Espresso-Flavored Sugar Cubes image

Easy to make, great to give as gifts, and fun to use, these caffeine-spiked sugar cubes do it all. They make fun stocking stuffing for adults and are perfect to put in your coffee Christmas morning or a rich mug of cocoa.

1 tbsp. espresso powder
1 1/2 tsp. meringue powder
1 1/2 tsp. hot water
1 1/2 c. sugar

Steps:

  • Preheat oven to 250 degrees F. Meanwhile, in a large bowl, combine espresso powder, meringue powder, and hot water. Whisk until no lumps remain; let cool.
  • Add sugar and whisk until the mixture resembles damp sand. Spoon half of the sugar mixture into a 90-compartment silicone mini-ice-cube tray (Casabella, $12 for set of two; amazon.com).
  • Using a rubber spatula, spread the mixture, pressing it tightly into the tray's compartments. Scrape away any excess sugar mixture and return to bowl. Repeat with remaining sugar mixture and a second tray. Place trays on a baking sheet and bake for 40 minutes. Allow cubes to rest until hardened, about 8 hours, before carefully releasing from trays.

2 cups small ice cubes
1 cup brewed strong espresso, cooled
1/2 cup milk
3 tablespoons superfine sugar
1/4 teaspoon pure vanilla extract
Whipped cream and caramel sauce, for topping

Steps:

  • Put the ice, espresso, milk, sugar and vanilla in a blender. Blend until thick and smooth. Pour into two tall glasses and top with whipped cream and a drizzle of caramel sauce.

1/2 cup brewed espresso
1 to 2 tablespoons sugar
1 cup whole milk

Steps:

  • Pour 1 tablespoon of the brewed espresso into a large measuring cup or bowl. Whisk in the sugar until the sugar is dissolved and the espresso resembles a paste. Top with the remaining espresso. Fill 2 glasses with ice and divide the espresso between the glasses. Add the milk and more ice to a quart jar and shake until the milk is very cold and frothy. Top each glass of espresso with half of the milk. Stir and serve immediately.
