1 bunch chives, roughly chopped (about 3/4 cup)
1 cup sour cream
1/3 cup prepared horseradish, drained

Steps:

  • Bring a small pot of salted water to a boil. Add the chives and cook until bright green and tender, about 3 minutes. Drain and rinse under cold water until cooled. Gently squeeze the water out of the chives. Put the chives, sour cream, horseradish, 1 1/4 teaspoons salt and 1/4 teaspoon pepper in a blender and blend until smooth.

The tip center is left whole and sold as a roast. Average weight is 2 to 2-1/2 pounds. RECIPE FROM "BEEFITSWHATSFORDINNER.COM" *** UPDATE 10/29/08 - Remember that this is a tough cut of meat if overcooked. Cooked to medium, it is very chewy and you'll have to cut it in 'wafer' thin slices, medium rare is the most you can get away with. I tried this on a cut of cross rib and the seasonings overpowered it so let me know if you have any luck using with different cut of meat. I have cooked it too long and although had great flavor was just to rough to eat for my taste, so I used for stew meat the next day..

2 -2 1/2 lbs center sirloin tip roast
1 tablespoon minced fresh parsley
1 teaspoon dried thyme leaves, crushed
1 teaspoon vegetable oil
1 garlic clove, minced
1/2 teaspoon cracked black pepper
salt
1 cup sour cream
1/2 cup prepared horseradish
2 tablespoons milk
1 tablespoon snipped fresh chives
1/8 teaspoon white pepper

Steps:

  • Instructions:.
  • Heat oven to 325°F.
  • Combine parsley, thyme, oil, garlic and black pepper; press evenly onto all surfaces of beef roast.
  • Place roast on rack in shallow roasting pan.
  • Insert ovenproof meat thermometer so tip is centered in thickest part of beef. Do not add water or cover.
  • Roast in 325°F oven 1-1/4 to 1-1/2 hours for medium rare, but watch it CLOSELY. I strongly recommend using a meat thermometer with this one.
  • Meanwhile combine sauce ingredients in small bowl; cover and refrigerate.
  • Remove roast when meat thermometer registers 140°F for medium rare. (Do not overcook.) Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10 to 15 minutes. (Temperature will continue to rise about 5°F to reach 145°F for medium rare.) Carve roast into THIN slices; season with salt, as desired. Serve with sauce.

8 salmon fillets, 6-8 ounces each
1 teaspoon salt
3/4 teaspoon pepper
1/4 cup Chardonnay wine
1/2 cup prepared horseradish, squeezed to remove excess moisture
1/4 cup fresh breadcrumb
1 shallot, minced
1/2 cup Chardonnay wine
1/2 cup heavy cream
3 tablespoons lemon juice
1 1/2 cups butter, 3 sticks, chilled, cut into small pieces
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, diagonally sliced

Steps:

  • Lightly butter shallow baking pan or broiler pan.
  • Arrange salmon filets on buttered pan.
  • Sprinkle with salt and pepper, drizzle with 1/4 cup Chardonnay.
  • In small bowl, combine horseradish, bread crumbs and shallot, mix well.
  • Press into top of each filet.
  • Bake at 375 for 12 to 14 minutes or until fish flakes easily with fork.
  • Meanwhile, in small saucepan, combine 1/2 cup Chardonnay, cream and lemon juice, cook over medium-high heat until reduced to 1/4 cup.
  • With wire whisk, beat in 1 cup of the butter.
  • Remove from heat, beat in remaining 1/2 cup butter until thick and smooth.
  • Stir in parsley and chives.
  • If desired, season with salt and pepper.
  • Serve butter sauce over salmon filets.

  • Marinate a 1-pound hanger steak (center sinew removed) in a mix of 1 cup red wine vinegar, 1/3 cup cognac, 1/2 cup olive oil, 1 minced shallot, 2 tablespoons chopped rosemary, 4 chopped garlic cloves, 2 tablespoons sugar, and pepper to taste for up to 6 hours. Preheat a grill to medium-high on one side. Remove the steak from the marinade; pat dry and season with coarse sea salt and pepper. Sear over direct heat until marked, about 4 minutes per side. Transfer to the cooler side; cover and cook until the meat reaches 130 for medium-rare, about 10 minutes. Let rest 5 minutes before slicing. For the salmon
1 Tbs. grated lemon zest, minced
1 1/2tsp. chopped fresh thyme
1/2 tsp. granulated sugar
Kosher salt and freshly ground black pepper
2 2-lb. boneless, skin-on salmon fillets (preferably wild and no longer than 15 inches), pin bones removed
2 Tbs. extra-virgin olive oil
For the horseradish-chive sauce
1/2 cup crème fraîche
3 Tbs. minced fresh chives
1 1/2 Tbs. prepared horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Soak the cedar planks in water to cover for at least 1 hour. Drain the planks. Prepare the sauce In a small bowl, stir the crème fraîche, chives, and horseradish. Season to taste with salt and pepper. Refrigerate. Prepare the salmon In a small bowl, combine the lemon zest, thyme, sugar, 1 1/2 tsp. salt, and 1 Tbs. pepper. Rub the mixture together with your fingers until the zest is distributed throughout. Rub the salmon fillets on both sides with the olive oil and then set each fillet skin side down on a plank. Sprinkle the fillets with the lemon-pepper mixture, dividing it evenly. Gently rub the seasoning into the fillets. Let stand at room temperature while the grill heats. Cook the salmon Prepare a gas or charcoal grill fire for indirect cooking with high heat: On a gas grill, heat all burners on high; then turn off all but one burner just before cooking the salmon; on a charcoal grill, bank the coals to two opposite sides of the grill. Arrange the planks over the cooler part of the grill, positioning them so that the thickest part of the fish is closest to the heat source. Cover the grill and cook until the thickest part of each fillet registers about 135°F on an instant-read thermometer, 20 to 35 minutes depending on the thickness of the fillets. The planks may smoke a bit (this is fine) and will become very aromatic. Let the fillets rest on the planks for 5 to 10 minutes before serving. Cut the salmon fillets crosswise into serving portions and transfer to individual plates. Serve with the sauce.

