1 cup beef suet (crisco will do, but not the same, suet is fat around the kidneys) or 1 cup lard (crisco will do, but not the same, suet is fat around the kidneys)
5 lbs hamburger, 70/30 (not lean)
1 lb hot dog, diced (really should be ground cow heart, but dogs will be ok)
24 saltine crackers or 24 soda crackers, crushed into a powder
1/2 cup ketchup
4 cups chicken stock
3 tablespoons chili powder
4 tablespoons paprika
1/3 cup yellow mustard, plochmans
2 tablespoons turmeric
2 tablespoons cumin powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon salt
1/8 teaspoon ground cloves

Steps:

  • In a large preheated pot, add lard (shortening), ground round, and cow heart (hotdogs), and simmer on medium heat until it seperates and browns. This mixture must be stirred regularly and mashed with a potato masher during process to create a kind of rough paste. Drain, but reserve the rendered fat and set aside for next step (yes, authentic Detroit style is kinda greasy).
  • In a cast iron skillet on medium-high heat, add the rendered fat. Slowly, add cracker crumbs 1 spoonful at a time, stirring contstantly to make a roux. It should be a paste consistency but still able to flow, so add additional fat (butter or shortening) or more crackers, if needed, and continue stirring until it turns a nice woody brown.
  • Add the roux to the meat pot along with chicken stock and simmer for 20 minutes at a slight boil, then add all remaining ingredients, and stir until mixed. Cover the pot and simmer for at least 3-hours (longer the better) stirring occassionally so it doesn't burn on bottom, adding water as necessary for proper consistency.
  • Take out 1/3 of the mixture and put it in a blender and puree until smooth, then pour it back into the pot. Continue simmering, uncovered, for another hour, stirring occassionally so it doesn't burn on bottom, adding water if too thick or more roux if too thin, as necessary for proper consistency.
  • When putting the sauce on your hot dog, the dogs must be grilled on a griddle or a cast iron skillet on medium low with a small amount of butter and vegetable oil. Constant turning of dogs is a must and they must never split open. You will be looking for a consistant light brown color with a darker line of brown on 2 sides. If dogs are straight they can be rolled back and forth regularily to insure even cooking with a large hamburger flipper. If curved use kitchen tongs and adjust next to the other dogs. NEVER BOIL A HOTDOG!
  • Steaming buns is the best way in a home enviorment a chinese steamer basket works well or you can wrap them in paper towells and microwave 3 at a time on high for about 20 seconds. Open bun place dog spread slightly thinned yellow mustard over dog. Cover with Coney sauce then top with onions. Additional mustard may be added, however, cheese or KETCHUP is never allowed; lets leave that to the people in ohio, ok?

1 (12 ounce) can tomato paste
½ cup sweet pickle relish
½ cup chopped onion

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. 1 lb lean ground beef
14 ounces chicken stock
4 tablespoons flour
1 tablespoon chili powder

1/8 teaspoon salt
1 tablespoon chili powder

Steps:

  • Brown and chop the ground meat in a 4 quart.
  • pan.
  • Drain off excess grease.
  • Add each of the spices, one at a time, and stir after each one.
  • After all the spices are in the mixture, it should be a pastey consistency.
  • Add the ketchup; stir in the water.
  • Bring to a boil, stirring constantly.
  • Keep the heat low and simmer for 2 hours.
  • Add the flour and water mixture.
  • This mixture will blend easily if you mix in your blender before adding to the rest of the sauce.
  • The excess sauce may be frozen.
  • This sauce is supposed to be from the famous hot dog shop in my area.

