1 (16 ounce) package fettuccine noodles
6 tablespoons butter
⅓ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook pasta over medium heat until tender yet firm to the bite, 8 to 10 minutes. Drain and return pasta to pot.
  • Mix butter, Parmesan cheese, salt, and pepper into pasta until evenly combined.

These noodles are called spatzle in Germany. Serve them instead of rice or potatoes. Great with pot roast, or anything that calls for noodles.

1 1/2 c all purpose flour sifted
1/4 tsp ground nutmeg
1/3 c 2% milk
1/4 c cold water
1 large egg
1 Tbsp butter, unsalted
1/8 tsp black pepper

Steps:

  • 1. In a mixing bowl, combine the flour and nutmeg, In a measuring cup, whisk together the, milk, water, and egg add to the flour and stir with a wooden spoon to form a soft dough.
  • 2. In a large heavy saucepan, bring 3 quarts water to a boil over high heat. Working quickly with your hands, press the dough, about 3 tablespoons at a time, through a large-holed colander or coarse grater directly into the boiling water.
  • 3. Cook, stirring often for 6 to 8 minutes or until the noodles are firm and no raw flour taste remains. Drain well.
  • 4. Transfer the noodles to a heated platter. Add the butter, and pepper, and toss well. Makes 6 servings
  • 5. GREEN GERMAN NOODLES: Add 2 tablespoons finely minced parsley, basil, tarragon, or chives to butter and mix well.

HOT GERMAN BUTTERED NOODLES



Hot German Buttered Noodles image

If you have ever been to the Bavarian inn in Frankenmuth MI this what they use on top of their hot buttered noodles (crushed Ritz buttery crackers). I can taste them just writing this. Yum Yum. I use Maggi brand chicken bullion cubes in the box of eight. You can usually find them in the Mexican section of your super market. They are extra large, really soft and dissolve easily. Do not add salt to this recipe, the bullion is loaded with it and most people use salted butter so you should be covered there. Use more butter if you like, 6 ozs seems just right for me. Enjoy

1/2 gallon water
2 chicken bouillon cubes
8 ounces extra wide egg noodles
1/2 cup water
6 ounces butter
1 teaspoon parsley
6 Ritz crackers, crushed

Steps:

  • Add 1 ½ bullion cubes to ½ gallon water in a medium pot, bring to a boil. Add noodles and set timer for 1 min longer than the longest time listed on the package, stir a couple of times while cooking.
  • While noodles are boiling add 1/2 cup water, 1/2 chicken bullion cube and butter to glass measuring cup. Microwave for 45 seconds on high, Stir. If the butter is not melted all the way microwave again for 30 seconds and mix well until bullion is dissolved.
  • When noodles are done drain water from pot but do not rinse, add butter mixture and parsley. Mix well until most liquid is absorbed, about a minute.
  • Serve immediately with crushed Ritz crackers on top.

SUPER BUTTERED NOODLES

2 chicken bouillon cubes
1 pound egg noodles
3 tablespoons butter, softened
1 tablespoon sour cream
Chopped fresh parsley, for garnish
Kosher salt and freshly ground black pepper

Steps:

  • In a large pot filled with boiling water, dissolve the bouillon cubes and cook the noodles according to package directions. Drain the noodles in a colander and then nestle the colander into the pot so some of the pasta water goes into the pot as the pasta continues to drain. Remove the colander and stir the butter and sour cream into the pot until the butter melts. Add the parsley and the noodles. Season with salt and pepper. Toss to combine well. Pour into a serving bowl and serve.

1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
2 quarts water
CHEESE SAUCE:
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1-1/2 cups whole milk
8 ounces Swiss cheese, diced
2 large eggs, well beaten

Steps:

  • In a small bowl, combine flour and salt. Make a well in center; add eggs. Stir together, forming a dough. , Turn dough onto a floured surface; knead 5-6 minutes. Divide dough in half. Roll each portion into a 12x9-in. rectangle. Dust both sides of dough with flour; roll up, jelly-roll style. Cut into 1/4-in. slices. Unroll noodles on paper towels; let dry for up to 2 hours., Preheat oven to 350°. In a Dutch oven, bring water to a rapid boil.
