. Carefully drain the oil from the pan with the egg in it. Use a spatula to break up the egg yolk and whites and quickly spoon over the potatoes. Sprinkle with sea salt and serve immediately.

Delicious breakfast casserole that I came up with based on traditional Mexican breakfast fare, Chorizo con Huevos, or simply Chorizo with Eggs. This recipe freezes and stores very well. I like to take this to work and heat it up, in the microwave, for an easy breakfast on the fly. Serve with a nice dollop of Crema or Sour Cream...

1 lb bulk chorizo sausage
1 lb country style sausage
1 medium onion, diced
16 oz country style hash brown potatoes, frozen
12 large eggs
1 c whole milk or half and half
2 c mexican blend shredded cheese
salt and pepper to taste
crema, (mexican sour cream) or sour cream (optional)
taco sauce, hot sauce, salsa (optional)

Steps:

  • 1. Preheat oven to 400 Deg.
  • 2. Coat a 9 X 13 pan with non-stick spray. Place frozen potatoes in bottom of pan.
  • 3. In a large skillet, over medium heat, brown both sausages until cooked through and crumbly. *Note: Chorizo can be very greasy so be sure to drain well.
  • 4. While Sausage is browning dice one medium onion and layer evenly over potatoes.
  • 5. Drain sausage mixture and layer evenly over top of potatoes and onion.
  • 6. In a large bowl, mix eggs, milk, salt, and pepper, until combined. Pour mixture over rest of ingredients, in pan, and let settle.
  • 7. Bake uncovered for 1 hour or until eggs are set. Check with toothpick and when it comes out clean it's done.
  • 8. Remove pan, from oven, and mop up any excess grease from top.* Cover mixture with cheese and bake an additional 10 minutes or until cheese is hot and bubbly.
  • 9. When done,Let casserole sit for at least 10 minutes,it will be very hot. Cut into 8 servings and top with Crema or Sour Cream, and/or your favorite sauce or salsa. Enjoy!
  • 10. *TIP: Use paper towel or slices of bread to mop off excess grease from casserole.

1 package Double 8 Cattle Company Fullblood Wagyu Beef Chorizo
8 tablespoons Grapeseed Oil (divided)
12 Corn Tortillas
24 ounces San Marzano Whole Tomatoes in Juice
1/2 Sweet Onion (small diced)
1/2 cup Fresh Cilantro (chopped) (plus additional to garnish)
2 tablespoons Canned Chipotle Chiles in Adobo (chopped)
1 Guajillo Chile (stem removed)
3 Garlic Cloves (minced)
1 teaspoon Salt
12 large eggs
12 ounces Queso Fresco (crumbled)
2 Avocados (sliced)
16 ounces Black Beans (mashed)
1 teaspoon Butter Oil
1 Kosher Salt & Freshly Ground Black Pepper (to season)
3 Salsa Fresca: Roma Tomatoes (small diced)
1/2 Red Onion (small diced)
2 Garlic Cloves (minced)
1/4 cup Cilantro Leaves (minced)
1 Lime (juiced)
1/2 teaspoon Kosher Salt

Steps:

  • PREPARING THE SALSA FRESCA: In a bowl, add the diced roma tomatoes, diced red onion, minced garlic cloves, minced cilantro leaves, juice from one lime, and kosher salt. Mix all ingredients together, and reserve.
  • PREPARING THE RANCHERO SAUCE: In a medium size stainless steel sauté pan, sauté the diced sweet onions and minced garlic. Once the onion is translucent, add the San Marzano whole tomatoes in juice, chopped chipotle chiles, guajillo chile, chopped cilantro, and salt. Bring this up to a simmer, and then reduce the heat to low. Slowly simmer for 45 minutes. Once cooked, purée the mixture in a blender or food processor until smooth.Season to taste with kosher salt and freshly ground black pepper. This is your ranchero sauce.Recommendation: add a little lime juice if the sauce needs some acidity.
  • PREPARING THE HUEVOS RANCHEROS: Heat 1 tablespoon of grapeseed oil in a medium size, heavy skillet over medium heat. Heat until hot but not smoking. Place 2 tortillas in the skillet, and cook for 30 seconds, then flip over with tongs and cook for an additional 30 seconds.Place the cooked tortillas on paper towels to drain off the oil. Cook the remaining tortillas the same way, adding 1 tablespoon of grapeseed oil to skillet for each batch of tortillas. In a small pot, warm the mashed black beans with a 1/4 cup of the ranchero sauce. Season to taste with kosher salt. Heat a medium size sauté pan to medium-high heat. Add two tablespoons of grapeseed oil, and let it get warm. Add the Fullblood Wagyu beef chorizo in small pieces to the pan. Once all of the chorizo has been added, break it up with a wooden spoon.Cook the chorizo for 10 minutes, while continuing to break it up as you cook. Once the Fullblood Wagyu chorizo is cooked, reserve and keep it warm.Heat 1 teaspoon butter oil in a small, nonstick skillet over medium-high heat until melted. Crack 2 eggs into a small bowl, and then carefully transfer the eggs to the nonstick skillet. Cook the eggs for 1-2 minutes on each side for runny yolks (or to desired doneness). Transfer the eggs to a plate and keep warm and covered.Cook the remaining 10 eggs in the same way. Season the eggs with salt and pepper
  • FINAL STEPS: Place two cooked tortillas on a plate. Top with 1/4 cup of the mashed black beans (spread on the tortillas with a knife). Drizzle some ranchero sauce on top of the beans.Add some salsa fresca and crumbled queso fresco. Top with two eggs and some sliced avocado, and add more crumbled queso fresco. Drizzle with additional ranchero sauce, and finish by adding the cooked Fullblood Wagyu beef chorizo. Garnish with fresh cilantro.Serve warm, and enjoy!

2 cups frozen diced potatoes
1 onion, chopped
8 eggs
8 flour tortillas
8 ounces cheese, shredded (cheddar or jack)
salsa, to taste

Steps:

  • Remove the chorizo from the casing, break up and fry until crumbly. Remove with a slotted spoon, and set aside. Drain all of the grease except two tablespoons. Add the onions and potatos and fry until the onions are soft and the potatoes are slighty browned. add the chorizo back in the skillet along with the eggs and scramble until the eggs are set. Serve with tortillas and top with cheese and salsa.
