- Combine avocado oil, vinegar, mayonnaise, honey, poppy seeds, mustard, and salt in a pint-sized jar with a tight-fitting lid. Shake vigorously, about 1 minute. Refrigerate until salad is ready.
- Divide spinach leaves among 4 salad plates. Distribute strawberries on each plate. Top with crumbled bacon and chopped pecans. Drizzle salad dressing over each plate and serve.

LITE FRUIT SALAD WITH HONEY POPPY SEED DRESSING BY PAULA DEEN
Another recipe from her cooking show. I found it made more dressing than I had salad for and it was a little on the sweet side so next time I'll add more salad ingredients and cut down on the honey, and I suppose you could even reserve the juice from the can of mandarin oranges and use that for the orange juice in the dressing.

- Chop apple, avocado, and banana and mix together in a bowl with the drained mandarin oranges, raisins, and chopped nuts.

This dressing goes a long way and can be stored in the refrigerator for weeks. I use fresh strawberries, mango, chopped walnuts (any kind you like) romaine lettuce and chopped veggies in a bag that Dole makes. Low Carb, Healthy, and enjoyable.

- 1. Wash, rinse and chop all salad ingredients. Set aside in the refrigerator.
- 2. Make your hard boiled eggs, if you are using them. Set aside and put in salad before applying the dressing.
- 3. Mix all your salad ingredients in a medium sized bowl. Taste and decide how much more honey you would like in it. Refrigerate until a few minutes before using. I use a serving bowl and small ladle for the salad, each person can use what they like. If it's the whole salad, I put the dressing on just before everyone sits down. This salad is also excellent with adding in grilled chicken slices, crab meat, shrimp cut up and anything you feel you would like to try on top of it. Enjoy.
