These are amazing. Friends often request (more like demand, actually) that I bring these to get-togethers. They are so easy to make, too.

Number Of Ingredients 9

1/3 cup butter, softened
3/4 cup sugar
1/3 cup honey
2 teaspoons vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/2 teaspoon salt
1 cup chopped walnuts or 1 cup pecans

Steps:

  • Mix ingredients in order listed.
  • Pour into greased 8 inch pan.
  • Bake at 350 F for 30 to 40 minutes or until brownies begin to pull away from the edge of the pan (keep an eye on them the last few minutes).
  • Cool in pan.
  • Cut into squares.
  • No frosting necessary.
  • These are amazingly sweet and delicious on their own.

Found this at gildedfork.com who asked Baker's Edge to come up with a recipe and "here is the wonderful combination of honey and mascarpone! Let's see, if you won't faint over this indulgent array of ingredients. The brownies are excessive enough but with the warm sauce it is even better!" As if you could improve upon this awesome flavor." Update: 05/20/2008 A reviewer made these comments about the baking times. "However, in a 9x13 pan, 45 minutes is way too long for them. I baked them for 30 minutes, and they were still slightly overdone around the edges. Next time I will bake them for 25 minutes."

3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
6 ounces bittersweet chocolate
8 ounces mascarpone cheese
6 tablespoons butter, softened
1 2/3 cups sugar
4 eggs
2 teaspoons vanilla extract
1 cup heavy cream
7 ounces bittersweet chocolate, chopped into small pieces
3 ounces unsweetened chocolate, chopped into small pieces
3 tablespoons honey (Mesquite honey is what is recommended)

Steps:

  • BROWNIES:.
  • Preheat oven to 350ºF.
  • Spray the Baker's Edge pan(9x9" or 9x13") with non-stick cooking spray.
  • Combine the flour, baking powder, and salt in a small bowl.
  • Melt 1/2 cup butter with the chocolate.
  • Meanwhile, in the bowl of a mixer using a paddle attachment, beat the mascarpone, 6 tablespoons of softened butter, and the sugar until light and smooth.
  • Add the eggs to the cheese mixture one at a time and scrape the bowl thoroughly after each egg is added.
  • Add the vanilla and mix.
  • Add the melted chocolate and mix just until combined.
  • Finally, add the dry ingredients and mix slowly until just combined.
  • Pour into prepared pan and bake approximately 45 minutes or until toothpick is inserted and comes out clean.
  • Remove from oven and allow to cool.
  • NOTE: The brownies will rise during the baking process, but after being removed from the oven will collapse to normal height.
  • PREPARE THE SAUCE:.
  • Heat the heavy cream in a saucepan over medium heat just until starting to boil.
  • Remove the pan from the heat and add both types of chocolate.
  • Let the chocolate sit a minute and then stir until completely melted; add honey.
  • Place brownie on plate and drizzle with sauce; then eat and enjoy!

COCOA BROWNIES W/ HONEY AND APPLESAUCE

For you chocolate freaks that want to get your chocolate fix on and still feel healthy about it. I created this recipe using raw honey and applesauce. You can also use homemade pear sauce and you might experiment with a mix of bananas, applesauce and pears. I have not tried it with other flours but you might experiment with that too. I top it with a pudding made from bananas, avocadoes, cacao powder and honey (in the food processor). The pudding tastes best if allowed to rest overnight. YUUMMM! Because it's fairly healthy, I like to serve with a brunch.

1 cup raw honey
1/2 cup margarine or 1/2 cup butter
2 eggs
2 tablespoons unsweetened cocoa powder or 2 tablespoons raw cacao powder
1 1/2 teaspoons salt
1 teaspoon baking soda
2 cups all-purpose flour
2 cups applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream honey and margarine.
  • Add eggs and cream a bit more.
  • Sift cocoa, salt, baking soda and flour ingredients and add to honey mixture, alternately with applesauce.
  • Pour into a lightly oiled 10-1/2 X 15-1/2 inch jelly roll pan.

This recipe is delicious. I love it because it uses carob instead of chocolate. Carob is similiar to cocoa, except it requires about half the sugar to get it to be sweet like chocolate. It was sent to me by Holy Food Imports (www.holyfoodimports.com) which is my favorite food company, after purchasing their products, with permission to share!

1 teaspoon vanilla extract

1 teaspoon baking powder

Steps:

  • Preheat oven to 350*F
  • Blend together melted butter, honey & carob spread in a bowl. Add eggs and vanilla; mix well.

1/2 cup butter (do not substitute)
8 ounces white chocolate chips
8 ounces semi-sweet chocolate chips
2 large eggs
1/2 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon salt
1 cup flour

Steps:

  • Melt butter in small saucepan over low heat.
  • Remove from heat and add 4 oz of white chocolate.
  • DO NOT STIR!
  • In a large bowl, beat eggs until frothy.
  • Add sugar, vanilla, flour, salt and mix well.
  • Add butter/white chocolate mixture.
  • Mix until just combined.
  • Add remaining white chocolate chips and semi sweet chips.
  • Pour into greased 8 x 8 pan.
  • Bake 350°F for 30 minutes.
