Here's a recipe that's simple, but oh-so-good! This tangy cheese spread has a wonderful combination of flavors that taste even better when served with crisp rye crackers. It's a fine appetizer or snack!

1 pound Velveeta, cubed
1 cup mayonnaise
1/2 cup horseradish
Assorted crackers

Steps:

  • Melt cheese in the top of a double boiler. Remove from the heat. Stir in mayonnaise and horseradish. Pour into a small crock or ceramic bowl. Chill. Serve with crackers.

1 (8 ounce) package shredded extra-sharp white Cheddar cheese
1 teaspoon grated horseradish, or more to taste
½ teaspoon ground mustard

This is an easy recipe for family gatherings or parties! Not too many kids care for the horseradish flavor and spice... but it is a big hit with grown-ups! The basic ingredients made a great cheese spread with or without horseradish, sometimes I add other ingredients to change it up a bit.

1 lb processed american cheese cubed
1 c mayonnaise
1/4 c horseradish (or to taste)
8 oz cream cheese (softened)

Steps:

  • 1. Melt cheese in the top of a double boiler or microwave.
  • 2. Using electric mixer, cream together the cream cheese, mayonnaise and horseradish. Add in the melted cheese until well blended.
  • 3. Pour into a small covered container.
  • 4. Refrigerate at least 2 hours.
  • 5. Serve with crackers and pretzels. (Good on bagels and pita).
  • 6. *** You can adjust the flavor of horseradish according to your taste by adding more or less. *** Sometimes I add minced pimento or red bell pepper.

Goat Cheese with Carrots and Beet Horseradish on Toast image

Make your own cheese log with softened goat cheese mixed with grated carrot and coated in dill. Chill, then serve with prepared beet horseradish and toast or flatbread.

8 ounces soft goat cheese
1 medium carrot, grated (about 1/2 cup)
Kosher salt and freshly ground black pepper
1/2 cup chopped dill
1/4 cup jarred beet horseradish
Crostini or flatbread crisps, for serving

Steps:

  • Coarsely crumble the goat cheese. Toss with the grated carrot and season with salt and pepper.
  • Lay out a sheet of plastic wrap and spread the dill into a 12 by 4-inch rectangle in the center. Form the cheese mixture into a log in the center of the dill and roll up tightly, twisting the ends to seal. Refrigerate until firm, about 20 minutes.
  • Unwrap the log and transfer to a platter. Put the beet horseradish in a small bowl on the platter. Serve with the crostini or flatbread crisps.
