1/4 cup sugar
1/4 cup fresh mint leaves, plus sprigs for serving (optional)
3 sprigs lemon thyme (or regular thyme, plus 1 tablespoon finely grated lemon zest)
1/2 honeydew melon, rind removed, seeded, flesh cut into pieces (3 1/2 cups)
1/2 cup light rum
1/4 cup fresh lime juice (from 3 limes), plus wedges for serving (optional)

Steps:

  • In a small saucepan, combine sugar and 1/4 cup water over medium; stir until sugar dissolves. Remove from heat, add mint and lemon thyme, and let sit 10 minutes. Pour through a fine-mesh sieve; discard solids. Refrigerate until cold, 20 minutes (or up to 1 week).
  • In a blender, combine mint syrup, melon, rum, and lime juice; blend until smooth. To serve, fill four glasses with ice and divide mojito among glasses. Top with fresh mint and lime wedges, if desired.

Honeydew Mojitos image

We've never met a mojito we didn't like, and this blended version might just be our new go-to. Combining the whimsy of a frozen beverage with the fresh, minty flavor of a mojito, our Honeydew Mojitos make the most out of one of the season's brightest melons.

Number Of Ingredients 7

1 medium-size thin-skinned lime, plus lime slices for garnish
4 cups honeydew melon cubes (1-inch pieces)
.75 cup (6 oz.) white rum (such as Bacardí)
.5 cup loosely packed fresh mint leaves, plus mint sprigs for garnish
.5 cup Simple Syrup
Ice cubes
1 cup sparkling water, seltzer water, or club soda

Steps:

  • Cut lime lengthwise into quarters. Using a knife, remove center white pith from lime wedges; discard. (Do not remove the peels.)
  • Place lime wedges, melon cubes, rum, mint leaves, and Simple Syrup in a blender. Process until mixture is smooth, about 1 minute. Pour through a fine mesh strainer into a measuring cup or a bowl, stirring and pressing lightly on solids to extract as much juice as possible. Discard solids.
  • Fill 4 glasses with ice cubes. Pour ¾ cup strained mixture into each glass. Top with ¼ cup sparkling water; stir. Garnish glasses with lime slices and mint sprigs.
