Of all the ways to prepare shrimp, the grill delivers the best flavor. Although unadorned "shrimp on the barbie" are great, an easily assembled gingery barbecue sauce makes them that much better. You can save time by buying already shelled and deveined shrimp, but our recipe developer, Alexis Touchet, who grew up in shrimp country in southwest Louisiana, thinks shell-on shrimp are better quality. Depending on where you live and what's in your market, you may not have much choice. Freshness trumps all, so don't hesitate to use your nose in deciding which shrimp to buy.

Shrimp:
4 pounds jumbo (21-25 per pound) or extra-large (26-30 per pound) shrimp in shell, peeled, leaving tail and adjoining shell segment intact, and deveined (See Cooks' Notes)
4 tablespoons vegetable oil
1 teaspoon salt
Special Equipment
18 to 24 (12-inch) wooden skewers (depending on size of shrimp used), soaked in water for 30 minutes

Steps:

  • For the Shrimp:
  • If necessary, pat shrimp dry, then thread about 6 shrimp (through top and tail, leaving shrimp curled), onto each skewer, without leaving space between shrimp.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure.
  • Meanwhile, brush shrimp with vegetable oil and sprinkle evenly with salt.
  • Lightly oil grill rack. Grill shrimp, covered only if using a gas grill, turning over once, 2 minutes. Brush shrimp with some sauce from the saucepan, then turn. Brush shrimp with additional sauce then grill until just cooked through, 1 to 2 minutes. Serve with reserved sauce.

⅓ cup Worcestershire sauce
2 tablespoons dry white wine

1 pound large shrimp, peeled and deveined with tails attached
¼ cup honey
¼ cup butter, melted
2 tablespoons Worcestershire sauce

Steps:

  • In a large bowl, mix together garlic powder, black pepper, 1/3 cup Worcestershire sauce, wine, and salad dressing; add shrimp, and toss to coat. Cover, and marinate in the refrigerator for 1 hour.
  • Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • In a small bowl, stir together honey, melted butter, and remaining 2 tablespoons Worcestershire sauce. Set aside for basting.
  • Lightly oil grill grate. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste occasionally with the honey-butter sauce while grilling.

⅓ cup olive oil
3 tablespoons lime juice
1 bunch fresh cilantro, stems chopped off
2 teaspoons chipotle pepper in adobo sauce
¼ teaspoon salt
1 tablespoon olive oil
2 tablespoons honey
1 teaspoon Mccormick® ground cumin

1 lime, zested
¾ teaspoon salt

1 lb shrimp, peeled and deveined
1 corn, cob
5 oz baby greens, mixed
1 cup grape tomato

Steps:

  • Dressing: Place all the ingredients in a food processor. Process for about 1 minute until emulsified. Set aside.
  • In a large bowl, mix together olive oil, honey, McCormick® ground cumin, paprika, garlic powder, lime zest, salt, and pepper. Add shrimp and toss to coat. Thread shrimp onto soaked bamboo skewers.
  • Heat grill or grill pan to medium-high heat. Place shrimp skewers and the corn on the grill and close the lid. Grill for 4 minutes, then flip skewers. Grill for 3 minutes on the second side, then take the skewers off the grill. Rotate corn to get light grill marks. (Corn will take about 5 minutes longer than the shrimp.) Take the corn off the grill.
  • Pull the shrimp off the skewers. Slice corn off the cob.
  • Assemble the salad: On a platter, arrange the mixed baby greens. Scatter the tomatoes, radishes, and avocado on top. Add the shrimp and corn. Scatter sliced scallion over the salad. Drizzle with the dressing. Serve!

3/4 cup Italian salad dressing
3/4 cup honey
1/4 teaspoon minced garlic
2 pounds uncooked medium shrimp, peeled and deveined

Steps:

  • In a small bowl, combine the salad dressing, honey and garlic; set aside 1/2 cup. Pour remaining marinade into a large resealable plastic bag; add the shrimp. Seal bag and turn to coat; refrigerate for 30 minutes. Cover and refrigerate reserved marinade for basting., Drain shrimp, discarding marinade from bag. Thread shrimp onto eight metal or soaked wooden skewers. On a greased grill rack, grill, uncovered, over medium heat or broil 4 in. from the heat for 1-1/2 to 2 minutes on each side. Baste with reserved marinade. Grill or broil 2-3 minutes longer or until shrimp are pink and firm, turning and basting frequently.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
3 tablespoons honey
1/4 cup fresh lime juice (1 lime)
1/4 teaspoon salt (adjust to taste)
1 teaspoon pepper (adjust to taste)
1 teaspoon garlic powder (adjust to taste)
1 1/2 teaspoons butter, softened
1 1/2 teaspoons flour
3/4 lb large raw shrimp, deveined & shelled

Steps:

  • Combine olive oil, vinegar, honey, lime juice, salt, pepper and garlic together to make marinade. Marinate shrimp for about 30 minutes or more if desired, then drain marinade into a cup and save to make glaze after cooking shrimp.
  • Heat grill pan to medium, grill shrimp for a total of 3 minutes, turning over once. Remove shrimp from pan and cover to keep warm.
  • Blend butter and flour together and add to juices in pan. Add saved marinade to pan also and heat till thickened stirring to prevent lumps, about a minute or two. Cover shrimp with glaze or serve separately over white rice.
  • Makes two servings.

