1/2 cup walnut pieces
Kosher salt and freshly ground black pepper
1 1/2 pounds broccoli crowns (about 2 small crowns)
1 cup julienned or coarsely grated carrots
2 tablespoons white wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 cup olive oil

Steps:

  • Heat a medium skillet over medium heat. Add the walnut pieces and cook, stirring occasionally, until evenly toasted, 6 to 8 minutes. Remove to a small bowl.
  • Bring a medium pot of salted water to a boil.
  • Cut the broccoli florets into bite-sized pieces and thinly slice the stems. Have a bowl of ice water ready. Cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Add the carrots and cook 30 seconds more. Drain the broccoli and carrots and submerge in the ice water to stop the cooking. Drain well and pat dry.
  • Whisk together the vinegar, honey and Dijon in a medium bowl with 1/2 teaspoon salt and pepper to taste. Gradually add the olive oil while whisking constantly. Add the broccoli, carrots and walnuts and toss to coat.

Add in some cooked shrimp or chicken breast if desired! the dressing can be made up to 2 days in advance, it will need a minimum of 2 hours chilling time to blend flavours, the dressing will make about 3/4 cup but it can easily be doubled. YUM-MY!!! This salad may be one of my new favorites. I could not stop munching on this one all day long. I'm putting this on my must-make list for the next time guests stop by.

VINAIGRETTE:
1/3 c vegetable oil
1/4 c apple cider vinegar
3-4 Tbsp honey
1 tsp stone ground dijon mustard
1 clove garlic, smashed and minced
SALAD:
4 medium golden beets, tops removed and scrubbed
2 medium red beets, tops removed and scrubbed
1-2 Tbsp vegetable oil
1/4 c diced red onion
1/2 c sweetened dried cranberries
1 c baby spinach, packed
1/2 c toasted pecans
1/2 c gorgonzola crumbles

Steps:

  • 1. To make vinaigrette: Put oil, vinegar, honey, mustard and garlic in a jar with a tight fitting lid. Shake well to mix. Set aside.
  • 2. Preheat oven to 400 degrees F. Place golden beets on a large piece of aluminum foil and drizzle with oil. Wrap tightly, making a packet. Place on a baking sheet. Do the same with the red beets. Roast for 1 hour to 1 hour 15 minutes or until knife inserted in largest beet meets no resistance. Remove from oven and cool.
  • 3. Remove skins by rubbing off with hands under a stream of cool water.
  • 4. To make salad: Roughly chop beets into bite size chunks. Place in a large bowl. Add the onion, dried cranberries, spinach, pecans and gorgonzola. Give the vinaigrette another shake to mix well then pour over beet mixture in bowl. Toss GENTLY to combine.
  • 5. NOTE: to toast pecans - place in a single layer on a large non-stick baking sheet and bake at 350 degrees F. for 10-12 minutes, stirring often to prevent burning, until toasted and fragrant.

1 1/2 teaspoons Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon water
1/3 cup extra virgin olive oil
1 teaspoon honey
salt and pepper, to taste
8 ounces medium pasta shells
4 red radishes, sliced thin
1 cup sweet peas, defrosted
1/4 cup sliced ripe olives
4 ounces cheddar cheese, cut in 1/2 inch cubes
1/4 cup finely chopped red onion
1/8-1/4 cup basil, chiffonade
salt and pepper, to taste

Steps:

  • In a jar with a tight fitting lid, combine the dressing ingredients and shake vigorously until well combined, set aside.
  • In a large pot bring 2 quarts of salted water to a rapid boil, stir in pasta and cook for 10 minutes or until al dente.
  • Drain the pasta and rinse for 2 to 3 minutes under cool water, drain well.
  • In a large bowl combine the pasta, radishes, peas, olives, cheese and onion. Stir in the basil, drizzle with dressing and stir to combine.
  • Chill and enjoy.

1 pound filet mignon, trimmed
Canola oil, for brushing
Kosher salt
2 teaspoons coarsely ground black pepper
8 ounces goat cheese, such as Bonne Bouche
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped chives
1 tablespoon finely chopped fresh tarragon
1 teaspoon dried lavender or a mix of fresh and dried
Freshly ground black pepper
1/4 cup mild-variety honey, such as Hamptons Honey Company
3 tablespoons champagne vinegar
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper

Butter lettuce leaves, for filling

Steps:

  • For the filet mignon: Remove the filet from the refrigerator 30 minutes before grilling. Heat a charcoal or gas grill to high for direct grilling.
  • For the fine herb goat cheese: Mash together the cheese, parsley, chives, tarragon, lavender and black pepper in a small bowl.
  • For the vinaigrette: Whisk together the honey, vinegar, mustard and salt and pepper to taste in a bowl until combined. Slowly whisk in the olive oil until emulsified.
  • Brush the filet mignon with the canola oil and sprinkle with salt. Press the pepper onto the entire surface.
  • Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 6 minutes per side. Remove from the grill and let rest on a cutting board for 5 minutes before thinly slicing
  • Fill the lettuce leaves with a few thin slices of the filet, a small dollop of the goat cheese and a drizzle of the vinaigrette.
