Steps:
- In a small saucepan, combine water, honey, ginger and cardamom; bring to a boil. Reduce heat; simmer 10 minutes., Pour over tea bags in a 2-cup glass measuring cup. Steep 3-5 minutes according to taste. Strain tea back into saucepan, discarding ginger and tea bags. Stir in milk; heat through.

HOMEMADE GINGER CARDAMOM SODA WITH LIME
This is a good recipe, and can be changed up with different fruits and spices! For example, lightly crush berries and blend them with sugar and water to make a berry-flavored syrup. Steps:
- In a small, dry pot, toast cardamom over medium heat until fragrant.
- Remove the pot from the heat. Add ginger, sugar, water, and lime zest. Place back on heat and simmer until sugar is dissolved, about 5 minutes. Cool syrup; strain and discard solids.
- In a cocktail shaker(or a jar with lid), add 1 oz. syrup (or to taste) and lime juice. Add ice and shake to blend. Divide between two tall glasses, filled with ice.
- Top with sparkling water, club soda, or sparkling cider. Stir gently and serve immediately.
- Enjoy!

LIME SODA
Steps:
- In a small pot on medium heat dissolve sugar in water. Raise the heat, add the lime rind and bring to a boil. Lower the heat to a simmer and cook until slightly reduced. Remove from heat and discard the lime rinds. Stir in the food coloring and cool.
- Fill 4 glasses with ice and distribute the lime syrup and lime juice, to taste, into each glass. Top with seltzer and stir. Garnish with lime slices.

- In a small saucepan stir together 2 cups of the water, the sugar, and the ginger, bring the mixture to a boil, stirring until the sugar is dissolved, and simmer it for 3 minutes. Strain the syrup through a fine sieve set over a bowl and let it cool. In a pitcher combine the cooled syrup, the remaining 1 1/2 cups water, and the lime juice and stir the limeade well. Divide the limeade among the tall glasses filled with ice cubes and garnish each drink with a lime slice.

CANDIED GINGER - CARDAMOM BARS
If you are a ginger freak like me then these are the perfect cookie. They are easy to make in the food processor. They are kind of like shortbread packed with ginger and cardamom. I got this one out of the newspaper some time back, it was by Linda Faus. Warning!!!! These have serious addiction potential.

Steps:
- Preheat oven to 350 deg F.
- Grease a 9 inch square baking pan.
- Ok here is the hardest part -- finely chop crystallized ginger and set aside.
- In a food processor add flour, sugar, cardamom, cinnamon, and salt. Pulse to combine.
- Cut butter into half in cubes.
- Add butter to processor and mix into a coarse meal forms.
- Beat egg and add 2 tablespoons to processor and mix until a moist crumbs form.
- Add ginger and blend until moist clumps form.
- Press dough into pan.
- Brush the rest of the egg over the top.
- Bake 40 minutes.
- Transfer to rack and let cool completely in pan.
- Cut into 18 pieces.
