Another great dish - pasta, dressing and chips all from the New Mexican CHILE site. Don't let the number of steps throw you, it is faster than it looks!!! And worth it!

4 cups cooked pasta
1 large very ripe tomatoes, chopped
1 large avocado, chopped
2 large green chilies, roasted, peeled & chopped (about 1/2 cup)
1/2 cup diced sharp cheddar cheese
1/4 cup red onion, finely chopped
1 large garlic clove
2 large green chilies, roasted, peeled, & chopped (about 1/2 cup)
1/4 cup olive oil
2 tablespoons cider vinegar
2 tablespoons lime juice
1 teaspoon coarse salt
black pepper
1 pinch sugar
4 flour tortillas
2 tablespoons lime juice
1 teaspoon salt
2 teaspoons red chili powder
salad greens, if desired to line plates (optional)

Steps:

  • Place the salad ingredients in a large bowl. Prepare the Green Chile Vinaigrette and pour over the salad. Fold gently until dressing is well distributed. Line plates with assorted greens and place pasta salad on top.
  • **For Vinaigrette:.
  • Leave the skin on the garlic clove. Roast in a dry hot skillet, turning several times until softened and brown in spots, about 10 minutes. Put all ingredients in a blender or food processor and process until smooth and emulsified. Leftovers will keep 4-5 days in refrigerator.
  • ***For Chile Lime Chips:.
  • Heat oven to 400 deg. Combine salt & chile powder, mix well. Brush one side of each tortilla with lime juice and sprinkle with salt mixture. Cut into 6 or 8 triangles and place chile side up in a single layer on baking sheets. Bake for 7-8 minute or until browned. Cool and store in a ziploc bag until ready to serve with salads, dips, or sandwiches.

1/4 cup vegetable oil
1/4 cup white vinegar
1 1/2 tsps McCormick® Garlic Powder
1 1/2 tsps salt

1 tsp sugar
1/2 tsp McCormick® Onion Powder

Steps:

  • Cook pasta as directed on package. Rinse under cold water; drain well.

1 1/2 pounds tricolor spiral pasta
Kosher salt
1/2 cup pine nuts
2 cups oil-packed sun-dried tomatoes, drained and roughly chopped
1 cup pitted Kalamata olives
8 ounces sharp white Cheddar, diced into 1-inch pieces
One 15-ounce can chickpeas, drained and rinsed
1 English cucumber, sliced
1 1/2 cups Basil Vinaigrette, recipe follows
1/3 cup Champagne vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
1 shallot, roughly chopped
4 cups fresh basil leaves, roughly chopped
Kosher salt and freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the pasta in a large pot of salted boiling water according to package directions. Drain and rinse with cold water. Set aside.
  • Spread the pine nuts in an even layer on a small baking sheet. Transfer to the oven, and toast until golden and fragrant, about 10 minutes. Set aside to cool slightly.
  • In a large bowl, combine the drained pasta, toasted pine nuts, sun-dried tomatoes olives, Cheddar, chickpeas, cucumbers, and basil vinaigrette. Toss well. Serve cold.
  • Add the vinegar, honey, mustard, shallots, basil and some salt and pepper to a blender. Blend until well combined. With the motor running, drizzle in the olive oil; blend until fully combined.

I know that pasta salads have had a bad rap, but I really like them. This one is delicious with fantastic lemon flavor, tuna and crisp veggies. Enjoy! (This recipe uses canned tune. I haven't tried using fresh tuna yet, but I will next time. I think maybe I'll grill it and slice it up, still pink... yum!) Derived from BBC's "Good Food" magazine (March 2007) with some variations.

300 g penne
1 cup frozen peas
4 tablespoons mayonnaise
1/2 lemon, juice of
200 g tuna in olive oil
2 red peppers, seeded, sliced
1 red onion, thinly sliced
rocket
1 carrot, thinly sliced
parmesan cheese

Steps:

  • Cook the pasta according to directions.
  • Cook the peas according to directions.
  • In another bowl, mix the mayonnaise, lemon juice, and 1 T of the tuna oil and mix.
  • Drain the rest of the oil from the tuna.
  • Mix the tuna with the mayo mixture.
  • Drain the pasta and toss with the mayo mixture, peppers, onion, and carrot.
  • Sprinkle the rocket and Parmesan over the top just before serving.

1/2 lb pasta (medium shells, rotini, fusili...)
2 -3 cups broccoli, flowers and stemssliced (or broccoli and cauliflower combination)
1/2 cup sliced celery
1 cup sliced mushrooms
1/2 cup matchstick-cut carrot
1 cup coarsely-sliced onion
1 cup sliced green pepper, sliced
1/2 cup peeled seeded sliced cucumber
1/2 cup seeded sliced tomatoes
1/4 cup black olives
3 -4 tablespoons oil
3 -4 tablespoons balsamic vinegar or 3 -4 tablespoons red wine vinegar
salt
fresh ground black pepper
herbs (basil or oregano)

Steps:

  • Cook pasta, toss with 1 teaspoon vegetable oil.
  • In a steamer, steam broccoli, celery,mushrooms, carrots, onions, and peppers for 3 to 5 minutes until tender-crisp.
  • (Steam the vegetables separately for more control over the"crunch.") Toss all ingredients together gently; add salt and pepper to taste.
  • Herbs that go well are basil and oregano.
  • Refrigerate 1 hour and serve.
  • Serving size is 1 cup.
  • Note-- I did not steam the veggies.

My favorite pasta salad dressing was always the packet of PSV from McCormick. I haven't been able to find it in a couple of years and finally went to the McCormick site only to find out that it's not available any longer. But they did post a recipe!!! I haven't tried it yet but wanted to post it for anyone else who might be looking for the same. Note: prep time does not include the refrigeration time that is required. I like to use tri-colored pasta and sometimes I throw in some cubes of cheddar cheese, too.
