2 1/4 cups cocoa
1 tablespoon table salt
Whole milk for serving

Steps:

  • In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
  • For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

3 cinnamon sticks (must be fresh and fragrant)
5 whole star anise
8 whole allspice berries
2 teaspoons ground (or freshly grated) nutmeg, plus more for garnish
8 whole black peppercorns
5 to 6 whole cardamom pods, cracked
1/4 teaspoon kosher salt
5 large eggs, at room temperature
1 cup granulated sugar
1/4 cup bourbon (Knob Creek or Maker's Mark)
1/4 cup dark rum (Zacapa)
Whipped cream, for garnish

Steps:

  • Melt the white chocolate in a heatproof bowl over simmering water, stirring until melted. Set aside and keep warm. In a heavy-bottomed saucepan, heat the half-and-half, cream, vanilla seeds and pod, orange zest, spices, and salt over low heat until it comes to a boil. Stir occasionally to prevent scorching. Remove from the heat, cover, and steep for 20 minutes. In the bowl of a stand mixer fitted with the whip attachment, whip the eggs and sugar on high speed until thick and ribbony, 3 to 4 minutes. Strain the spices from the cream, return the cream to the pan, and reheat to a simmer. Lower the speed of the mixer to low. Slowly ladle some of the hot cream into the eggs, warming them up. Add them back to the pot of cream. Attach an instant-read thermometer to the pot and cook the cream over low heat, stirring with a rubber spatula, until the cream reaches 170 degrees F. Remove the saucepan from the heat; pour the mixture through a fine mesh strainer. This will remove any pieces of cooked egg and keep the eggnog smooth. Whisk the hot strained eggnog into the bowl of white chocolate. Stir in the bourbon and rum. Pour into 4-ounce cups. Garnish with whipped cream, grated nutmeg, and homemade marshmallows. Best if consumed while hot, creamy, and delicious.

Nonstick spray, for pan
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1 egg, lightly beaten
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, melted
2 cups confectioners' sugar
2 to 3 tablespoons milk, more as needed

Steps:

  • Bring the milk, chocolate, sugar, cinnamon and vanilla extract to a simmer in a medium saucepan. Whisk until completely melted and smooth.
  • Serve with the Old-Fashioned Doughnut Sticks.
  • For the dougnuts: Preheat the oven to 375 degrees F. Spray two 6-well eclair pans with nonstick spray.

  • Fill the wells of the prepared eclair pans about halfway with the batter.

6 sheets gelatin or 4 teaspoons gelatin powder
1/2 cup/ 125ml brewed espresso or very strong coffee
1 1/2 cups/ 375ml granulated sugar
1 tablespoon/ 15ml pure vanilla extract
2 tablespoons/ 30ml confectioners' sugar
2 tablespoons/ 30ml cornstarch
2 cups/ 500ml 35-percent cream
2 cups/ 500ml milk
1/3 cup/ 80ml confectioners' sugar
2 cups/ 500ml chopped dark chocolate
1/2 cup/ 125ml brewed espresso

Steps:

  • For the marshmallows:.
  • Line a 13 by 9 by 2-inch baking pan (33 by 23 by 5 centimeters) with plastic wrap and lightly brush with the oil.
  • If using gelatin sheets, soak them in 2/3 cup (80ml) cold water in a shallow pan for 10 minutes. If using powdered gelatin, let bloom powdered gelatin in the 2/3 cup cold water. Then add the bloomed gelatin to the warmed up espresso and sugar mixture.
  • Warm up the espresso with the granulated sugar and vanilla in a saucepan over medium heat. Add the gelatin sheets and the soaking water and heat until the gelatin and sugar dissolve, about 2 minutes, stirring often.
  • Using a hand mixer, beat the gelatin mixture until it resembles a soft meringue, about 5 minutes. Pour into the lined pan and let stand at room temperature for about 1 hour.
  • Combine the confectioners' sugar and cornstarch, and sprinkle some onto a large cutting board. Invert the marshmallow onto the board. Peel off the plastic wrap and dust the top of the marshmallow with the cornstarch mixture. Cut the marshmallow into squares using a sharp knife. Dip the cut sides of the marshmallows in the cornstarch mixture and shake off the excess. (Serve immediately or store the marshmallows in an airtight container at room temperature for up to 2 weeks.).

1 tablespoon/15ml pure vanilla extract
2 tablespoons/30ml confectioners' sugar
2 tablespoons/30ml cornstarch
2 cups/500ml 35-percent cream
2 cups/500ml milk
1/3 cup/80ml confectioners' sugar
2 cups/500ml chopped dark chocolate
1/2 cup/125ml brewed espresso

Steps:

  • For the marshmallows: Line a 13 by 9 by 2-inch baking pan (33 by 23 by 5 centimeters) with plastic wrap and lightly brush with the oil.

  • Using a hand mixer, beat the gelatin mixture until it resembles a soft meringue, about 5 minutes. Pour into the lined pan and let stand at room temperature for about 1 hour.
  • Combine the confectioners' sugar and cornstarch, and sprinkle some onto a large cutting board. Invert the marshmallow onto the board. Peel off the plastic wrap and dust the top of the marshmallow with the cornstarch mixture. Cut the marshmallow into squares using a sharp knife. Dip the cut sides of the marshmallows in the cornstarch mixture and shake off the excess. (Serve immediately or store the marshmallows in an airtight container at room temperature for up to 2 weeks.)
  • For the hot chocolate: Heat the milk, cream, espresso and confectioners' sugar in a saucepan over medium-high heat, whisking to dissolve the sugar. Add the chocolate and whisk until smooth. Pour into mugs and garnish with marshmallows.

This creamy homemade hot chocolate mix recipe makes the perfect cup of instant hot cocoa mixed with milk or water. This is the real deal!!

Number Of Ingredients 7

1 1/4 cup milk powder ((I used whole milk powder, but you can also use nonfat))
1 cup chopped semisweet chocolate
3/4 cup confectioner's sugar
1/2 cup cocoa powder
2 Tbsp vanilla powder ((optional))
2 Tbsp cornstarch
1 tsp salt

Steps:

  • Add the chopped chocolate to the bowl of a food processor, and pulse until finely ground.
  • Add the rest of the ingredients and process to combine.
  • You can also do this in a large mixing bowl: add the ground chocolate along with the rest of the ingredients and mix to combine.
  • Keep cocoa mix in an airtight container until ready to use. It will keep in the cupboard up to a year.
  • To make hot chocolate, use about 3-4 Tbsp of hot chocolate mix for each cup of water. (You can also use milk.) Heat slowly in a saucepan, whisking to get everything dissolved. Heat until it gets steamy hot and is smooth and creamy. Enjoy with whipped cream and shaved chocolate, if desired.