1 teaspoon honey
1 tablespoon balsamic vinegar
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 head radicchio, cut into 8 wedges
16 large shrimp, peeled and deveined
1/4 cup fresh parsley leaves

Steps:

  • Prepare a grill for medium heat.
  • Whisk together the shallots, Dijon, honey and balsamic in a medium bowl. Slowly add 3 tablespoons olive oil while whisking to emulsify. Whisk in 1/4 teaspoon salt and a few grinds of pepper.
  • Brush the radicchio on both sides with olive oil and season lightly with salt and pepper. Grill until charred in spots and slightly wilted, turning once, about 8 minutes.
  • Meanwhile, toss the shrimp with a splash of olive oil, and sprinkle with 1/4 teaspoon salt and some pepper. Grill, turning once, until just cooked through, about 3 minutes per side.
  • Divide the radicchio and shrimp among small plates, drizzle with vinaigrette and sprinkle with parsley leaves. Serve warm or at room temperature.

2/3 c brown sugar
1/3 c kosher salt
1/4 c black tea, loose
1/4 tsp cayenne pepper
4 sprig(s) fresh thyme
2 Tbsp fresh ginger, peeled and chopped
16 large shrimp, peeled and deveined
1/4 c olive oil
2 Tbsp lemon pepper seasoning
2 c grilled peach & mango salad, see recipe below
8 sprig(s) fresh mint
4 large lime, cut into quarters
2 c fresh grilled peach & mango salad recipe
1 1/2 c fresh peaches, peeled, pitted and cut into quarters
1 c fresh mango, peeled, pitted and small diced
1/4 c red bell pepper, cut into small dice
1/4 c red onion, cut into small dice
1/4 c fresh mint, thinly sliced
1 1/2 Tbsp fresh cilantro, chopped

Steps:

  • 1. Place the water into a large pot and bring to a boil, add the honey, brown sugar, salt, tea, spices and seasonings; stirring with a whisk to dissolve the sugar. Let the brine cool to room temperature and then refrigerate overnight.
  • 2. Arrange the shrimp in a single layer in a shallow pan and pour the Sweet Tea Brine over the shrimp; cover the pan with saran. Place the shrimp in the refrigerator and marinate for 2 hours turning frequently in the brine.
  • 3. Remove the shrimp from the brine and blot dry with absorbent paper towels. Pour the olive oil over the shrimp and evenly coat with the oil; generously season the shrimp on all sides with the lemon pepper seasonings.
  • 4. Over medium heat lightly spray the grates of a gas grill with non stick vegetable cooking oil. In batches evenly arrange the shrimp on to the grates and grill over a medium hot fire. Cook the shrimp for approximately 3 minutes turning using BBQ tongs. Grill the second side of the shrimp for an additional 2-3 minutes or until the shrimp are fully cooked.
  • 5. Remove the shrimp from the grill and place in a warm area to rest for 4-5 minutes.
  • 6. To serve: In the center of 4 decorative serving platters arrange 1/2 cup of the Grilled Peach and Mango Salad. Attractively arrange 4 shrimp around the perimeter of each platter. Garnish each platter with 2 sprigs of fresh mint and a wedge of lime. Enjoy; happy summer time grilling!!

  • 8. Toss the peaches gently in a separate mixture of 2 tablespoons of olive oil, 1 tablespoon of molasses, and 1 tablespoon of brown sugar. Lightly spray the grates of a gas grill with non stick vegetable cooking oil. Place the peach quarters onto the grates and grill over medium high heat for 1-2 minutes on each side or until the peaches are nicely caramelized, frequently brushing the peaches with the molasses mixture while they are grilling.
  • 9. Remove the peaches from the grill to cool. Cut the peaches into medium size dices. Place all the salad ingredients into a mixing bowl and combine. Gently stir with a spoon before serving.

1/2 cup KRAFT Zesty Italian Dressing

Juice from 1 large lime

2 ears corn on the cob, husked
6 corn tortillas (6 inch)
1 cup matchlike jicama sticks
1 cup finely shredded romaine lettuce
1 plum tomato, seeded, chopped
3 radishes, cut in half, then sliced

Steps:

  • Heat grill to medium-high heat.
  • Mix mayo and hot sauce; refrigerate until ready to use. Mix dressing, honey and lime juice. Pour 1/4 cup over shrimp in large bowl; toss to coat. Let stand 15 min. to marinate. Meanwhile, grill corn 15 min. or until tender, turning occasionally. Remove corn from grill; set aside.

