1 cup (236 milliliters) almond milk or dairy milk, warm (105 to 110 degrees F)
2 1/4 teaspoons active dry yeast
1/4 cup (50 grams) plus 1 teaspoon sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
Pinch ground cardamom
4 1/2 cups (585 grams) all-purpose flour, plus additional for dusting
2 large eggs
1/2 cup (100 grams) flavorless oil, plus additional for oiling the bowl
1/4 cup (84 grams) honey
1 teaspoon vanilla extract
Nonstick cooking spray, for the baking dish
3/4 cup apple butter (store-bought or homemade)
1 teaspoon ground cinnamon
6 ounces almond paste, grated on the big holes of a box grater or finely chopped
1 large egg
1 1/2 cups blanched almonds
1/4 cup honey
1 teaspoon almond extract
1/4 teaspoon kosher salt
Zest from 1/2 lemon
6 tablespoons almond milk
Toasted sliced almonds, for topping

Steps:

  • For the rolls: Combine the milk, yeast and 1 teaspoon sugar in a bowl and swirl together. Let sit until foamy on top, about 5 minutes.
  • Combine the cinnamon, salt, cardamom and 3 1/2 cups flour in a large bowl or the bowl of a stand mixer fitted with the dough hook. Whisk together the eggs, oil, honey and vanilla in a medium bowl. Stir the yeast mixture and oil mixture into the dry mixture and then knead, either on a work surface or with the dough hook, adding up to 1 cup more flour as needed, until the dough is smooth and slightly sticky, 15 minutes by hand and 7 to 10 minutes by mixer. Place in an oiled bowl, cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
  • For the filling: Spray a 9-by-13-inch baking dish with cooking spray and set aside.
  • Turn the dough out onto a clean surface and roll it out, dusting with flour as needed to prevent sticking, into an 18-by-12-inch rectangle. Spread it with the apple butter and sprinkle with the cinnamon and almond paste. Roll up tightly starting from a long end (so that it results in an 18-inch-long roll), and pinch the edges to seal. Cut into 12 rolls and place in the prepared baking dish. Cover with plastic wrap and refrigerate overnight. (Or cover loosely with plastic wrap and let rise at room temperature for 1 hour, then go right to preheating the oven.)
  • When ready to bake, remove the rolls from the refrigerator and loosen the plastic wrap. Let sit at room temperature until puffy, 1 to 2 hours.
  • Preheat the oven to 350 degrees F.
  • Beat the egg with a splash of water in a cup. Remove the plastic wrap from the baking dish and brush the rolls with the egg wash. Bake until the rolls are lightly browned and have an internal temperature of 190 degrees F, 35 to 40 minutes.
  • For the frosting: Meanwhile, blend the blanched almonds in a food processor, scraping the sides occasionally, until creamy and spreadable, 5 to 10 minutes. Add the honey, almond extract, salt and lemon zest and continue to blend (it may clump together at this point, and that's okay) as you drizzle in the milk. Blend until creamy. (This can be made the day before and stored in an airtight container in the fridge.)
  • When the rolls come out of the oven, spread them with the frosting, sprinkle with the sliced almonds and serve.

4 cups boiling water
2 cups rolled oats
1 ⅓ cups brown sugar
6 tablespoons vegetable oil
2 (.25 ounce) packages active dry yeast
⅔ cup lukewarm water
4 teaspoons salt
8 cups all-purpose flour, or more as needed
1 cup butter, softened
3 tablespoons honey
⅛ teaspoon ground cinnamon

Steps:

  • Stir boiling water and oats together in a bowl; set aside to thicken and cool, 10 to 15 minutes. Stir brown sugar and vegetable oil into oat mixture.
  • Dissolve yeast in lukewarm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes. Stir yeast mixture and salt into oat mixture. Beat flour, 1 cup at a time, into oat mixture until dough is soft. Turn dough onto a floured surface and knead for 10 minutes.
  • Place dough in an oiled bowl and cover with a damp towel; let rise until doubled in size, about 1 hour.
  • Punch dough down and form into rolls; arrange on baking sheets. Let rise again until doubled in size, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until lightly browned, 20 to 25 minutes.
  • Beat butter, honey, and cinnamon together in a bowl using an electric mixer until creamy and smooth. Serve honey butter with rolls.

Steps:

  • Mix milk, brown sugar, and white sugar together in a microwave-safe bowl. Microwave until warm, 40 to 50 seconds. Stir in yeast.
  • Whisk 6 tablespoons butter and eggs in a separate bowl. Whisk into the milk mixture until just combined, 30 to 60 seconds. Stir in flour, 1/2 cup at a time, mixing well after each addition until dough is smooth and still wet.

CINNAMON HONEY BUTTER:
2 1/4 teaspoons (1-envelope) active dry yeast
1/4 cup lukewarm water
1 cup lukewarm milk
3 tablespoons melted butter, slightly cooled
1/4 cup sugar
4 cups all-purpose flour
1 large egg
1 teaspoon salt
Melted butter for basting rolls
1 stick butter, softened
2 tablespoons cinnamon (I used one, and was happy with that).
2 tablespoons honey
2 tablespoons powdered sugar

Steps:

  • Combine yeast and lukewarm water in the bowl of your stand mixer and let stand for 10 minutes (until yeast starts to foam and bubble). Add the milk, melted butter and sugar to the yeast mixture and give it a good stir (using the paddle attachment). Add 1 cup to 1 1/2 cups of flour to make a medium batter. (You're looking for a pancake-like consistency.) Next, add the egg and salt and incorporate well. Switch to the dough hook and with the mixer running on medium speed, add remaining flour. Continue mixing for 5 minutes or until dough is smooth. Sprinkle some flour onto the counter and place dough on top. NOTE: I have a silicone baking mat, and didn't find adding flour to be necessary. Let rest for 10 minutes. Meanwhile, grease another bowl with oil. Lift up the dough, and stretch it into a large ball, then place the dough inside. Cover with a clean kitchen towel and place in a warm place until dough has doubled in size, about 1 hour. Notes: If you don't own a stand mixer, I have a Danish Dough Hook that works great. Mix the dough to the pancake batter stage, then start kneading in the rest of the dough. Frankly, because I love to bake bread, I cannot imagine not owning a stand mixer! My oven was in use, so I covered the bowl with a shower cap (great trick) and set it on top of my stove. In one hour, my dough had doubled! Or, turn your oven on to WARM for 1 minute and turn it off. This will accelerate the proofing of the dough as well. Remove the dough, from the bowl, and punch dough down. Place dough on floured surface and roll out into a square about 1/2 inch thick. (You could do this by hand, but I got a more even rectangular shape.) Using a pizza cutter**, cut dough into desired shapes. Place dough squares onto a parchment-lined baking sheet (or two, depending on how many rolls you end up with). Note: I recently purchases a pizza blade, through Amazon. I absolutely love this tool, because it's perfect for cutting bar cookies or rolls. Cover with a towel and let rise again until doubled in size, about 45 to 60 minutes. (Mine was doubled in 30 minutes) Preheat oven to 350°F and bake for 10 to 15 minutes or until tops are golden brown. Remove from oven and immediately baste with melted butter. Serve dinner rolls warm with the cinnamon-honey butter. You will love it!

1 package active dry yeast
½ cup warm water
½ cup granulated sugar + 1 tablespoon
7 to 8 cups all-purpose flour
2 eggs

Honey Cinnamon Butter
½ cup butter
½ cup powdered sugar
½ cup honey
1 teaspoon cinnamon

Steps:

  • Instructions In a small saucepan, bring milk to a boil and remove from heat. Allow to cool to room temperature.. In a small microwave-safe dish, melt butter and set a side. In a separate bowl, mix together yeast, warm water, and 1 tablespoon sugar. Cover and set aside for 5 minutes while the yeast activates and foams. In a large mixing bowl, add yeast mixture, ½ cup sugar, milk, and 3½ cups flour. Beat together for two minutes. Add butter, eggs, and salt. Mix well. Add the remaining flour a half cup at a time and continue mixing until the dough begins to separate from the sides of the bowl. Knead the dough for 5 minutes. If the dough seems sticky, add 1 tablespoon of flour at a time. Grease the inside of a large mixing bowl, place the dough in the bowl and turn over once to grease the top. Loosely cover the bowl with plastic wrap and allow the dough to rise in a warm place until double in size (about 45 mins to 1 hour). Punch down the dough with your fists and turn out onto a lightly floured surface. Roll the dough out until ½" thick. Take one edge of the dough and fold the dough over in half. Using a rolling pin, lightly roll over the dough to seal it together. Cut the dough into 2-inch squares and place on a greased baking sheet. Cover lightly with plastic wrap and allow the dough to rise double in size (about 45 mins to 1 hour). Bake at 350 degrees F for 15 minutes or until golden brown. Remove from oven and immediately brush on butter to the tops of the rolls. Best when served warm! Honey Cinnamon Butter Whip together all ingredients in a medium-size bowl. Serve on rolls while warm or store in an airtight container in the fridge.

1/2 cup water, warmed to 115 degrees
2 tablespoons packed light-brown sugar
1 package active dry yeast (1 scant tablespoon)
4 large egg yolks
1 1/2 teaspoons salt
3 tablespoons unsalted butter, melted, plus more for tin
1 cup stone-ground yellow cornmeal
2 cups all-purpose flour, plus more for dusting
Vegetable oil, for bowl
8 tablespoons (1 stick) unsalted butter, slightly softened
1/2 cup honey
Pinch of salt

Steps:

  • With a wooden spoon, stir warm milk, warm water, and sugar in the bowl of an electric mixer. Sprinkle yeast on top; let stand until foamy, about 10 minutes.
  • Fit mixer with the dough hook. Add 3 egg yolks, the salt, butter, cornmeal, and flour to yeast mixture. Mix on low speed. Raise speed to medium; mix until dough is tacky but doesn't stick to fingers, 6 to 8 minutes. Transfer to a large oiled bowl, and loosely cover with plastic wrap.
  • Let dough rise in a warm spot until doubled in bulk, about 30 minutes.
  • Preheat oven to 400 degrees. Butter 12 cups of a standard muffin tin. On a lightly floured work surface, divide dough into 12 equal pieces. Roll into balls; transfer to tin. Loosely cover with plastic wrap. Let dough rise until doubled in bulk, about 20 minutes.
  • Whisk together remaining yolk and tablespoon milk; brush over dough. Bake until just golden, 15 to 20 minutes.
  • Meanwhile, make honey butter: Put butter in the bowl of an electric mixer fitted with the paddle; mix on medium-high speed until smooth. On low speed, add honey in a slow, steady stream. Mix in salt. Serve with muffins.

12 rhodes frozen dinner rolls, thawed but still cold
4 tablespoons butter
2 tablespoons honey

Steps:

  • Cut each roll into 4 pieces.
  • Melt butter and honey together and stir to combine.
  • Dip each dough piece into the honey butter mixture and place 4 pieces into each cup of a sprayed muffin pan.
  • Drizzle any left over honey butter mixture over rolls.
  • Cover with sprayed plastic wrap and let rise until dough reaches the top of the cup.
