ALMOND CRUSTED CHICKEN TENDER SALAD WITH ORANGE-TERIYAKI-HONEY DRESSING
Steps:
- 1. Season chicken tenders with pepper. 2. Beat egg with teriyaki sauce in shallow bowl until well blended. 3. Place flour in shallow dish. 4. Combine bread crumbs and almonds together in separate shallow dish. 5. Dust both sides of chicken with flour, then dip into egg mixture and finally coat with almond mixture. 6. In 12-inch skillet, heat 2 Tbsp. vegetable oil over medium-high heat. 7. Add chicken and cook 6 to 7 minutes, or until no longer pink in center, turning over once and adding more oil as needed. 8. Divide salad greens among 4 dinner plates.

- Preheat oven to 350 degrees F (175 degrees C). Arrange chicken parts in a baking dish.
- Melt butter in a skillet over medium heat, and cook onion 5 minutes, until tender. Stir in honey, almonds, and lemon juice, and continue cooking 2 minutes, or until heated through. Pour over the chicken, coating each piece.
- Cover dish with aluminum foil. Bake chicken 30 minutes in the preheated oven. Remove foil, and continue baking 30 minutes, until chicken juices run clear.

- Pound chicken breasts until approx 1/2-3/4 inch thick. Sprinkle with salt and garlic powder.
- Brown in a heavy pan in 1 tbsp of oil.
- While this is cooking, melt butter in seperate pan over medium heat and coarse chop almonds (a quick chopper works great for this). Add almonds to butter and saute for 3-5 minutes, or until almond are coated in butter.
- When chicken is done, drizzle 1 tbsp of honey on each chicken breast.
- Remove from heat, top with buttered almonds.

Steps:
- Combine 2 tablespoons honey, 1 teaspoon oil, and vinegar in a medium bowl; stir well.
- Add chicken, stirring to coat.
- Cover and marinate in refrigerator 15 minutes, stirring occasionally.
- Combine remaining 1 tablespoon honey, chicken broth, and next 4 ingredients in a small bowl, stir well, and set aside.
- Remove chicken from bowl, and discard marinade.
- Heat remaining 1 teaspoon oil in a large nonstick skillet over medium-high heat.
- Add garlic; saute' 30 seconds.
- Reduce heat to medium; add chicken, and cook 2 minutes on each side.
- Add chicken broth mixture; cover and cook 6 minutes or until chicken is done.
- Place chicken breasts on individual plates; set aside, and keep warm.
- Bring broth mixture to a boil; stir in 1/4 cup almonds, and cook 4 minutes.
- Spoon sauce evenly over each chicken breast.
- Garnish with green onions and unshelled almonds, if desired.