2 pkg Onion Soup Mix (1 Box)
2 c Black Coffee
1 6 oz can Tomato Paste
1 Tbsp Chili Powder
1 tsp Cumin Powder
1 tsp Allspice
1/4 c Vinegar
1 Tbsp Worcestershire Sauce
3 Tbsp Sugar

Steps:

  • 1. Brown Ground Beef in a skillet and chop up real fine into individual granules. In a separate large saucepan - mix 2 cups of black coffee with all the other ingredients and cook over medium heat until boiling. Add the Ground beef when it has finished browning, drain off fat. 1/4 cup barbecue sauce (K.C. Masterpiece, or hickory smoked)
2 tablespoons dried onion flakes

1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce
3 medium onions, chopped
1 chicken bouillon cube (Maggi cube)

1/4 cup prepared yellow mustard
1 tablespoon honey

Steps:

  • Brown and drain the ground chuck and put into a large cooking pot.
  • Add all ingredients, except for one cup of water and the bouillon cube. Bring the sauce to a slow boil over low heat.
  • Mash the bouillon cube in the cup of water and add to the sauce. (If you do not have a Maggi bouillon cube, just use 1 1/2 regular chicken bouillon cubes).
  • Allow the sauce to simmer, covered, over very low heat, stirring occasionally, for 2 hours.
  • Serve over hot dogs.
  • My personal preferences for ingredient brands are Heinz mustard and Tupelo honey but any brands will do.

16 oz or 2 (8 oz) cans crushed tomatoes
1 small can of tomato paste
3/4 c chopped green peppers
1 can(s) pimentoes

2 (15 ounce) cans diced tomatoes
1 minced garlic clove
1 1/4 ounces McCormick mild chili seasoning
1/2 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon ground cayenne pepper
3 tablespoons sugar

Steps:

  • In a large saucepan, brown the ground beef, chopping into small pieces.
  • While the beef is browning, run the 2 cans of diced tomatoes, juice and all, through processer (you can use canned crushed tomatoes, but do not use the "concentrated" crushed tomatoes).
  • When meat is browned, add the crushed tomatoes, garlic, oregano, basil, cayenne and sugar.
  • Bring to a boil and then lower heat to simmer lightly, uncovered, for about 30 minutes, stirring often.
  • This makes enough for about 36 hot dogs, more or less, depending on how heavily you load your sandwich. You can freeze half for a later use.

12 ounces good-quality sausage
2 pork hot dogs or 2 turkey hot dogs, finely ground
5 large onions, chopped
1 green bell pepper, de-seeded and chopped
3 (15 ounce) cans chicken broth
1 (12 ounce) bottle chili sauce
2 (6 ounce) cans tomato paste
1 cup good-quality ketchup
3 bay leaves
2 garlic cloves, crushed
5 tablespoons prepared mustard
3 tablespoons onion flakes (dried)
2 tablespoons dried ancho chile powder (or other)
1 tablespoon dried sweet basil leaves
1 tablespoon italian seasoning
1 tablespoon Dale's Steak Seasoning
1 tablespoon l&p Worcestershire sauce
2 teaspoons cider vinegar (yellow)
1 teaspoon black pepper (canned)
1 teaspoon garlic powder

Steps:

  • Using about three cups of water in a small pan, boil the sausage for a few minutes until it is broken up. Drain, using a colander, and put the sausage and the 1 Tablespoon of Italian Seasoning into a food processor and pulse it until it is of a fine consistency.
  • Combine all ingredients, including the sausage, into a large cooking pot on medium heat and bring to a boil. (If you can't find Dale's Steak Seasoning, use 2 teaspoons of soy and one additional teaspoon of Worcestershire sauce). Once it boils, reduce the heat to low and allow it to simmer, covered, for two hours, stirring often.
  • At the end of the 2 hours, remove the bay leaves and any pieces of garlic you can find, and serve over hot dogs or footers with mustard and finely diced onions.

23 oz. tomato juice
1/2 cup chile sauce (I use the Heinz brand)
1 Tablespoon Chili powder
1-2 Tablespoon brown sugar
*optional* sprinkle of corn meal
*optional* 2 Tablespoons BBQ sauce

Steps:

  • In a large skillet, cook (scramble) the ground chuck and onions together. Drain the grease off. Add the tomato juice, chile sauce, chili powder and brown sugar (and optional BBQ sauce if you want it) to the cooked meat in the skillet. Simmer the chili until it is as thick as you want it. You may add the sprinkle of corn meal to help thicken up the chili if desired. Spoon over your hot dogs and remember the days of sitting at DQ enjoying a meal.
  • ** You may also cook the beef and onions on the stove top and when you want to add the other ingredients add it all to a crock pot and let it cook 1-2 hours.
