1/2 Cup Sour Cream
1/2 teaspoon Prepared Ground Horseradish
4 ounces Diced Pimentos, (drained)
1/2 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/4 teaspoon Smoked Paprika
1 Cup Shredded Sharp White Cheddar
1 Cup Shredded Mild Cheddar

Steps:

  • Using a hand mixer, combine cream cheese, sour cream, horseradish, pimentos, garlic powder, onion powder and paprika.
  • Add shredded cheeses. Mix until desired consistency. (chunky or smooth)
  • Store pimento spread in refrigerator. Serve with chips, crackers, veggies, sandwiches, burgers, etc.

1 (4 ounce) jar diced pimentos, not drained
1 pound sharp cheddar cheese, grated
1 cup mayonnaise
Kosher salt and ground black pepper, to taste

Steps:

  • Place the cheese in a mixing bowl.
  • In a separate bowl, combine diced pimentos (with their juice) and mayonnaise. Add to the cheese, toss to combine, and season with salt and pepper.
  • Serve as a dip with fresh vegetables, spread on bread as a sandwich, or on top of crackers.

8 ounces extra-sharp cheddar cheese, grated with a food processor or hand grater (not pre-grated)
1/4 cup softened cream cheese (2 ounces), pulled into several pieces
Scant 1/2 cup jarred pimento or other roasted red peppers (from a 7-ounce jar), finely diced
3 tablespoons Duke's, Hellmann's or other high-quality store-bought mayonnaise
1/2 teaspoon dried red chile flakes
Salt and freshly ground black pepper to taste

Steps:

  • In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.

It's got a kick so yo can leave out the tobasco but if you don't mind a little extra pep by all means add as much as you like. I hope you enjoy this as much as I do.

8 ounce(s) swiss cheese, shredded
1 1/2 cup(s) mayonnaise, i use dukes
1 teaspoon(s) worcestershire sauce
2 teaspoon(s) onion powder
1 teaspoon(s) garlic powder
4 ounce(s) chopped pimento, drained
2-3 teaspoon(s) prepared horseradish, depends on your taste
4-5 dash(es) tobasco brand hot sauce
fresh cracked black pepper to taste

Steps:

  • Shred both cheeses from the block. This is much better than buying pre shredded cheese.
  • Add all ingredients to a large bowl and mix well.
  • Let sit in the refrigerator at least an hour before serving.
  • Serve on white bread as a sandwich, topping for burgers, grilled cheese or enjoy with your favorite crackers.
