EASY HONEY ROASTED CASHEWS



Easy Honey Roasted Cashews image

Enjoy the sweet salty delight of cashews toasted with a yummy honey glaze. Packed with protein and low in sugar - they make a great quick snack option.

4 cups cashews (wholes or halves)
3 tablespoons Butter
1/4 cup honey
1 tablespoon sea salt (optional)

Steps:

  • Melt butter in microwave in microwave safe dish and stir in measured honey. You can melt in small bursts to avoid burning your butter.
  • Pour cashews into a large mixing bowl. You are going to stir them around so have enough room.
  • Pour butter honey mixture over cashews and gently toss to coat all pieces.
  • Spread honey coated nuts on a flat baking sheet lined with parchment paper. (If you do not have parchment paper - you can instead butter the pan surface well.)
  • If desired, sprinkle a bit of sea salt on the honey coated cashews. This can be repeated when they are removed from the oven if you want a saltier taste.
  • Place cashews in an oven preheated to 325° F and cook for about 12-14 minutes - stirring every 4 minutes to promote even cooking. Don't let them burn - oven cook times can vary. Remove from over and let cool for 4-5 minutes. Take a spatula or wooden spoon and stir the cooling nuts. Don't eat them yet !! You will burn your tongue! This stir during the cooling process helps prevent some sticking together.
  • When completely cool, your honey roasted cashews are ready to enjoy. Store them in an air-tight container on the counter for 4-5 days. If they last that long.

1 pkg. (13.5 oz.) sourdough hard pretzels
3/4 cup KRAFT Honey Mustard Dressing
1/2 cup cashew halves with pieces
1 tsp. onion powder

Steps:

  • Heat oven to 375°F.
  • Place pretzels in resealable plastic bag. Seal bag, then pound with meat mallet or rolling pin to break pretzels into bite-size pieces.
  • Empty pretzel pieces into large bowl. Add remaining ingredients; mix lightly.
  • Spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 12 to 15 min. or until lightly browned. Cool completely.

2 tablespoons honey
2 tablespoons olive oil
2 teaspoons flaked sea salt
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 180.C.
  • Line a baking tray with non-stick baking paper.
  • Combine last 4 ingredients and pour over cashews, toss to coat.
  • Spread the cashew mixture over the lined tray and bake for 8-10 mins, stirring once, or until golden.
  • Set aside to cool & store in an airtight container.

A sweet and tangy snack. Perfect as is or as a crunchy, flavourful addition to a nice salad. It also makes a really nice gift -- just put it in a pretty jar with a ribbon. This recipe should come with a warning though because these are HIGHLY ADDICTIVE! :) I came up with this recipe because I love honey mustard pretzels and I love cashews -- so it just made sense to see if I could successfully combine the two. Feel free to adjust seasonings to your liking. Sometimes I add in a bit of cayenne pepper for a bit of heat, but that is optional so I left it out. This recipe is also nice for peanuts, almonds, walnuts, etc.

4 tablespoons honey
1 tablespoon vegetable oil (canola, sunflower, etc.)
1 teaspoon dry mustard
2 cups cashew halves

Steps:

  • Preheat oven to 350°F.
  • Line a cookie sheet with aluminum foil and lightly spray with cooking spray. Set aside.
  • In a bowl, wisk together the honey, vegetable oil and mustard powder. Add in the cashews and toss to coat.
  • Spread evenly on prepared cookie sheet and bake for 15-20 minutes. Check after 10 minutes to stir regularly to ensure even toasting. (oven temperatures may vary so keep an eye on them)

2 tablespoons olive oil, divided
1/4 cup honey
1/4 cup yellow mustard
2 tablespoons onions, minced
1 garlic clove, minced
4 skin-on salmon fillets, 4-5 ounces each
2/3 cup Fisher Premium Whole Cashews, finely chopped
1 lemon, halved

Steps:

  • Place 1 tablespoon of oil in a large skillet and heat through until hot.
  • In a bowl mix the honey and mustard together, add the onion and garlic mix well.
  • Brush the salmon on the skin side with the honey mixture thick enough to coat. Place in the cashews and coat well.
  • Place the fish skin side down in the hot skillet and gently sauté until the side turns golden. Turn over the salmon and finish cooking it until the internal temperature reaches 145°F using a cooking thermometer.
  • Place on a platter and drizzle with the remaining oil and a squirt of lemon. Serve immediately.

2 cups unsalted dry-roasted cashews

Steps:

  • Set oven to 350 degrees.
  • In a heavy skillet over low heat, add in honey stir until warmed.
  • Add in nuts and salt; toss thoroughly.
  • Transfer to a baking sheet and bake for about 10-12 minutes, or until the nuts are a slightly darker shade of brown and the honey is almost hardened.