3 lbs beef tenderloin, center cut, trimmed and tied
2 tablespoons olive oil
4 garlic cloves, smashed
1 teaspoon kosher salt
2 tablespoons fresh thyme, chopped
2 tablespoons fresh rosemary leaves, chopped
1/2 teaspoon fresh ground pepper
3/4 cup horseradish sauce
1/2 cup fat free sour cream
1/2 cup heavy cream
1 tablespoon Dijon mustard
1 tablespoon horseradish
1 teaspoon fresh lemon juice
1/4 teaspoon fresh ground pepper
1/2 cup chives, chopped

Steps:

  • Herb-Roasted Beef Tenderloin:.
  • Heat oven to 400 degrees. Pat beef dry with paper towel. Heat oil in a medium size, flameproof roasting pan set over 2 stovetop burners over medium-high heat. Brown beef well on all sides, about 10 minutes total. Remove beef to a cutting board and let cool; discard oil from roasting pan.
  • Meanwhile mash garlic with salt in a mortar with pestle (or scrape mixture together on a cutting board with the flat side of a chef's knife), until a fine paste forms. Stir in thyme, rosemary and pepper. Rub mixture all over beef; place beef on a rack in a roasting pan.
  • Roast 25 to 30 minutes, until an instant-read thermometer registers 125 degrees in the thickest part.
  • Transfer beef to a cutting board and let stand, loosely covered with foil, 15 to 20 minutes (it will continue to cook, reaching 130 degrees in the thick end for medium rare, and the narrow end at 135 degrees for medium).
  • Remove string from beef and discard. Cut beef into 1/2 inch thick slices. Serve with Horseradish Chive Sauce.
  • Horseradish-Chive Sauce:.
  • In a bowl combine horseradish sauce, sour cream, heavy cream, dijon mustard, horseradish, lemon juice, salt and pepper until blended. Refrigerate (can be made up to 2 days ahead). Just before serving, stir in chives.

2 tablespoons olive oil or corn oil
1 medium onion, julienned
1 cup julienned fennel
2 tablespoons sliced garlic
2 sprigs fresh thyme
2 sprigs flat-leaf parsley
1 cup chopped savoy cabbage, plus 3 of the darker outer leaves, finely julienned
1 quart well-seasoned chicken or vegetable stock
4 cups peeled and julienned fresh beets (about 1 1/2 bunches)
Salt and freshly ground white pepper to taste
1 cup creme fraiche, sour cream or mayonnaise
1/4 cup prepared white horseradish
1/2 teaspoon sugar
1 tablespoon minced chives
8 halibut steaks or fillets, each 4 to 6 ounces, or 8 portions chilled gefilte fish

Steps:

  • Heat oil in a heavy 3-quart saucepan. Add onions and fennel, and cook slowly about 5 minutes, until softened. Tie garlic, thyme, parsley and chopped cabbage in a double thickness of cheesecloth, and add it to saucepan along with stock and beets. Simmer 15 minutes. Season to taste with salt and pepper. Remove from heat. Discard cheesecloth and its contents. To serve the dish chilled, refrigerate beet mixture at least 4 hours or overnight.
  • Bring 3 cups water to a boil in a small saucepan. Add julienned cabbage leaves, cook just until bright green, then drain. Set leaves aside, covered, to keep warm; for a cold dish, refrigerate.
  • Mix creme fraiche, sour cream or mayonnaise with horseradish, sugar and chives. If using mayonnaise, thin it beforehand with 2 tablespoons water. This sauce can be gently warmed in a small saucepan or chilled to serve cold.
  • To serve, steam halibut until fully cooked outside and just warm inside, 6 to 8 minutes. Keep warm. Reheat beet mixture, spoon into warmed shallow soup plates, sprinkle with julienned cabbage and top with fish. Or spoon chilled beet mixture into shallow soup plates, add cabbage, and top with gefilte fish. Serve horseradish sauce, warm or chilled, on the side.
