GRILLED TRIPLE-DECKER HOT DOG SANDWICH

6 jumbo hot dogs, butterflied
Unsalted butter, melted, for brushing
6 hoagie rolls (preferably poppy seed), halved lengthwise
Nonstick cooking spray
1/3 pound yellow Cheddar, sliced
1/3 pound provolone, sliced
1/3 pound genoa salami, thinly sliced
1/4 cup yellow mustard
1/2 head iceberg lettuce, thinly sliced
2 beefsteak tomatoes, sliced 1/4-inch-thick
Celery salt, for serving

Steps:

  • Heat grill to 450 degrees F.
  • Grill the hot dogs until nice and charred on both sides, 3 to 4 minutes per side. Butter the cut sides of the hoagie roll halves and grill, cut side-down, until charred, 1 to 2 minutes.
  • Using a skewer or the tip of a small paring knife, poke about 10 holes in the bottom of a TK pan. Spray the entire pan with nonstick cooking spray (this is an important step). Now, layer in this order: one-third each of the charred hot dogs, Cheddar, provolone and salami. Repeat the layers 2 more times, making sure to finish with a layer of salami. Make sure that every layer is a snug fit, like you would a lasagna.
  • Put the pan on the grill and close the lid. Grill until the cheese has melted, 8 to 10 minutes. Remove from the grill and let rest for about 5 minutes. Run a paring knife around the edge of the pan to loosen the loaf. Turn the pan out onto a cutting board, unveiling the hot dog loaf. Slice the loaf crosswise into 6 pieces, just as you would a meatloaf. To build your sandwich: start with your hot dog loaf on the bottom bun, then top with mustard, lettuce, tomato and a sprinkling of celery salt. Finish with the top bun.

2 hot dogs
4 slices bread
2 slices American cheese
ketchup, to taste
other condiments, to taste

Steps:

  • Prepare hot dogs according to package directions.
  • Meanwhile, toast the bread in the toaster, or if you are grilling your hot dogs, put the bread on the grill for a minute or two on each side.
  • Spread one piece of bread with ketchup.
  • Place the cheese slice on a second piece of bread.
  • When the hot dogs are ready, slice them down the center lengthwise, and then again horizontally. You will then have four pieces that should fit onto the bread next to one another.
  • Place the hot dog on the bread with cheese.
  • Add any other condiments you'd like at this point (I know we like it simple with just the cheese and ketchup!).
  • Top with the second slice of bread.

This is more like the kind of bun you'd get with a gourmet hamburger in a restaurant. If you are looking for one like grocery store buns, light and fluffy, these aren't what you are looking for. (And yes, it really does call for 1 cup of oil)

6 cups flour
1 tablespoon salt
1/4 cup sugar
2 cups water (warm)
1 tablespoon yeast
2 eggs, well beaten
1 cup oil

Steps:

  • Dissolve yeast in water with a pinch of sugar.
  • Mix in with other ingredients.
  • Knead for 10 minutes on a floured surface.
  • Let rise until doubled in bulk (about 45 minutes).
  • Punch down and let rise again.
  • Punch down and form into bun shapes (hamburger or hot dog).
  • Make them on the small side as they do raise a little more when you bake them.
  • Let rise until double.
  • Bake at 375 degrees for 20 minutes.
  • Let cool until just warm to the touch; place in a sealed bag to soften crust.
  • Makes 16-20 hamburger rolls.
  • NOTE: I usually cut this in half.
  • Double wrap and freeze any remaining ones.

Now this recipe happens to be my favorite, or "my way," but there are hundreds of combinations - toppings galore ... What not to add? I happen to love my hot dogs with onions, sauerkraut and pickles and of course yellow mustard, so this was my version, but you can make anything. I love fresh foods - but LOVE a good hot dog now and then. And feel free to use a turkey sausage or a turkey hot dog if you want, they work equally as well. Tomatoes, a variety of cheeses, pickles, sauerkraut, cabbage, peppers, onions, mustard, mayo, ketchup, chili, etc. An endless list. But what is different is ... bread vs bun; and grilled, and it gives a whole new meaning to the "Hot Dog." I saw a wonderful picture of a hot dog sandwich with cheese on the Photo Forum here on Zaar and it looked great, so I thought I would pass on my recipe. It originally was made as a mistake. One night, friends over and I was out of buns and chili, both I thought I had, so I used what I was on hand. My 3 friends loved them. And to this day I continue to make them this way. It is a bit different, but not difficult and very tasty!

8 hot dogs, cut lengthwise
8 slices rye bread
2 teaspoons butter (1 teaspoon to saute the onions, 1 to cook the hot dogs)
1 cup sauerkraut, drained
1/3 cup peppardew bell pepper, chopped (you can use any pepper you want, I like a bit of spice and sweet but jalapeno, cubanelle works well )
1 medium onion, cut in quarters and thin sliced
2 kosher garlic dill pickles, chopped
8 slices cheese (2 per sandwich, I like white cheddar but use your favorite)
4 tablespoons mayonnaise
4 tablespoons yellow yellow mustard
1 pinch caraway seed

Steps:

