SMOKED BOLOGNA

3 pounds whole bologna chub
1/4 cup yellow mustard
1/4 cup Sweet BBQ Rub (link in recipe notes)
1/2 cup BBQ Sauce (link in recipe notes)

Steps:

  • Preheat your smoker to 225 degrees F. I like a good hickory or apple wood for smoke.
  • Using the tip of a sharp knife, score the bologna about 1/8th of an inch thick in a diamond pattern on all sides of the bologna.
  • Slather the bologna chub with the yellow mustard and then sprinkle all around with the sweet rub, opening the slits slightly with your fingers to get that seasoning into the cuts you just made.
  • Smoke with the lid closed for at least 3 hours, but up to 4 hours. Bologna is pre-cooked, so you're just going to the amount of color and smoke flavor on the outside of your bologna that you like.
  • During the last 30 minutes, brush on all sides with the BBQ sauce.
  • Slice warm into small cubes and serve as an appetizer or chill completely and slice as thin or thick as you like for smoked bologna sandwiches.

2 tablespoons butter
2 tablespoons olive oil, plus more for serving
1 carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 onion, finely chopped
Kosher salt
12 ounces ground beef chuck
12 ounces ground lamb
1/4 cup tomato paste
1 teaspoon Calabrian chili paste
1/2 teaspoon red pepper flakes
1 clove garlic, chopped
1/2 cup whole milk
1 cup dry red wine, such as Chianti
1 bay leaf
One 3-inch Parmesan rind plus 1/3 cup freshly grated Parmesan
One 28-ounce can whole San Marzano tomatoes, crushed by hand
Creamy Polenta with Spinach, recipe follows, for serving
2 cups low-sodium chicken broth
2 tablespoons olive oil
2 cloves garlic, smashed and peeled
3/4 cup quick-cook polenta
Kosher salt
1 cup freshly grated Parmesan, plus more for serving
1/2 cup (4 ounces) mascarpone cheese
1/2 cup freshly grated pecorino cheese
3 tablespoons unsalted butter
5 ounces baby spinach, roughly chopped

Steps:

  • Heat a medium Dutch oven over medium heat. Add the butter and oil and warm until the butter is melted. Add the carrots, celery, onions and 1/2 teaspoon salt. Cook, stirring often, until the vegetables are soft but have no color, about 6 minutes. Add the beef and lamb and cook, breaking apart the meat with a wooden spoon, until the meat is cooked through and no longer pink, about 5 minutes. Stir the tomato paste, chili paste, red pepper flakes and garlic into the meat mixture. Cook the tomato paste, stirring often, about 2 minutes. Add the milk. Bring to a simmer and cook, stirring occasionally, until the milk is almost entirely evaporated, about 20 minutes.
  • Add the wine, bay leaf, Parmesan rind, tomatoes and 1/2 teaspoon salt. Bring to a simmer and reduce the heat to low to just maintain a gentle simmer. Simmer the sauce, stirring occasionally to prevent sticking, 1 1/2 to 2 hours. Skim the oil from the surface.
  • Spoon the sauce over the Creamy Polenta with Spinach, reserving any extra to serve on the side. Serve with the Parmesan sprinkled over the top and a drizzle of olive oil.
  • In a Dutch oven, bring the chicken broth, oil, garlic and 1 1/2 cups water to a boil over medium-high heat. Reduce the heat to medium low and whisk in the polenta. Season with 1/2 teaspoon salt and cook, stirring occasionally with a wooden spoon, about 10 minutes. Stir in the Parmesan, mascarpone, pecorino and butter. Cook, stirring often, about 5 minutes. Fold in the spinach and cook until wilted, about 5 minutes longer. Add 1/4 cup water if the mixture gets too thick.
  • Pour the polenta onto a large board or platter. Serve with grated Parmesan over the top.

1/4 tsp. salt
1 1/2 cups white vinegar
3/4 cup water

Steps:

  • Cut ring of bologna in pieces, about 2 inches long. Place in a glass jar. Add crushed red pepper, cayenne pepper, and salt. Mix white vinegar and water. Pour over bologna. Shake well, place lid on jar and refrigerate. Should be ready in a day or two. The longer the better!

2 pounds ring bologna, peeled and sliced into large chunks
4 cups vinegar
1 (4.5 ounce) can chopped pickled jalapeno peppers
1 onion, chopped
1 cup water
1 tablespoon hot pepper sauce
1 tablespoon salt

Steps:

  • Place the bologna in a large sealable jar. Combine the vinegar, peppers, onion, water, hot pepper sauce, and salt in a saucepan; bring to a boil; pour over the bologna. Seal the jar. Shake daily. Allow to pickle at least 3 days. For best results, allow bologna to pickle 90 days.

1 tablespoon crushed red pepper flakes or 1 tablespoon ground red pepper

2 slices white sandwich bread
1 slice Bologna, beef
1 teaspoon mayonnaise
1 teaspoon Dijon mustard
1 slice Cheddar cheese
1 slice tomato
1 leaf lettuce

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place 1 slice of bread in the air fryer basket and cook for 1 minute. Transfer to a plate. Repeat with remaining slice of bread.
  • Remove casing from bologna. Using a knife, make 4 slits to prevent curling. Place bologna in the basket of the air fryer and cook for 3 minutes. Flip bologna over and cook for 3 minutes more.
  • Spread mayonnaise on 1 slice of bread, mustard on the other. Assemble sandwich by layering cheese, bologna, tomato, and lettuce on 1 piece of bread and top with other piece of bread.
