4 cups chocolate almond milk
6 ounces bittersweet chocolate, chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/8 teaspoon cayenne
1/8 teaspoon sea salt
Whipped cream, optional

Steps:

  • Bring the almond milk to a simmer in a large saucepan over medium-low heat (do not boil). Whisk in the chopped chocolate, cinnamon, vanilla, cayenne and salt; whisk until the chocolate has melted. Remove from the heat and whisk vigorously to form foam. Gently pour the hot chocolate into cups. Top with whipped cream if using.

Gently seasoned with a touch of chile powder, cinnamon and vanilla, this fragrant hot chocolate recipe is not too sweet and very complex. Using both cocoa powder and chocolate gives the roundest, deepest chocolate flavor while a mix of whole milk and cream makes it wonderfully rich and thick.

3 ounces bittersweet chocolate, chopped
2 tablespoons unsweetened cocoa powder
2 tablespoons sugar, or to taste
3/8 teaspoon ancho chile powder, or to taste
1 3/4 cups whole milk
1/4 cup heavy cream
1 cinnamon stick
1 teaspoon vanilla extract
Marshmallows or whipped cream, optional

Steps:

  • In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
  • Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

2 cups milk
2 cups half-and-half
1 cup good semisweet chocolate chips
Splash vanilla extract
1 teaspoon sugar, optional
Whipped cream, to serve

Steps:

  • To make the basic hot chocolate, combine the milk with the half-and-half in a small saucepan. Warm over medium-low heat, and then stir in the chocolate chips. Stir until melted (though there will still be lovely particles of chocolate throughout). If it's too chocolaty for you, splash in a little more milk. Add a splash of vanilla extract. If it's not quite sweet enough for you, add 1 teaspoon or so of sugar. Serve in mugs with whipped cream.

2 (12 fluid ounce) cans evaporated milk, divided
1 cup water
1 (10 ounce) package semisweet chocolate chunks (Nestle Chocolatier dark chocolate chunks 53% Cacao (1 3/4 cups)
1 1/4 teaspoons vanilla extract, divided
1/2 teaspoon ground cinnamon, divided
1/8 teaspoon ground cinnamon, divided
1/8 teaspoon ground cayenne pepper, divided (optional)

Steps:

  • Pour 1/2 cup evaporated milk into medium mixer bowl; place beaters into mixture. Freeze for about 30 minutes or until ice crystals form around edge of bowl.
  • Heat remaining evaporated milk, water, chunks, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon and a pinch of cayenne pepper in medium saucepan over low heat, stirring frequently, until melted.
  • Do not boil.
  • Set aside.
  • Remove chilled evaporated milk from freezer. Beat on high speed for 1 minute or until very frothy.
  • Add remaining vanilla extract, remaining cinnamon and a pinch of cayenne pepper. Continue beating for 3 to 4 minutes or until mixture forms soft peaks.
  • Pour hot chocolate into eight 4-ounce demitasse cups and immediately dollop with foam topping.
