JIMMY FALLON'S LATE NIGHT SNACK ICE CREAM CAKE
Jimmy Fallon's signature potato chip-flecked ice cream, Ben & Jerry's Late Night Snack, plays a starring role in this frozen treat, which includes more crunchy chips and luscious fudge and caramel sauces.

- Wrap the bottom of a 9-inch round springform pan with two layers of plastic wrap.
- Place 6 wafer cookies in an even layer in bottom of prepared pan. Using a serrated knife, cut two of the containers of ice cream crosswise, each into 4 equal pieces. Remove ice cream pieces from container; discard container. Place ice cream pieces on top of cookies in pan. Place a large piece of plastic wrap over ice cream and gently press to fit into pan; remove plastic and spread with an offset spatula to make even. Drizzle with caramel sauce and top with 6 more wafer cookies; transfer to freezer and freeze until firm, about 2 hours.
- Remove springform pan from freezer. Using a serrated knife, cut remaining two of the containers of ice cream crosswise, each into 4 equal pieces. Remove ice cream pieces from container; discard container. Place ice cream pieces on top of cookies in pan. Place a large piece of plastic wrap over ice cream and gently press to fit into pan; remove plastic and spread with an offset spatula to make even. Drizzle with fudge sauce, spreading gently to make even.
- Top cake with potato chips; cover with plastic wrap and transfer to freezer until firm, at least 4 hours and up to overnight. To serve, unmold cake, using a kitchen torch if necessary to release sides. To slice, use a serrated knife that has been dipped in hot water and wiped dry with a clean kitchen towel.
HOT FUDGE SAUCE
This is real soda-fountain hot-fudge sauce. It will harden on the ice cream to a thick, chewy consistency. Use Dutch-process cocoa only.

- Cook the cream, butter, and sugars in a heavy-bottomed pot over medium heat until sugars are dissolved, about 5 minutes.
- Lower the heat. Whisk in salt and cocoa powder and keep whisking until smooth. If any lumps remain, strain them out. Serve immediately, or refrigerate and then microwave to reheat.

- Combine the sugar and cocoa powder in the top of a double boiler set over briskly simmering water, and whisk to combine. Add the heavy cream and corn syrup, and whisk until smooth. Cook, whisking constantly, until the mixture is hot, thick, and creamy, 3 to 5 minutes. Add the chocolate, butter, vanilla, and salt, and stir to combine. Cook, stirring occasionally, until the chocolate and butter are melted and the sauce is smooth, 2 to 3 minutes. Keep warm until ready to serve. Store it in a nonreactive airtight container, refrigerated.

"A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

- In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
- Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

- In a medium saucepan, mix together sugar, corn syrup, and 1/4 cup water until sugar is moistened. Place over medium-high heat and bring to a boil, brushing down sides of pan with a pastry brush that has been dipped in water, until deep amber in color.
- Gently swirl saucepan to ensure sugar mixture is well combined. Remove from heat and carefully add heavy cream; mixture will bubble. Stir in creme fraiche and salt. Transfer sauce to a glass container and let cool at room temperature until thickened, 1 to 2 hours.
FUDGE FROSTING/ HOT FUDGE SAUCE
Originally the recipe was used as frosting for my grandma's chocolate mayonnaise cake, but also works well as a hot fudge sauce for ice cream. - Bring cream and butter to a boil in a medium saucepan over medium-low heat. Add sugars and corn syrup, and heat, stirring, until sugars dissolve. Whisk in cocoa powder and 1/2 teaspoon salt. Add chocolate, and stir until melted. Stir in vanilla. Use immediately, or keep warm in a double boiler or a heatproof bowl set over a pan of simmering water. Serve hot fudge over ice cream.
