Number Of Ingredients 14

5 cups old-fashioned oats
1 cup sliced almonds
1/2 cup sunflower kernels
1/2 cup ground flaxseed
1/2 cup packed brown sugar
1/4 cup maple syrup
1/4 cup honey
2 tablespoons canola oil
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/2 cup dried banana chips
1/2 cup dried apricots, halved

Steps:

  • In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. Cook and stir over medium heat for 2-3 minutes or until brown sugar is dissolved and mixture is heated through. Remove from the heat; stir in vanilla. Pour over oat mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until golden brown, stirring every 8 minutes. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container.

Honey-Roasted Nuts and Fruit image

Tasty snack from Cooking Light that provides a concentrated source of carbohydrates from the raisins, along with protein and "good" fats from the nuts. Feel free to substitute nuts and fruit according to your preference, or what you have on hand. I don't care for raisins, so I used craisins (dried cranberries) ; I found I was out of slivered almonds, so I substituted some chopped macadamias. I especially loved the addition of cardamom--added an unexpected element.

1 teaspoon butter
1/4 cup honey
1/4 cup slivered almonds
1/4 cup chopped hazelnuts
1/4 cup chopped pecans
1/4 cup sunflower seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 dash ground cloves
1 cup raisins

Steps:

  • Line a baking sheet with parchment paper or foil and coat with cooking spray.
  • In a large nonstick skillet, heat butter over medium-high heat. Stir in honey and cook 2 minutes or until mixture bubbles around edges of pan.
  • Add nuts and next 5 ingredients, and cook over medium heat until nuts are golden, about 8 minutes, stirring frequently. Stir in raisins.
  • Immediately spread onto prepared baking sheet; cool completely.
  • Note: Mine were still a bit sticky after they cooled, so I just stored them in the refrigerator.

This rich Russian version of fruitcake is surprisingly easy to make, and because it uses honey rather than white sugar, it's more healthful, too.

2/3 cup honey
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
2 eggs, separated
3/4 cup nonfat vanilla yogurt
1/2 cup raisins
1/4 cup chopped pitted dates
1/4 cup chopped dried apricot
1/4 cup finely chopped walnuts
1 3/4 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees.
  • In a small saucepan, heat the honey, bringing it just to the boiling point. Remove from heat and stir in the spices and baking soda. In a mixing bowl, combine the egg yolks and yogurt and beat together until smooth. Add the honey mixture and mix in thoroughly, then stir in the dried fruit and nuts.
  • In a large mixing bowl, combine the flour, baking powder, and salt. Make a well in the center and pour in the honey-nut mixture. Stir vigorously until thoroughly combined. Beat the egg whites until stiff, then fold into the batter. Pour into an oiled 9-by 5- by 3-inch loaf pan.
  • Bake for 55 minutes, or until a knife inserted into the center tests clean. Cool on a rack, then cover tightly with foil to store.
  • Makes one loaf (recipe can easily be doubled).

These Mexican sweet buns are great to make during the winter time, especially for Christmas! People love the sugar topping that browns when they bake.

1 cup milk
6 tablespoons butter
1 (.25 ounce) package active dry yeast
⅓ cup white sugar
1 teaspoon salt
2 eggs
5 cups all-purpose flour
½ cup white sugar
⅔ cup all-purpose flour
4 tablespoons butter, softened
2 egg yolks

Steps:

  • Heat the milk in a small saucepan until it bubbles, then remove from heat. Add the butter, stir until melted and pour into a large bowl to cool.
  • Dissolve yeast in the milk mixture. Mix in 1/3 cup sugar, salt, eggs and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Divide the dough into 16 equal pieces and form into rounds. With a rolling pin, roll the rounds into oval buns. Place them onto two lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • While the bread rises, make the topping: In a small bowl, stir together 1/2 cup sugar, 2/3 cup flour, butter until a crumb mixture forms. Stir in the egg yolks until well blended. Crumble the topping over the rolls so the entire surface is covered.
  • Bake in preheated oven for 15 to 20 minutes, or until sugar topping is lightly browned.