Freshly ground black pepper, to taste

Steps:

  • Grilled Eggplant Slice eggplant into ½ inch thick round slices. Drizzle olive oil and squeeze lime over eggplant and let sit several minutes until juice is absorbed. Sprinkle spices over slices covering thoroughly. Grill 5-8 minutes on each side until slightly charred. Grilled Shrimp Toss shrimp with all of the above ingredients. Grill the shrimp for 3 minutes. Turn and cook on the other side for 3 minutes, or until done. Warm Honey Mustard Dressing Add all ingredients in a small metal bowl and whisk until thoroughly incorporated. 1 bag (2 lb) frozen uncooked medium (31 to 35 count) shrimp, peeled (tail shells removed) and deveined, thawed

Steps:

  • Soak skewers in water 30 minutes to prevent burning. Meanwhile, heat gas or charcoal grill.
  • In small bowl, mix honey, butter, garlic-pepper blend and chives until thoroughly combined. On each skewer, thread about 3 shrimp, leaving 1/4-inch space between each. Brush honey-butter mixture on both sides of shrimp.
  • Place skewers on grill over medium heat. Cover grill; cook 5 to 7 minutes, turning once, until shrimp are pink. Serve warm.

1/4 tablespoon fresh ground black pepper
1 cup Worcestershire sauce
2 tablespoons white wine
2 tablespoons Italian salad dressing
1 lb shrimp, peeled and deveined
1/4 cup honey
1/4 cup butter, melted
2 tablespoons Worcestershire sauce

Steps:

  • Combine honey, butter, and 2 tablespoons Worcestershire sauce and set aside for basting.
  • In plastic bag or bowl, combine remaining ingredients, including shrimp, and marinate for 1 hour.

1 1/2 lbs medium shrimp, peeled, de-veined
salt
2 scallions, thinly sliced
1 cup double-strength orange spice brewed tea, cooled
1/4 cup honey
1/4 cup rice vinegar
1/4 cup soy sauce
1 tablespoon peeled finely chopped fresh ginger
1/2 teaspoon fresh ground black pepper

Steps:

  • In a plastic bag, combine tea, honey, vinegar, soy sauce, ginger and pepper, to make marinade. Remove 1/2 cup marinade; set aside for dipping sauce. Add shrimp to marinade remaining in plastic bag, turning to coat. Close bag securely and marinate in refrigerator 30 minutes.
  • Remove shrimp from marinade; discard marinade. Thread shrimp onto 8 skewers, dividing evenly. Grill over medium hot coals 4 to 6 minutes or until shrimp turn pink and are just firm to the touch, turning once. Season with salt, to taste.
  • Meanwhile, prepare dipping sauce by placing reserved 1/2 cup marinade in small saucepan. Bring to a boil over medium-high heat. Boil 3 to 5 minutes or until slightly reduced. Stir in green onions.

1 (8 ounce) bottle Italian salad dressing
1 cup honey
1/2 teaspoon garlic, minced
2 lbs large shrimp, peeled and deveined

Steps:

  • In a small bowl, combine the salad dressing, honey and garlic; set aside 1/2 cup.
  • Pour remaining marinade into a large resealable plastic bag; add the shrimp. Seal bag and turn to coat; refrigerate for 1-4 hours. Cover and refrigerate reserved marinade for basting.
  • Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Thread shrimp onto eight metal or soaked wooden skewers.
  • Grill, uncovered, over medium heat for 1 to 1-1/2 minutes on each side. Baste with reserved marinade. Grill 3-4 minutes longer or until shrimp turn pink, turning and basting frequently.

1 c orange juice
3/4 c honey
2 tsp salt
1/3 c lime juice
1/3 c dijon mustard
2 Tbsp chilli powder
2 Tbsp paprika
2 tsp black and red pepper blend
2 tsp oregano
1 tsp garlic or onion powder
30 jumbo shrimp
12 bambo skewers soaked in water 30 minutes

Steps:

  • 1. Place orange juice, honey, lime juice, mustard and dry seasonings in a blender and blend on high for 1 minute until smooth. Pour into a saucepan and simmer over medium heat for 12 minutes or until thickened and reduced by half. Divide the glaze into 2 plastic containers, seal tightly and refrigerate until ready to use. Double thread 5 shrimp onto 2 parallel skewers. Cook shrimp over hot coals for about 3 minutes on each side or until completely pink, basting with one container of the glaze during grilling. Remove from grill and baste with remaining glaze.

  • In bowl, mix garlic powder, Worcestershire, wine & dressing. Add shrimp. Cover & marinate in refridgerator for 1 hour. In small bowl stir together honey, melted butter & Worcestershire. Grill shrimp 2-3 minutes on each side. Baste with honey-butter sauce while grilling.