  • Mustard Mayo -- Just mix the mustard, mayonnaise and caraway seeds if you have them. If not mustard and mayonnaise is fine.
  • Topping -- In a small saute pan, add the butter, onion and peppers and saute for 4-5 minutes on medium heat until soft and tender. The last minute or two add in the sauerkraut and stir until well combined and heated through. Using a fresh vs canned sauerkraut is best, but a good canned sauerkraut will work fine. Just keep warm on the back burner.
  • Hot Dogs -- As the topping cooks, make the hot dogs. I love to grill mine. Indoor grill pan is great or even just a saute pan will work. I cut them lengthwise and just cook in a little butter. Medium heat and it doesn't take more than 3-4 minutes per side. Don't burn them, you just want them lightly golden brown is all. Remove, and set to the side.
  • Sandwich -- First piece of rye bread down and slather with the mustard mayonnaise sauce. Then top with 1 slice of cheese, 2 hot dogs cut to fit the sandwich; the sauerkraut, onion and pepper mix, then topped with the chopped pickles and 1 more slice of cheese. Finish with the top slice of bread also slathered with the mustard mayonnaise sauce.
  • Grill -- On a hot grill pan or saute pan, add the butter and bring to medium heat. Add the sandwich, and lightly weigh down using another pan - cast iron or a regular pan topped with a few canned foods to weigh it down. Use whatever you have. Cook on medium heat until golden brown, flip and cook the other side until golden brown and the cheese is gooey and beginning to melt.
  • Serve -- Cut in half and enjoy. It is an "upscale" hot dog sandwich which is just great treat. Serve with a bowl of soup or fries for an easy dinner. ENJOY!

2 tablespoons butter, softened
1 teaspoon spicy brown mustard
4 tablespoons potato salad (use your favorite recipe)
2 hot dogs, sliced lengthwise
1 hard-boiled egg, thin sliced
salt & pepper

Steps:

  • Lightly toast whole wheat bread. Spread one tablespoon butter on each slice of bread. Spread mustard on bottom slice of bread over butter.
  • Either boil or microwave the hot dogs, can be sliced lenthwise prior to cooking. Layer the hot dog slices on the bottom slice of bread.
  • Top the hot dog slices with potato salad and spread evenly.
  • Layer hard boiled egg slices on top of potato salad.
  • Season with salt & pepper to your liking. Top with other slice of bread. Cut in half on the diagonal and serve.

1 1/2 cups 35-percent cream, cold
12 ounces dark chocolate, finely chopped
1/2 cup white sugar
1 1/2 cups whole milk, cold
Hot Dog Buns, for serving, recipe follows
Raspberry "Ketchup", for serving, recipe follows
1 teaspoon active dry yeast
1 1/4 cups whole milk, at body temperature
1 teaspoon white sugar
2 teaspoon kosher salt
2 3/4 cups all-purpose flour
2 cups bread flour
1 cup water, warmed to body temperature
Oil, for greasing
1 egg, beaten
1 1/2 cups fresh raspberries
1 1/2 tablespoons white sugar
1 tablespoon lemon juice
1/4 teaspoon vanilla extract

Steps:

  • Heat 1/2 cup of the cream and 6 ounces of the chocolate in a saucepan over medium heat, stirring constantly until the chocolate melts smoothly into the cream. Remove from the heat and stir in the sugar until it melts. Let cool slightly and then add into the milk.
  • Whip the remaining cream in a separate bowl to soft peaks. Fold the whipped cream into the milk mixture until well combined.
  • Transfer to an ice cream machine and churn until the ice cream is the consistency of soft-serve, 20 minutes. In the last 2 minutes, add the remaining 6 ounces chocolate. Transfer to a clean airtight container and freeze for 2 hours.
  • Lay out long pieces of plastic wrap on the counter. Place 4 heaping tablespoons of ice cream into the center of the plastic and wrap up tightly into a dowel shape. Return to the freezer for 1 hour longer to set up firmly before serving.
  • Serve on red checker paper in the Hot Dog Buns and drizzle with Raspberry "Ketchup".
  • Add the yeast to 1/4 cup of the milk and stir in the sugar. Let sit until the yeast begins to foam.
  • Add the salt and then half of the flours, followed by the yeast mixture, half of the milk and half of the water to a stand mixer with the paddle attachment. Mix until a paste forms, and then add the remaining flours, 1 cup at a time, and the remaining milk and water until the dough begins to come together. Remove the paddle and switch to a dough hook, and then knead for 4 minutes.
  • Form the dough into a ball and then transfer to a lightly-oiled bowl, spinning the bowl around the to make sure the dough is well coated. Cover with a tea towel and allow the dough to double in size, about 2 hours.
  • Punch down the dough and form into 16 equal-size balls. Form the balls into 16 equal-size dowels and place side by side on a parchment-lined baking sheet, nearly touching. Allow the dough to double in size once again.
  • Preheat the oven to 350 degrees F.
  • Mix the egg with 1/4 teaspoon water in a bowl and brush each bun with egg wash. Bake until golden brown and fully cooked through, 20 minutes.
  • Let cool completely before serving, about 1 hour.
  • Combine the raspberries, sugar, lemon juice, vanilla and 1/4 cup water in a saucepot and boil for 5 minutes. Rub through a strainer using a ladle, and then add the pulp from the strainer back into the liquid and let cool before refrigerating until use.

1 slice bologna
1 slice Velveeta cheese
2 slices bread, wheat

Steps:

  • butterfly hotdogs lengthwise without splitting completely.
  • toast bread and let cool so the mayo doesnt melt.
  • heat a large skillet to med temperature.
  • place the hotdogs cut side down as flat as possible on hot skillet and fry until browned. (i use a spatula to hold them down in the beginning).
  • at the same time toss the bologna slice in the same skillet and fry both sides lightly.
  • flip dogs and lay flat as close together as possibe and top with bologna & cheese and let other side cook til brown.
  • spread mayo on on slice of bread and mustard on the other slice.
  • using a spatula remove and place on bread, top with other slice.
