1 tablespoon butter or margarine
1 medium apple, cut into thin wedges
2 tablespoons maple-flavored syrup
1/4 teaspoon ground cardamom

Steps:

  • Heat 1 inch water (salted if desired) to boiling in 1-quart saucepan. Add carrots. Cover and heat to boiling; reduce heat. Simmer 12 to 15 minutes or until tender; drain.
  • Heat butter in 6-inch skillet over medium heat until hot. Cook apple wedges in butter 2 minutes, stirring occasionally. Stir in syrup and cardamom. Cook 3 to 5 minutes, stirring frequently, until apples are evenly glazed. Stir into carrots.

2 pounds medium carrots, cut into 1-inch pieces
1/2 cup unsweetened apple juice
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/4 teaspoon salt
1/4 cup chopped pecans or walnuts, toasted, optional

Steps:

  • In a 3-qt. slow cooker, combine carrots and apple juice. Cook, covered, on high until carrots are tender, 3-4 hours., Remove carrots from slow cooker; discard juices. Return carrots to slow cooker. Stir in brown sugar, butter and salt. Cook, covered, on high until carrots are glazed, 15-20 minutes longer. If desired, sprinkle with pecans.

2 cups water
1 tablespoon butter
1/4 cup packed brown sugar
1 tablespoon lemon juice
1/8 teaspoon ground cinnamon
1 cup diced peeled apple
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a saucepan, cook carrots in water until crisp-tender; drain. Add butter, brown sugar, lemon juice and cinnamon; mix well. Stir in apple. Cover and simmer for 10 minutes, stirring occasionally. Combine cornstarch and cold water; stir into carrot mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Simmer, uncovered, until glazed, 2-3 minutes, stirring constantly.

1 cup shredded apples
1/2 cup shredded carrots
1/2 cup golden raisins
1 1/2 cup clover honey
1 cup brown sugar
3 tablespoons Cognac
1/2 cup vegetable oil
3 eggs
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoon cinnamon
1/4 teaspoon cloves
3/4 teaspoon cardamom
3/4 teaspoon ginger
1/2 teaspoon salt
1/2 cup toasted pecans
1 tablespoon melted butter
1/2 vanilla bean, scraped
1/4 cup honey
3 cinnamon sticks
Zest of 2 lemons
1-ounce Cognac
12 figs cut in half through the poles
1/2 cup heavy cream whipped to stiff peaks

Steps:

  • Combine the butter, vanilla bean, honey, cinnamon sticks, lemon zest and Cognac in a shallow pan. Place figs flesh side down (skin side up) in the mixture. Cover with foil and roast in a 325-degree oven for 30 minutes. Remove from the oven and let figs sit in mixture until ready for use.
  • CAKES: Preheat oven to 350 degrees. Grease 12 individual muffin tins. Use a muffin tray if individual trays are not available. Using a box grater, grate the apples and carrots. Set aside in a medium bowl. Add the raisins. In a large bowl combine the honey, brown sugar, cognac, vegetable oil, and mix until well combined. To this add the eggs and mix again until combined. To this mixture add the carrots, apples and raisins. Stir. At this point all the wet ingredients should be in the same bowl. In a medium bowl, combine all of the remaining dry ingredients, except the pecans. Sift together the dry ingredients so that all the spices evenly mixed together. Add all the dry ingredients to the wet ingredients. Fold together just until well combined. Stir in pecans. Pour mixture into greased muffin tins. Bake at 350 degrees for about 45 minutes. (While the cakes are baking prepare the figs for the garnish.) A toothpick inserted into the cake should come out clean when removed. Cool slightly and glaze. Melt 2 tablespoons of butter and to this add 1/2 cup of honey, stir until it comes together. Using a pastry brush, glaze the tops of the cakes, and lean 2 fig halves across each other and against the side of an individual honey cake. Nap sauce around figs. Place a quenelle of whipped cream on top of cake.

4 large apples, peeled, cored and sliced
5 tablespoons flour

1/2 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons margarine
1/2 cup orange juice
1/2 teaspoon salt (optional)

Steps:

  • Set oven to 350 degrees.
  • Grease a larger-size casserole dish (any size to hold the ingredients).
  • Cook or steam the carrots in a large saucepan in boiling water for 5 minutes (no more than 5 minutes!); drain.
  • Layer carrots and apples in the bottom of the baking dish.
