HAM AND POTATO CASSEROLE

This rich combination of ham and potatoes in a creamy cheese sauce is comfort food in a casserole dish.

Number Of Ingredients 10

Cooking spray or butter, for coating the pan
2 pounds russet potatoes (about 4 medium)
1 cup diced, cooked ham (about 5 1/2 ounces)
1/2 medium yellow onion
8 ounces sharp cheddar cheese, shredded (about 2 cups)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole or 2% milk
1 teaspoon kosher salt, plus more as needed
1/8 teaspoon freshly ground black pepper

Steps:

  • Arrange a rack in the top third of the oven and heat the oven to 350°F. Coat a 2-quart baking dish (such as an 8x8x2-inch) with cooking spray or butter.
  • Peel and cut 2 pounds russet potatoes into 1/2-inch cubes (about 5 1/2 cups). Place in a large bowl and add 1 cup diced ham. Dice 1/2 medium yellow onion. Grate 8 ounces sharp cheddar cheese on the large holes of a box grater (about 2 cups).
  • Melt 2 tablespoons unsalted butter in a medium saucepan over medium heat. Add the onion and sauté until softened, about 5 minutes. Sprinkle with 2 tablespoons all-purpose flour and cook, stirring constantly, for 1 minute. Add 2 cups whole or 2% milk, 1 teaspoon kosher salt, and 1/8 teaspoon black pepper, and stir until the flour is dissolved. Bring to a simmer, stirring often. Simmer until thickened to the consistency of cream sauce, 2 to 3 minutes more. Add 1 1/2 cups of the cheese and stir until completely melted. Taste and season with more kosher salt as needed.
  • Pour over the potato and ham and stir to combine. Transfer to the baking dish and spread into an even layer.
  • Bake until the potatoes in the center of the baking dish are knife tender, 1 hour and 15 minutes to 1 1/2 hours. Sprinkle the remaining 1/2 cup cheese over the casserole. Turn the oven on to broil and broil until the cheese on top is melted and browned in spots, 2 to 3 minutes. Let cool 10 minutes for the sauce to thicken before serving.

cooking spray
1 pkg. frozen diced hash brown potatoes with onions and peppers, 28 oz
1 1/2 cups diced cooked ham, 8 oz
1 cup shredded swiss cheese, 4 oz
1/3 cup finely chopped red onion, 1 small
5 eggs, lightly beaten
1 1/2 cups milk
3 tbsp. horseradish mustard
1/2 tsp. salt
1/4 tsp. ground black pepper
chopped green onions
1 recipe horseradish sour cream, recipe follows

Steps:

  • 1. Coat a 3 quart baking dish with cooking spray. Spread frozen potatoes evenly in the bottom of the prepared baking dish. Sprinkle with ham, cheese and onion
  • 2. In medium bowl, mix eggs, milk, mustard, salt and black pepper. Pour egg mixture evenly over layers in baking dish. Cover and chill for at least 2 to 24 hours.
  • 3. Preheat oven to3 50. Bake uncovered, for 55 to 60 minutes or til a knife inserted near center comes out clean. Sprinkle with green onions. Let stand for minutes before serving. Serve with horseradish sour cream. Serves 8
  • 4. Horseradish Sour cream: in small bowl, stir together 1/2 cup sour cream, 1 to 2 Tbsp. horseradish mustard and 1 Tbsp. snipped fresh chives.

2 cups cubed fully cooked ham
1 medium onion, sliced and separated into rings
8 slices process American cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup frozen peas, thawed

Steps:

  • In a greased 3-qt. baking dish, layer half of the potatoes, ham, onion, cheese and soup. Repeat layers. Cover and bake at 350° for 1-1/4 hours or until potatoes are almost tender. , Sprinkle with peas. Bake, uncovered, for 10 minutes or until heated through.

1 (8 ounce) container sour cream
½ cup butter, melted

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.

4 large Russet potatoes, scrubbed
2 tablespoons olive oil
1 stick unsalted butter
1/2 cup milk
1/2 cup cream
1/4 cup grated fresh horseradish
Salt and pepper
Sour cream
Chives
4 tablespoons osetra caviar

Steps:

  • Preheat oven to 375 degrees F. Prick the surface of the potatoes a few times with a fork then rub potatoes with oil, place on a baking sheet and bake in the oven for about 1 1/2 hours, or until you can poke a thin bladed knife into them. Remove them from the oven and let rest 10 minutes, or until cool enough to handle.
  • Slice the potatoes in half vertically and carefully scrape the flesh into a medium bowl, reserving the best 4 skins. Add the butter, milk, cream and horseradish and mash until smooth, if the mixture is too dry add more milk. Season well with salt and pepper to taste. Fill each of the 4 skins with the mashed potato mixture. Place the filled potatoes on a baking sheet and return to the oven, bake until lightly golden brown, about 8 to 10 minutes. Remove from the oven and top with a dollop of sour cream, a tablespoon of caviar and sprinkle with chives.

HORSERADISH-BACON TWICE-BAKED POTATOES

5 medium russet potatoes (10 to 12 ounces each)
1 stick plus 1 tablespoon unsalted butter
1 cup sour cream
1/2 cup chopped fresh chives, plus more for topping
1/4 cup chopped fresh parsley
4 to 5 tablespoons horseradish, drained
Kosher salt and freshly ground pepper
Crumbled cooked bacon, for topping

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • One at a time, hold each potato with a kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Discard 2 of the potato skins. Mash the flesh with 6 tablespoons butter and 3/4 cup sour cream until smooth. Stir in the chives, parsley and 2 to 3 tablespoons horseradish; season with salt and pepper. Melt the remaining 3 tablespoons butter; brush the potato skins with 1 tablespoon melted butter and season the insides with salt and pepper. Set on a baking sheet.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling starts browning and the skins are crisp, 18 to 20 minutes. Remove from the oven and drizzle with the remaining 2 tablespoons melted butter.
  • Combine the remaining 1/4 cup sour cream and 2 tablespoons horseradish in a small bowl. Top the potatoes with the horseradish cream, bacon and more chives.

2 cups ham, diced
1/2 cup cheddar cheese, grated
1/4 cup scallion, sliced
1/4 teaspoon salt
2 teaspoons vegetable oil
1/2 cup sour cream
2 teaspoons prepared horseradish
2 teaspoons grainy mustard
1/4 teaspoon black pepper

Steps:

  • Mix patty ingredients in a medium bowl.
  • Form into 8 1/2-inch thick patties.
  • Heat 1 teaspoon oil in each of two medium nonstick skillets (or cook 1 batch at a time in 1 pan).
