½ cup butter, softened
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon garlic powder
1 tablespoon chopped fresh parsley
½ teaspoon salt
1 loaf French bread

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix butter, olive oil, minced garlic, garlic powder, parsley, and salt in a bowl until well combined.
  • Cut bread loaf into 1-inch slices and spread garlic mixture over each slice. Place each on a baking sheet. Wrap with additional aluminum foil.
  • Bake in the preheated oven until bread is crispy and heated through, 25 to 30 minutes.

Baked Seabass with Homemade Garlic Butter and Herb Bread Crumb Topping image

5-ounce sourdough bread or other leftover bread
1 tablespoon butter, plus 1/2 stick unsalted butter
4 (6-ounce) sea bass fillets
Salt and freshly ground black pepper
1 lemon, zested and juiced
Few sprigs thyme, leaves removed
3 cloves garlic, smashed
1 cup fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Pulse the bread in a food processor to get slightly coarse bread crumbs.
  • Coat a casserole dish just large enough to hold the fillets with 1 tablespoon butter. Place the fillets in the dish and season with salt, pepper, lemon zest and juice, and thyme leaves.
  • Melt the remaining 1/2 stick of butter in a large skillet with the smashed garlic. As soon as the butter starts to bubble, turn off the heat and let the garlic infuse the warm butter.
  • Remove the garlic chunks from the butter. Add the bread crumbs and lightly toss until all the butter has been absorbed. Turn the heat off, stir in the parsley and season, to taste, with salt and pepper.
  • Spread a layer of bread crumb mixture over the top of each fillet and bake for 12 to 15 minutes until bread crumbs are golden brown and fish is cooked through.

This is the most delicious bread, both warm from the oven or toasted. It also makes the best super cheesy grilled cheese sandwiches! This is also good with a bit of basil worked into the dough. I have also made this in a bread machine, but I do NOT recommend it. The cheese becomes too pulverized and it does not turn out even remotely as good. This makes two loaves so even though it is some trouble to make, as any good homemade bread is, you can make it once and get two loaves for your trouble - one for now and one for later. ***Edit: I haven't made this bread in a while, and Kay's review reminded me that it is good to replace at least some of the shredded cheese with small chunks instead, if you want a more perceptably cheesy flavor. The shreds do tend to blend in with the dough, while the chunks melt into pockets in the bread. ***

2 1/4 cups milk
3 tablespoons butter
6 cups flour, more as necessary to correct stickiness
2 packages active dry yeast
2 tablespoons sugar
2 teaspoons salt
2 cups cheddar cheese, shredded
1 teaspoon garlic powder (I use more!)

Steps:

  • Heat milk and butter to 120°F Combine half of flour, yeast, sugar, salt, milk and butter mixture, cheese, and garlic powder in a large bowl.
  • Knead with a mixer fitted with a dough hook at highest speed for 3 minutes.
  • Add the rest of the flour and continue kneading for 3 more minutes.
  • If the dough seems too sticky, slowly add more flour until the stickiness is corrected.
  • Place dough in a greased bowl, and spray the top of the dough with cooking spray.
  • Cover and let rise for one hour.
  • Punch the dough down and let it rest for 10 minutes.
  • Divide dough in half and form one loaf each in two greased 9 x 5 inch standard loaf pans.
  • Cover the pans with plastic wrap and allow dough to rise for 45-60 minutes.
  • Preheat oven to 375°F Bake loaves for 10 minutes; then turn oven down to 350F and bake for 30-35 minutes longer, until the breads are browned.
  • Cool in the pans for 5-10 minutes; turn out onto a wire rack and allow to cool for a minimum of 5-10 more minutes so the bread firms up enough to be cut.

This is a good spread to keep in the freezer or refrigerator.

1 stick salted butter { 8 tablespoons }
¼ teaspoon italian seasonings
1 teaspoon garlic pepper seasoning
1 teaspoon onion powder
¼ teaspoon basil leaves
2 teaspoons garlic powder
¼ cup three cheese blends
ciabatta rolls

Steps:

  • 1. Melt the butter, add all the seasoning { do not add the three cheese blend } Simmer the butter till the spices start to get soft, about 3 minutes, stirring often. Turn off the heat and let the butter mixture sit for about1 hour in the pot.
  • 2. When you are ready to make the garlic bread, spread the melted butter liberally on the Ciabatta rolls, or bread of your choice. Sprinkle with the cheese blend.
  • 3. Toast under the broiler till the butter is bubbly and start to brown.
  • 4. Refrigerate any of the remaining garlic butter.

1/2 c. powdered Parmesan cheese
2 tsp. Kosher salt
2 Tb. garlic powder
2 tsp. oregano
2 tsp. basil
2 tsp. marjoram
2 tsp. parsley

Steps:

  • Mix it all up and put into an airtight container and store in the refrigerator. It doesn't get any easier than that!
  • I just used an empty parsley container that already had a shaker lid attached.
  • Ideas:
  • Mix this seasoning with some softened butter and spread on breadsticks or some thick Texas Toast and either bake or broil.

8 slice(s) 1" thick, white bread (country, french or italian works too!)
2 stick(s) butter, melted
1/2 teaspoon(s) salt

CHEESY GARLIC TEXAS TOAST:
16 - 24 slice(s) monterey jack cheese, or whatever cheese you desire

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, add salt, oregano, garlic & parsley; mix to combine; set aside.
  • Melt the butter in a microwave safe dish (cooking times will vary).
  • Spoon about 1 tbsp of the melted butter over each slice of bread, using a pastry brush to spread the butter evenly.
  • Sprinkle each slice with garlic mixture. Bake 10 - 12 minutes, or until golden & crispy.
  • CHEESY GARLIC TEXAS TOAST: Can add 2 - 3 slices of monterey jack cheese (each) the last 2 minutes of cooking time.
