Hot Cheese Olives image

This is classic 1950s cocktail fare that, unlike the savory gelées and boiled ham canapés that are best forgotten, we still want to eat today. Just wrap cocktail olives in a simple Cheddar dough and bake until golden. Martini optional.

Number Of Ingredients 8

8 tablespoons (1 stick) unsalted butter, softened
8 ounces (2 cups) grated extra-sharp Cheddar
1 1/2 cups unsifted all-purpose flour
1/8 teaspoon kosher salt
1/4 teaspoon ground cayenne
Dash of Worcestershire sauce
1 large egg
50 small pimento-stuffed cocktail olives, drained and patted dry

Steps:

  • Heat the oven to 350 degrees. Beat the butter until creamy in a large mixing bowl, add the cheese and mix well. Stir in the flour, salt, cayenne and the Worcestershire and mix until smooth. Beat the egg with 2 tablespoons cold water. Add to the dough and mix just until incorporated. Refrigerate for 30 minutes.
  • Remove the dough and flatten out a piece about the size of a walnut into a thin round. Place an olive on top and shape it around the olive, pinching to repair any breaks. Place it on an ungreased cookie sheet. Repeat with the remaining dough and olives. Bake until the dough sets, about 15 minutes. Serve hot.

2 cups shredded part-skim mozzarella cheese
2 cups shredded cheddar cheese
2 cups mayonnaise
1 medium onion, minced
1 can (4 to 4-1/2 ounces) chopped green chiles, drained
1/2 cup sliced ripe olives
1-1/2 ounces sliced pepperoni
Assorted crackers and fresh vegetables

Steps:

  • Preheat oven to 325°. Combine the first 5 ingredients; spread into a greased shallow baking dish or pie plate. Top with olives and pepperoni. Bake 25 minutes or until bubbly. Serve with assorted crackers and fresh vegetables.

8 oz. full fat sour cream, room temperature
8 oz. full fat cream cheese, room temperature
2 cloves garlic, minced
8 oz. shredded mozzarella, divided
2 oz. shredded Parmesan, divided
1 (6 oz.) can pitted medium black olives, halved or sliced
1 (6 oz.) can pitted green olives, halved or sliced
Kosher salt
fresh cracked pepper

Steps:

  • Heat oven to 350 degrees.
  • Add sour cream, cream cheese, garlic, half the mozzarella, half the Parmesan and a few hearty pinches of salt along with a pinch of pepper. Mix until well combined.
  • Gently fold in sliced olives.
  • Transfer to a greased 9x9 baking dish or medium sized cast iron skillet. Spread in an even layer and top with remaining mozzarella and Parmesan.
  • Bake for 25-30 minutes. Then broil for 1-2 minutes or until the mozzarella on top starts to get dark golden brown.
  • Garnish with fresh chopped parsley and serve with sliced French baguette. Enjoy!

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.
