Yield Makes two 9-inch loaves

Number Of Ingredients 10

3 1/2 cups warm water (about 110 degrees)
3 tablespoons honey
2 envelopes active dry yeast (1/4 ounce each)
1 1/2 pounds (about 4 1/2 cups) bread flour, plus more for dusting
1 1/2 pounds (about 4 1/2 cups) whole-wheat flour
5 ounces (about 1 cup) wheat germ
2 tablespoons coarse salt
Vegetable oil, for bowl, pans, and plastic wrap
1 large egg yolk
1 tablespoon heavy cream

Steps:

  • Combine warm water, honey, and yeast in a large liquid measuring cup; stir until yeast dissolves. Let stand until foamy, about 5 minutes.
  • In a large bowl, whisk 1 pound 5 ounces (about 4 cups) bread flour with whole-wheat flour, wheat germ, and salt. Make a well in the center. Pour in yeast mixture, and stir with a wooden spoon, gradually drawing in dry ingredients until combined.
  • Turn out dough onto a lightly floured work surface. Gently knead in remaining 3 ounces (about 1/2 cup) bread flour a little at a time until dough is smooth and elastic, 10 to 15 minutes. Place in a lightly oiled bowl; cover with lightly oiled plastic wrap. Let rise in a warm place until doubled in bulk, 1 to 1 1/2 hours.
  • Preheat oven to 400 degrees with rack in center. Brush two 9-by-5-inch loaf pans with oil. Punch down dough with your fist then turn it out onto a lightly floured work surface. Divide dough in half. Flatten one half into an oval approximately the length of the pan, and roll up lengthwise, gently pressing as you go to form a tight log. Place the log, seam side down, into a prepared pan. Repeat with remaining dough. Cover loaf pans with oiled plastic wrap. Let rise in a warm place until doubled in bulk, 30 to 45 minutes.
  • Using a lame or a razor blade, slash loaves down the center in one quick, even motion. In a small bowl, beat the egg yolk with the heavy cream; brush over the tops of the loaves.
  • Bake, rotating pans halfway through, until bread is deep golden brown, 50 to 60 minutes. (If tops are browning too quickly during the last 30 minutes of baking, tent with aluminum foil.) Transfer pans to a wire rack, and let cool 5 minutes. Turn out the loaves onto the rack to cool completely before serving.

¼ cup raw honey

2 teaspoons active dry yeast

Steps:

  • Place warm water, butter, honey, whole wheat flour, flaxseed meal, vital wheat gluten, salt, dry milk, and yeast in a bread machine in the order listed. Run a basic wheat bread cycle, but adjust the cook timer to cut baking time down by 25 to 30 minutes. I time the bread and take it out when I see that it is not yet brown. If you like a crusty bread you may let it cook the entire time.
  • Remove loaf from the machine after the cycle is done.

2-1/2 to 3 cups all-purpose flour
3-1/2 cups whole wheat flour, divided
2 packages (1/4 ounce each) active dry yeast
1 cup milk
1-1/4 cups water
1/4 cup honey
3 tablespoons butter
1 tablespoon salt

Steps:

  • In a bowl, combine 2 cups all-purpose flour, 2 cups whole wheat flour and yeast. In a saucepan, heat milk, water, honey, butter and salt to 120°-130°; add to flour mixture. Blend on low speed until moistened; beat on medium for 3 minutes. Gradually stir in remaining whole wheat flour and enough of the remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves; place in a greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour. Bake at 375° for 40-45 minutes. Remove from pans to cool on wire racks.

2 cups all-purpose flour

1 teaspoon salt

  • Combine the yeast, whole wheat flour, all purpose flour, baking soda, salt, honey, oil, and buttermilk into pan of a bread machine.

This honey whole wheat bread is light and fluffy. Easy to make using simple ingredients, this wholesome bread is perfect for sandwiches and toast.

