2 large sweet potatoes, peeled and cubed
½ cup honey
¼ cup olive oil
2 tablespoons ground cinnamon
1 tablespoon honey, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss sweet potatoes, 1/2 cup honey, and olive oil together in a bowl until potatoes are completely coated. Spread potatoes out on a baking sheet and drizzle any remaining olive oil mixture over the top.
  • Bake in the preheated oven until tender, 25 to 30 minutes. Cool on the baking sheet, 5 to 10 minutes; dust potatoes with cinnamon. Transfer sweet potatoes to plates and drizzle with remaining honey.

2 pounds red-skinned sweet potatoes
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon fresh lemon juice
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Peel and cut the sweet potatoes into 1-inch pieces and put in a 9 by 13 baking dish. In a small bowl whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

Simple yet so delicious, this one of my family's favorite sweet potato dishes and I have made this many times for the holidays and always receive rave reviews! --- If you double the recipe bake in a large roasting pan or use two 13x9 baking dishes, when I am making these for company, I use a large foil pan and just throw the pan away after, saves cleaning :)

3 -3 1/2 lbs sweet potatoes, cut into about 2-inch pieces (or 3-3 1/2 lbs yams, cut into about 2-inch pieces)
1/2 cup butter
1/4 cup honey
2 teaspoons lemon juice
salt (to taste)
fresh ground pepper (to taste)

Steps:

  • Set oven to 350 degrees F.
  • Pat all the potato cubes thoroughly dry using paper towel/s.
  • Arrange the sweet potato cubes (if possible in a single layer) in a lightly-buttered 13 x 9-inch dish.
  • In a small saucepan or the microwave stir together butter, honey and lemon juice until butter melts.
  • Pour butter mixture over the sweet potatoes; toss well to coat.
  • Sprinkle with salt and lots of black pepper.
  • Bake uncovered until just fork-tender stirring and turning with a spatula or wooden spoon (about 40 minutes, might take shorter or longer time depending on the size of sweet potato pieces, try not overbake the sweet potatoes or they will be too soft).

1/2 cup honey
1/2 stick unsalted butter
3 to 4 dried bay leaves
1 1/2 teaspoons ground allspice
Coarse salt and pepper

Steps:

  • Preheat oven to 450 degrees. Arrange sweet potatoes in a single layer on a rimmed baking sheet. 1/4 cup olive oil

Honey
Chopped fresh parsley

Steps:

  • Preheat oven to 400°F. Peel sweet potatoes, then quarter lengthwise. Rinse potatoes with cold water; pat dry with paper towels. Place potatoes in large bowl; add olive oil and salt and toss to coat. Arrange in single layer on rimmed baking sheet. Roast 45 minutes.
