2 teaspoons vegetable oil
2 garlic cloves, crushed
2 cups unsalted dry-roasted peanuts
2 teaspoons chili powder
1/2 teaspoon salt

Steps:

  • Heat oil in 8-inch skillet over medium heat. Cook garlic in oil, stirring occasionally, until garlic is golden brown; remove garlic and discard.
  • Stir peanuts and chili powder into skillet. Cook over medium heat about 2 minutes, stirring occasionally, until peanuts are warm; drain. Sprinkle with salt. Cool completely. Store in tightly covered container at room temperature up to 1 month.

1/4 cup freshly squeezed lime juice (2 or 3 large limes)
Freshly grated zest of one lime
2 tablespoons chili powder
1 tablespoon kosher salt
2 teaspoons sugar
3/4 teaspoon cayenne pepper
4 cups shelled unsalted peanuts

Steps:

  • Preheat oven to 250oF. Whisk lime juice, lime zest, chili powder, salt, sugar, and cayenne pepper together in large bowl. Add peanuts and stir until evenly coated. Scrape nuts onto large, rimmed baking sheet. Bake until nuts are fragrant, dry, and beginning to darken, about 30 minutes.

1 tablespoon peanut oil or canola oil
2-1/2 pounds lean ground beef (90% lean)
1 large green pepper, chopped
1 large red onion, chopped
1 large carrot, peeled and chopped
2 garlic cloves, minced
2 cans (15 ounces each) tomato sauce
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, undrained
2 cans (4 ounces each) chopped green chiles
1/2 cup creamy peanut butter
1 to 2 tablespoons ground ancho chile pepper
1 teaspoon kosher salt
1 teaspoon smoked paprika
Optional: Shredded smoked cheddar cheese and chopped peanuts

Steps:

  • In a large skillet, heat oil over medium-high heat; add beef and cook in batches until no longer pink, 7-10 minutes, breaking into crumbles. Remove with a slotted spoon; drain. Add green pepper, onion and carrot; cook and stir until slightly browned, about 2 minutes. Add garlic; cook 1 minute longer. Transfer meat, vegetables and drippings to a 5- or 6-qt. slow cooker., Stir in the next 7 ingredients until combined. Cook, covered, on low about 4 hours, until vegetables are tender. If desired, sprinkle servings with shredded cheese and peanuts.

2 lbs salted peanuts

Steps:

  • Preheat oven to 350-degrees F.
  • Heat oil in a large skillet over medium heat. Add garlic and pepper flakes and cook one minute. Add peanuts and stir to combine.
  • Transfer peanuts to baking sheet.
  • Bake for 10 minutes (or until brown). Remove from oven and sprinkle with chili powder and toss.

1 cup roasted, unsalted peanuts
3 tablespoons sugar
1 teaspoon cayenne pepper
1 teaspoon coarse salt or kosher salt
1 lime, quartered

Steps:

  • In a nonstick pan over high heat, toast peanuts for 2 to 3 minutes, shaking pan or stirring often until nuts begin to smell toasty. Pour into a bowl and set aside.
  • Decrease heat under pan to medium and sprinkle sugar, cayenne pepper and salt evenly into it. Melt mixture slowly, stirring a bit with a heat-proof silicone spatula. When sugar has melted, add peanuts to pan and coat well. Mixture might clump a bit.
  • Pour nuts onto parchment paper. As soon as mixture is cool enough to handle, break apart any clumps of peanuts. Serve with wedges of lime. Squeeze lime over nuts right before eating.

1 (14.5-ounce) can diced tomatoes
1/2 cup water
3 cloves garlic, minced
2 bay leaves
1/2 teaspoon cayenne pepper, or to taste
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 (15-ounce) can black beans, rinsed and drained
1 (15- ounce) can kidney beans, rinsed and drained
1/3 cup creamy peanut butter
Kosher salt and freshly ground black pepper
1 cup shredded Cheddar, optional
2 cups tortilla chips, optional

Steps:

  • Place the diced tomatoes, water, garlic, and bay leaves into a large saucepan, and bring to a simmer over high heat. Reduce heat to medium-low, and season with the cayenne pepper, chili powder, garlic powder, and Italian seasoning. Cover, and simmer 15 minutes. After 15 minutes, pour in the black beans and kidney beans; return to a simmer, and cook for 5 minutes. Stir in the peanut butter until dissolved, then remove and discard the bay leaves, and season the chili with salt and pepper, to taste. Remove to a serving bowl and serve sprinkled with Cheddar, if desired, and tortilla chips alongside.

1/4 cup sugar
1 tablespoon water
1 tablespoon kosher salt
2 teaspoons cumin
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon ancho chili powder
2 cups high-quality dry roasted unsalted peanuts
5 dried chiles, optional garnish

Steps:

  • Preheat oven to 250 degrees F.
  • Whisk egg white until foamy in a medium bowl. Whisk in sugar, water, salt, cumin, cayenne, garlic and ancho powders. Toss nuts in mixture until well coated.
  • Spray a sheet pan with nonstick cooking spray or line with parchment. Spread nuts out on the prepared pan in a single layer. Cook for 45 minutes until slightly golden, turning nuts with a spatula every 15 minutes so they toast evenly and don't stick.
  • Set the nuts aside, stirring periodically as they cool. When completely cool, transfer to serving bowl and garnish with dried red chiles if desired.