1/4 Cup Warm water
2 1/4 tsp Active dry yeast
1/3 Cup Honey
1 1/4 Cup Warm water
1 tsp Salt
2 Tbsp Olive oil
3 Cups Whole wheat bread flour
1 1/2 Cups All purpose flour

Steps:

  • Add the honey, yeast and 1/4 cup of warm water to the bowl of a stand mixer. Allow to sit for approximatly 5 minutes until yeast becomes foamy.
  • Add the remaining ingredients to the mixer and set to low. Mix until the dough comes together and pulls away from the sides of the bowl.
  • Turn the dough out onto a floured counter top and knead for 5-8 minutes until dough is smooth and elastic. If the dough is really sticky you can add 1-2 tablespoons of flour at at time until it smooth.
  • Lightly coat a bowl with oil and place the dough in the bowl. Cover with plastic wrap or a clean tea towel and allow to rise in a warm place until doubled. This will usually take about an hour. If it is cold out, you can place the bowl in the oven with the oven light on, or use the proof setting on your oven if it has it.
  • Once the dough has doubled, turn out onto a counter and divide into two equal portions. I like to use a kitchen scale for this, but you can just estimate if you like.
  • With a rolling pin, roll the dough out to approximatly 9x12 inches, then roll up from the short side. Gently tuck the ends under then place the rolled dough seam side down into greased loaf pans.
  • Cover with a clean tea towl and allow to rise until almost doubled, approximatly an hour. You can also cover with plastic wrap, but be sure not to wrap it tightly as you need room for the dough to expand.
  • Once the dough has risen, preheat your oven to 350 degrees
  • Bake the loaves for 25-30 minutes until lightly golden and sound hollow when tapped
  • Allow to cool in the pans for 10 minutes, then remove from the pans and allow to cool on a cooling rack.
  • Slice and serve. Store in an airtight container or bag at room temperature for about a week, or you can freeze for up to 3 months.

1 pound, 6 ounces (about 4 1/2 cups) freshly milled whole-wheat bread flour, such as Hayden Flour Mills Hard Red Spring, plus more for dusting
1 tablespoon kosher salt
3 tablespoons unsalted butter, melted, plus more for bowl and pan

Steps:

  • In a small bowl, stir honey into warm water, then sprinkle with yeast. Let stand until foamy, about 5 minutes.
  • Stir together flour and salt in a medium bowl, then stir in yeast mixture and melted butter just until a dough forms. Knead on a lightly floured surface until smooth, 5 to 10 minutes. Transfer to a large buttered bowl, cover with plastic wrap, and let rise in a warm spot until doubled in bulk, about 45 minutes.
  • Preheat oven to 375 degrees. Punch down dough. Shape into an 8-inch square, about 1 inch thick. Fold in two opposite sides of dough to meet in middle, slightly overlapping. Press seam to seal. Grease large bowl with shortening or cooking spray; place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place 30 to 45 minutes or until doubled in size.
  • Generously grease 2 (8x4- or 9x5-inch) loaf pans with shortening or cooking spray. Gently push fist into dough to deflate; divide in half. Shape dough into loaves; place in pans. Cover; let rise in warm place 30 to 45 minutes or until doubled in size.
  • Heat oven to 375°F. Uncover dough; bake 30 minutes. Reduce oven temperature to 350°F; bake 10 to 15 minutes longer or until loaves sound hollow when lightly tapped. Immediately remove from pans to cooling racks. Cool completely, about 1 hour.

3 cups whole wheat flour, divided
2 cups whole milk, warm
3/4-1 cup all-purpose flour, divided
1/4 cup honey
2 tablespoons vegetable oil
1 (1/4 ounce) package active dry yeast
3/4 teaspoon salt

Steps:

  • Using a 1 quart casserole, souffle dish, or any other high sided baking pan that will fit into your slow cooker, coat with nonstick cooking spray. Set aside.
  • In a large mixing bowl combine together 1 1/2 cups whole wheat flour, milk, 1/2 cup all purpose flour, honey, oil, yeast and salt. Beat at medium speed with an electric mixer for 2 minutes. Add the remaining whole wheat flour and up to 1/2 cup all purpose flour until dough is no longer sticky. If the electric mixer is have a difficult time mixing the dough use a wooden spoon to mix in the remaining flour. Transfer dough to the prepared baking dish.
  • Place dish in slow cooker and cook on HIGH for 3 hours or until the edges of the bread have browned. Carefully lift the baking dish out of the slow cooker using oven mitts or pot holders. Let bread stand for 5 minutes and than unmold on a wire rack to cool.
