A sweet old-fashioned favourite. Kids always love these and they are great for children's parties. They are very easy to make- get the kids to help!

Number Of Ingredients 4

90 g butter (3 ounces)
1/3 cup caster sugar, this is 65grams (superfine sugar)
4 teaspoons honey
4 cups corn flakes, ensure gluten free if following a gluten-free diet

Steps:

  • Preheat oven to 150°C ( 300°F ) Prepare patty/cupcake pans with paper cases.
  • Heat buter, sugar and the honey until frothy. You can use a saucepan or the microwave for this step. This will form a soft toffee.
  • Add cornflakes and mix until well combined.
  • Spoon into patty cases and bake for 5-10 minutes. Be careful not to burn them.
  • The Honey Joys will set as they cool. The amount you make will depend on the size of the patty cases used. For children it is better to make smaller sized in preference to large.
  • Store in an airtight container.

4 cups (160gms) corn flakes
(90gms) unsalted butter
1/4 cup (55gms) white sugar
2 tablespoons honey
2/3 cup (80gms) nuts such as macadamias or penuts
3 tablespoons hundreds and thousands

Steps:

  • Pre-heat your oven to 170°C/340°F/150°C fan-forced. Line your muffin tins with cupcake liners or patty pans.
  • Put the cornflakes into a large bowl. Roughly chop and add the nuts if using.
  • Add the sugar, butter and honey to a small pot on the stove. Heat on medium low, string until the sugar dissolves. Increase the heat to medium and continue to cook until the mix is foamy.
  • Put the bowl with cornflake mix on a heatproof surface. Pour the butter mix over the cornflakes, mixing as you got to. Working quickly mix the cornflakes until evenly coated.
  • Spoon into muffin tins, packing them slightly as you go.
  • Bake in the oven for ten minutes. Remove and add sprinkles if using. Allow to cool completely at room tempreature on in the fridge before serving.
  • To serve pop onto a plate and enjoy! Perfect for a kid's party, lunch boxes or afternoon tea. Delicious!

You can vary this recipe by: * Sprinkle 100's & 1000's or those silver and gold balls over them before going into the oven. * For extra honey flavoured ones use double the honey amount. * For a large amount- double the recipe straightaway. * Use muffin pattypans instead of little bitty cake pattypans. Kids love these things at birthday parties.

90 g butter

1 tablespoon honey

Steps:

  • Preheat oven- moderate temp- 180 degrees C (350 F).
  • Melt butter, sugar and honey together in a span over low heat, stirring occasionally.
  • Put cornflakes in a large bowl.
  • Pour the warm honey mixture over the cornflakes and mix well BUT gently.
  • Spoon mixture into patty pans.
  • Place in oven for 10 minutes.
  • Cool and store in air tight container.
