BRUSCHETTA WITH HOT CHERRY TOMATOES



Bruschetta with Hot Cherry Tomatoes image

3 tablespoons extra-virgin olive oil
3 to 4 cloves garlic, chopped
2 pints cherry tomatoes
1 teaspoon crushed red pepper flakes
Salt
A handful flat-leaf parsley, chopped
A few basil leaves, torn
1 loaf semolina bread, sliced

Steps:

  • Heat about 2 tablespoons extra-virgin olive oil in a medium skillet over medium heat. Stir in the garlic, saute for 2 minutes, then add the tomatoes and hot pepper flakes. Season with salt, to taste, and toss to coat in the oil. Cover the pan, raise heat a bit and cook until the tomatoes burst, about for 10 to 12 minutes. Remove the lid, squish any whole tomatoes with a wooden spoon and let the tomatoes thicken, about 1 minute. Stir in the parsley, adjust the seasoning and remove from the heat.
  • Heat the broiler and char the bread on both sides. Arrange the bread on a platter and top with the hot tomatoes. Garnish with torn basil leaves and drizzle with the remaining 1 tablespoon of extra-virgin olive oil before serving.

HOT DOG BUN BRUSCHETTA



Hot Dog Bun Bruschetta image

Number Of Ingredients 10

3 hot dog buns, split and halves separated for 6 pieces
Olive oil, for drizzling
Salt and freshly ground black pepper
Two 5.2-ounce wheels herbed soft cheese, such as Boursin
5 blanched and peeled Roma tomatoes
Julienne of fresh basil
3 cups shredded mozzarella
1/2 of a random small salami, finely julienned and sauteed till kinda crispy
3/4 cup grated Parmesan
Pinch red pepper flakes

Steps:

  • Preheat oven to 375 degrees F.
  • Rub the hot dog bun halves with olive oil and sprinkle with salt and pepper. Toast until golden in the oven.
  • Smear herbed cheese on each piece of bread. Slice tomatoes thin, and layer on 3 to 4 slices per bread. Sprinkle on basil, mozzarella, salami, Parmesan and red pepper flakes.
  • Bake until the cheese is melted and slightly golden, about 8 minutes.

A small round of brie is softened in the microwave and topped with a flavorful bruschetta mixture. This is excellent for cocktail parties, or any day.

2 roma (plum) tomatoes, chopped
1 small onion, chopped
1 clove garlic, peeled and minced
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh parsley
ΒΌ cup olive oil
1 (8 ounce) wheel Brie cheese

Steps:

  • In a small bowl, mix roma (plum) tomatoes, onion, garlic, basil, parsley and olive oil. Cover and chill in the refrigerator at least 1 hour.
  • Remove top layer of rind from brie. Place brie in a small microwave safe serving dish. Microwave on high 1 minute, or until the cheese begins to soften. Spoon roma tomato mixture over the cheese. Microwave on high 1 minute, or until slightly melted. Serve immediately with Paris toasts or other dried breads.

This can be made into any amount needed for small or large guest numbers.

2 stick salted butter
1/4-1/3 c olive oil
2 Tbsp minced garlic
3 loafs of french baguettet bread
1 to 2 rounds of soft mozzarella cheese
1 bunch basil, fresh
6 each roma tomatoes
pinch salt and pepper to taste

Steps:

  • 1. Bruschetta 2 sticks of melted, salted butter 1/4 to 1/3 cup of olive oil 1 Tbs of minced garlic 3 loafs of baguette bread Heat these three ingredients in a sauce pan to melt better. This helps infuse the flavors. Slice bread to desired thickness, butter with above ingredients. Brush bread with butter mixture and heat at approximately 375 degree oven toasting for about 4 to 6 minutes. Remove from oven and let cool down if making ahead. (can be stored in plastic bags for next day use) Bruschetta Topping: 1 to 2 soft mozzarella cheese rounds (using approx. 1 1/2), diced 1 bunch of basil (using approx. 1/2) diced 6 roma tomatoes, diced 1 Tbs. of garlic Pinch of salt/pepper to taste If you have any of the butter/garlic mixture left add to the topping, mixing well. This should make a large amount, so adjust for guest numbers. Combining mixture, placing about 1 tsp. or more on each bread round, fill tray for oven cooking for about 5 to 6 minutes until cheese has melted a bit. Serve immediately Valerie Fields
